The oldest sub shop in Texas is not a title you stumble into, and one visit makes it clear they've earned it. First, the parking situation, because someone has to say it. The spots up front are scarce and competitive. Don't give up, there's additional parking in the back with its own entrance. File that away before you go, or you'll spend ten minutes circling a strip that has not gotten larger since the 1970s. And speaking of the 1970s, the interior leans fully into its vintage identity. Small, dark, and unapologetically retro, it feels like a sub shop that missed the memo on modern restaurant design and decided it didn't care. Honestly, respect. Now, the subs. Galligaskin's cuts their own meat and cheese in house and bakes their rolls fresh daily, which is the kind of thing that sounds like marketing until you take a bite and realize it actually matters. The roast beef and cheese, loaded with toppings, is a proper sandwich. The house-made Galli Oil and pickled pepper finish that goes on every sub is the secret weapon - not spicy, just deeply flavorful, the thing that makes each bite a little better than the last. We also tried the burger, which came as a genuine surprise. A sub shop doing a burger well feels like it shouldn't work, but here we are, soft bun, flavorful patty, no notes. For sides, the Tater Tots are the undisputed champion of the table. Crispy shell, fluffy interior, the ideal tot. The fried okra was a strong runner-up, well breaded and served with ranch. The French fries, however, were a swing and a miss. They looked the part, golden, fresh cut, promising - and then arrived soggy. A limp fry is a tragedy in any zip code, and these were no exception. No one wants a sad potato. Order the tots. Skip the fries. You've been warned. Galligaskin's in the real deal, a Fort Worth original that's still earning its reputation one fresh-baked roll at a time. One last night: they're closed on Sundays, so plan accordingly. A cruel fact to discover in the parking lot.
