    Chopin Noodle House offers hand pulled noodles with authentic Lanzhou flavors. We ordered a couple dishes at the food court inside Great Wall Supermarket. It was pretty good and the food came out pretty quickly.

    Located in the food court section of 99, this noodle spot is pretty good. The prices are slightly high but noodles are cooked well and taste homemade and soup is flavorful. You also have the option of six different types of noodles to choose from. We went on a weekday night which was fairly empty and food was ready under 10 minutes. Note - during the winter, doesn't seem like the heat is on so it is quite chilly.

    Chopin Noodle House surprised me in the best way. Located inside the Great Wall food court, this place offers various authentic hand pulled noodle dishes. The Traditional Beef Noodle Soup is warm, comforting, and hit the spot when the temperature suddenly dropped to fall like weather. The beef is tender, and you can choose the thickness/width of your noodles based on your preference. Service was quick and there were plenty of seats available in the food court for a Sunday lunch time.

    Whoa I love the noods here!! Don't let the ambiance scare you away- it's not the cleanest or most approachable. It's a food court attached to a Chinese supermarket. It might be even harder to find a clean clean table, but suck it up for a great bowl of noodle soup. Also, bring water or buy water from the next food stall over. The noodles are hand pulled and tastes hand pulled in the best way possible- the noodles have a great bouncy, chewy texture. You can choose from 6 types of noodles (thin, regular, thick, flat, wide, extra wide) and several variations of with/ without soup. I tried the A2 traditional beef noodle soup (which appears to be A1 with chili oil) with thick noodles, and my friend got A4 Sichuan pepper beef noodle soup (which appears to be A2 with added sichuan peppers and bok choy) with wide noodles. Both were good, but I preferred the thick noodles- it's bouncier and chewier than wide noodles. It was impossible to find where one noodle ends/ begins. I also loved that the noodles weren't 100% uniform; some bites were thicker than others. The broth is a warm hug. It's so savory and delicious and perfect during the winter. The herbs keep things interesting between bites giving you different flavors; also cuts through some of the richness from oil and bone broth. The beef is so tender. A2 was not spicy, had the slightest kick, and although not A4 I could still feel the tingly numbing Sichuan peppers. I've later tried their beef shank salad and mutton chops. Beef shank salad is their thinly sliced beef dressed in a chili oil with cilantro- good, tastes like their chili oil. The mutton chops comes with a quick pickled carrot/ cabbage and a dry spice mix for dipping. The pickled veg was so nice to offset some of the richness from lamb. The lamb was flavorful and nice with the spice mix. For $24, it did come with a lot of meat. Takeout/ ordering: it says thin noodle isn't recommended for take out. I've gotten thick noodle for take out and it traveled extremely well. I ate it about 2-3 hours after picking up. They offer online ordering, which is fast and efficient, but a few dollars more. They have in-person ordering as well as a kiosk next to the person you can order from. It's even cheaper if you pay in cash (only a few dollars). Food comes out crazy fast (~5 min with no wait) so there's barely a wait if you order in person. The woman was helpful with questions when asked what to order. This food stall is in between a bao food stall (Bao Buddy) and dumpling food stall (Dumpling Man). Further down is Ying's Cantonese BBQ, which I'm told is also really good and sells out. New to the food court is Gaima Rice Bowl. They're all in really close proximity to each other. It's located in a strip mall; there's plenty of parking. If you're looking for a sweet treat after, walk over to Yi Fang's for boba or BBQ 21 for a cafe.

    This is such a gem! All the noodles are hand made and you can see the chef making them fresh in the back. We got the traditional beef noodles which was slightly spicy but the perfect broth for the noodles. The noodles were bouncy and chewy, and the spices and herbs were really refreshing Highly recommend coming here!

    Chopin Noodle lives inside the Great Wall food court. I ordered the B7 stir-fry knife-sliced noodles with " 1/2 chili" spice. Big mistake. " 1/2 chili" here apparently means "0 chilies but with the idea of chili whispered into the kitchen." Flavor? Fine. Noodle texture? Firm... but not in the good "chewy hand-pulled" way -- more like the "surprise, you're still chewing the same bite three minutes later" way. Ever the optimist, I asked for hot chili oil, imagining a fiery rescue mission. I poured in the entire thing like a fearless spice warrior. Result? We graduated from 0 to maybe 0.5 chili. My tongue barely noticed. The A2 was basically pho's stripped-down cousin -- a clear, simple broth that won't blow your mind, but might warm your soul if you're having a "life is hard, I just want soup" kind of day. If you're here for spice, bring your own. If you're here for mild comfort food, you're in the right place.

    **BRING A BOTTLE OF WATER BEFORE YOU GO HERE** If you are reading this before you go to this place, bring some water or something to drink. This restaurant does not offer drinks or water. You have to buy the drinks at another food stand. This restaurant is located inside Great Wall Supermarket in a food court hall. I've been here 2 times already and it's one of the best noodle houses I've eaten! The first time I got the cold noodles but this time I tried the pork intestines hot soup. I loved the pork intestines and it comes with chili oil. *chefs kiss* The soup is not oily like other places and the flavor is excellent. Not too salty either. It has the right flavor. The food came out very quickly and it comes out hot and freshly made. You also get a choose of the style of noodle that you want. They range from regular to wide. They kind of messed up mine - I asked for wide but it came out with the flat. But that's minor. I highly recommend this place.

    After a trip to New York where it seems almost like Xi'an Famous Foods is everywhere, we were really craving Xi'an food down here in NoVA. After searching online and finding out that Xi'an famous foods was opening up in a cloud kitchen in Alexandria but not open yet, we came across Chopin Noodle House, which started in Maryland but has a counter open at the Great Wall Supermarket in Fairfax. Yes, Oil spill noodles (You Po Mian) is not the same as Xi'an Biang Biang noodles, but close enough for our purposes. Thick cut hand pulled noodles were on our brain! After getting our shopping done, we went to the food court, where there's plenty of seating available, and ordered on the touchscreen menu. We decided to go luxe and get the Triple Mix Oil Spill Noodles (B8). At only $1 more than the normal Oil Spill Noodles (B2), why not! We obviously picked the thickest noodles possible. You can see the chef in the back pulling the noodles, and as we sat, we were salivating at the thought of the juicy, bouncy noodles. Within 5 minutes, the lady at the counter brought us our noodles, and they were every bit the hit. The tomato, egg, pork, bok choy, all added a nice balance to the noodles. The only thing I wish they did was add more pepper, so the dish would be a little bit more spicy. But this about as good as we can get here in NoVA. The Great Wall food court is definitely good for a fast and casual bite to eat after shopping, and I highly recommend coming here. We'll be back to try out the different dishes, now that our thick cut noodle craving has been met :)

    Been wanting to eating hand pulled noodles for a long time now. My first introduction to hand pulled noodles was in New York. Ordered the Traditional Noodle Soup and I was able to see the noodles being made by a small window to the right of the stand. The bowl came out quickly and pipping hot which I appreciate. The portion was generous and it had a good amount of noodles in it! It was listed as spicy but to me it was not spicy at all despite how it looked. Personally, the spice was used more as a garnish instead of a tingly mouth numbing spice. After eating it for a while, I wished it was a little more flavorful. I had the soup as is without adding any other toppings but I may next time to flavor it to my liking. I could have used a little more saltiness. Otherwise, it was a really good lunch for a chilly day.

    This little place is in a shopping market and is a must try if you like some authentic noodles of various types! Service is very quick and the ambiance is typical food court ambiance. The noodles are great - we liked the dry noodles more than the wet ones. The beef noodles use beef slices vs the chunks that we are used to.

    Spotlight here is definitely the noodles themselves. You can pick the shape/thickness, really being able to customize based on your preference (I like wide). The broth was ok but noodle texture is important for me! Got the Lanzhou beef noodles and liang pi (cold noodles). Liang pi noodles were thicker than I'm used to but the sauce was so good

    I found this noodle spot online and decided to try it with my friend over the weekend and wow, the reviews were right. I was honestly surprised by how delicious the food was, especially considering it's in a food court. These days, it's hard to find good quality food at a reasonable price, but this place delivers both. The noodles are hand-pulled, and you can even watch them being made right behind the cashier. I ordered the A1 Lanzhou Beef Noodles, which were fresh, flavorful, and comforting. My friend ordered the Traditional Beef Noodles, and another friend got the B4 Spicy Cold Noodles (highly recommended) every dish was delicious. The portions are generous and very satisfying. I even got an order to go for my boyfriend because I wanted him to try it too. The staff are friendly, service is quick, and the food quality is outstanding. FYI, it's a food court so it's going to be loud :). I'll definitely be coming back again and again.

The from scratch broth, pleasant aroma from sour bamboo, crunchy string beans (wish there was an option to add!!) were phenomenal. Plus the tender yet collagenous beef shank cooked to perfection was phenomenal. Absolutely stick to your bones without the usual heaviness with big spicy noodle soups. No MSG headaches here, all the flavor is homegrown. The stinky tofu was also fried to perfection, with a side of Taiwanese kimchi. All the food was thoughtfully prepared and executed. We had our noodles fall apart and Yan corrected it immediately. She took the time to talk about her story of how she opened the restaurant originally to support her daughters college, her natural gift at cooking, and how her recipe was developed originally from a family one to what it is today.
