My boyfriend had been a customer basically since the beginning of opening nearly 18years, and I for about 5 years. Over the last 4 years, we sometimes had to send food back because it wasn't cooked properly, like burnt steaks, undercooked steaks, cuts of steaks that are overly fatty, over-salted side dishes, and once a French onion soup the waiter confirmed was burnt at the bottom of the pot. Mind you, while placing the order we would be very specific to tell the waiter no char on the steak a leaner piece of meat, medium plus as well as saying no salt on side dishes just to avoid having things sent back. Otherwise why ask the customer how you would like things to be prepared if simple requests can't be met. They might as well make the food as they please. These were kitchen issues, not attempts to get special treatment. Instead of seeing those as opportunities to improve, the general manager Melea Smith told us we would no longer be accommodated and that this was our last visit. The conversation felt hostile and dismissive. I did get upset at how she approached us and did this in front of other guests and employees. I called her a bitch because that's how she was behaving towards us. We have never been treated so poorly EVER and to think spending tens of thousands at this restaurant all to be treated unfairly and poorly is beyond disgusting. She could have pulled one or both of us aside to have this conversation. She was so happy to disrespect us by announcing this would be our last visit in front of others. She seems to have something against us I do feel she's racist because we are middle eastern and she couldn't wait to have the opportunity to do this to us. I even reached out to one of the owners, he then redirected it to someone named Andrea who couldn't even have a telephone conversation, just sends an email stating she supported the general manager's decision without ever asking for our side. We were seated in a half-circle booth, which I highly recommend if you can request it. My son ordered the prairie blossom which was basically a floral margarita. My husband got a sangria and my mother-in-law got a glass of cabernet sauvignon. On this visit, I was excited to come back to Cowboy Star as its been years since my last visit. They definitely made some really good changes with increased seating a more intimate dining area. The night started of course with bread - buttery, soft and so fresh its melts in your mouth. Second on deck was the wedge salad which had one of the fattest piece of pork belly and it was so good that I could eat a whole portion. With my main I went with the 18oz Dry-Aged T-Bone cooked medium rare from Snake River Farms. I didn't know much about Snake River Farms but from what I am told that their beef is top notch and sure enough, it was one of the best steaks I've had as it texture and taste was outstanding. For sides - always have to get the creamed spinach which was great and always a nice side to compliment the meat. We ordered the Mac and Cheese as well and that was excellent as well. One of the great things that sets Cowboy Star apart from the rest is the complete dining experience. A friendly staff from the front of the house to the back of the house, service was excellent. Everything we ordered was flavorful and well prepared. My dry aged ribeye was cooked perfectly, but it lacked a bit of flavor, and the chimichurri could have used a touch more salt. One thing worth mentioning is that you have to pay for the bread, but once you taste it, you understand why. It's seriously delicious and absolutely worth it. The only real disappointment was that we were celebrating a birthday, and unlike most high end restaurants, there was no complimentary dessert. The ambiance was lovely, a modern rustic decor with mood lighting on the restaurant side. The booths were nice and tall so they actually buffered the noise in the room well. Jodi was our server and she did everything we'd hope for, including keeping our wine bottle poured. I was a bit confused though as to the flow of the menu, the Cold Summer Corn Soup seems out of place when the Amuse Bouche and other menu items are Fall-inspired. We would have preferred a classic French Onion Soup to pair with our Porterhouse. Also, they took the bleu cheese crumble off the menu. Otherwise, we shared a Wedge salad, a tasting of the Ohmi Wagyu, and a Porterhouse steak. A tomahawk would also be a nice addition to the menu. No complaints whatsoever on the main dishes. However, they claimed the Wagyu was a 12 on the BMS (the highest and most marbled), we would say it was maybe an 8. - The higher the number the more buttery it is going to taste back the fats will sear the meat by itself without the help of additional butter in the pan. Which they said they normally add butter, salt and pepper... we declined the butter and pepper because it should not be needed. Also, a 12 wouldn't have the thicker fat vein running through it (see photo). We would not get the Wagyu here again. read more

Service was also on the slower side--it took quite a while for our entrées to arrive, which was a bit disappointing. On the food side, the steak was very good--cooked well and full of flavor. The mashed potatoes that came with it, however, fell short; they tasted a bit like they were from a box, which was surprising for a place of this caliber. The rolls were actually quite good, but the drinks were just okay and didn't really stand out. Great presentation. She said she enjoyed it. My brother and I ordered the 21 day aged 14 oz ribeye cooked medium. Both came out at the correct doneness. Do I want to say it is the best steak I have ever had? No. Not the worst for sure but it didn't make me want to say I will forever forsake the competition either. Dined here for a birthday celebration on a Friday. We had a reservation at 5pm for a party of 3. We were running about 15min late but I called the restaurant and they were able to accommodate. Make sure to leave plenty of time to find parking. Before our order came out they brought out a small palette opener for all of us. It definitely did open up my taste buds, it was pretty tangy. For starters, we ordered the C-Star Caesar and Summer Corn Soup. The soup was delicious. Full of flavor and definitely one of my highlights. The Caesar salad was just okay. The dressing was a bit watery and had little flavor. I was a bit disappointed by it. We also ordered the Parker house rolls, which is always good. For some reason it didn't hit as good as the first time I had them though. For our entree we ordered two orders of the 14oz ribeye, cooked medium rare. The steaks come with a side of mashed potatoes and broccolini, which they were able to split into two plates for us to share. The steak was cooked perfectly and the portion was more than enough for two of us. The mashed potatoes were creamy and delicious and the broccolini was good too. We also ordered the bone marrow for a side. It was pretty good but looking back on our meal, we would have been okay without it. For dessert we got the chocolate chip bread pudding. It was decadent but not too sweet, I would definitely recommend it. They also brought it out with a candle and birthday message, which was nice. Our waitress was friendly and helpful. Service overall was great. They were able to split a lot of our orders into separate plates to share but at a small surcharge. I would recommend a try here, especially for a special occasion.
