Pork osso buco, their signature dish.

Everything went well once again at Diego's. Went for partner's bday and it's a great place for a family celebration. Margaritas were on point, and the complimentary salsas with the chips are so good. All entrees were terrific, and the pork ossified bucolic (see pic) was memorable. Finally, they provided a free bday slice of cheesecake for the bday girl.

Well, on a road trip driving down to California we decided to find somewhere to eat and stumbled upon this restaurant . As a Mexican, I was intrigued by the Mexican cuisine naturally you could never go wrong with a good Mexican plate. Arriving the restaurant was packed with customers but after being attended to not too long after we were seated so satisfactory service from the start. Being sat down we were able to admire the restaurant's decor inside. We liked the dimmed lighting and intimate seating. and the food was excellent great taste highly recommend whenever Redmond, Oregon.

Our group of six thoroughly enjoyed our experience at Diego's. It all started (and ended) with our service - Roberto is one of the best we have ever had. So charming and inviting to the restaurant and passionate about each dish he explained and the stories he shared. The food highlights were the ceviche, Osso Buco and the chicken fried steak - all are must have's. Chips and salsa are also on-point. Vibrant and lively place but also privacy between tables and good noise level.

Delicious! Husband got the Flat Iron Steak and it was so tender and tasty as well. Waters were refilled timely. Warm chips and delicious salsa to start. It was our first time and we will definitely be back.

    Carne asada x 2

We had a great dinner tonight at Diego's: chicken taquitos for our app (along with complimentary chips and salsa) and carne asada. Everything was cooked perfectly and I was surprised to see that they serve a unique green rice with their dishes rather than the tired "Spanish" rice that's often so flavorless. The service was prompt and I swear our food came out faster than any restaurant I've been IN MY LIFE! We hadn't even eaten half the basket of chips before my salad and our taquitos came out. Then, before we could finish those, our carne asadas came out (we both ordered the same dish). I was almost in shock! Anyway, it was great overall and I'd definitely recommend this hopping spot to anyone looking for tasty, fresh Mexican food in the area.

Arriving after 6 pm , place was busy but there were still enough seating for us. Both , my wife and I were tired and very hungry from our 3 hour trip. There aren't many choices for vegetarians but my wife found the Huevos Rancheros. Fried eggs served on a crispy tortilla with refried beans, topped with warm salsa Red or Green. Chopped fresh cilantro, queso fresco, drizzled with sour cream and avocado slices... Her first experience eating the Huevos Rancheros was a good one. Very tasty . Just a little too much salsa. The dish was swimming in it. I had the Carnitas de Puerco. Slow simmered pork, quickly fried at the end. Served with arroz mexicano, refried beans, queso fresco, fresh pico de gallo, guacamole, tortillas a mano. True Mexican Cuisine. This Chef's mother's recipe is a must have... I like the little tortillas where you can put nice bites of carnitas, rice and beans, and guacamole all in one . Very flavorful. The carnitas is moist and extremely tender. Our waitris was informative, friendly, and gave us great service. Glad to have another great Mexican restaurant in the area.

There was only one server who also doubled as the bartender. She was pretty amazing in that she was handling everything and took our orders (there were four of us) without writing anything down. I figured "no way" our orders would come out correct. She proved me wrong, that's for sure. Everything was perfect and exactly as ordered. I had a burrito/enchilada plate and it was fine but not outstanding. I've had better similar orders at other places in the Central Oregon area. Others at my table loved their orders which consisted of pork chops and tacos. I will say the jalapeño margarita was the best I have ever had. Comfortable place but it is pretty small.

If not for a power outage in Terrebonne yesterday I still wouldn't know about this incredible place. I had the chili verde lunch special and it came with the fluffiest freshest Spanish rice I have ever had outside my mother's kitchen my entire life. Their salsa is amazing. The chips are fresh! I read good things about this restaurant, so we decided to try it. We ordered take-out yesterday…read moreevening. The order was for their Casa Bowl Special with shrimp, listed at $22.99 on the menu at THEIR website. The ingredients list "Chicken, beef or shrimp, green onions and mushrooms in a creamy sauce, served with rice, beans and slices of avocado." What we received were a good amount of tasty shrimp, mushrooms, LOADS of sliced WHITE (or yellow?) onion, rice, beans and COLE SLAW, not AVOCADO slices. It came with tortillas as well as chips and salsa. The chips and salsa were a nice touch. We were charged $26.00. I have a GI condition where I am not able to eat regular onions, but am allowed green onions. I am also not able to have cabbage, but am allowed avocado. Fortunately, my husband was able to eat that portion of the meal. I'm disappointed that the restaurant did not provide the item that we specifically ordered off their menu because it appeared to accommodate my dietary restrictions. If they changed the ingredients in a menu item or increased their prices, they should have updated their online menu.

The service was excellent & so many good menu choices! Fairly typical decor but very clean tables & nice music too! Again, this is a fast food restaurant, so it more than met the standard. The girls ordered carne asada fries & a carnitas torta. Both were good size portions & were tasty! My lengua burrito-served enchilada style- was excellent! Big chunks of tender meat & delicious sauce made it a burrito worth ordering again. We also enjoyed the salsa bar & their zanahorias en escabeche (Mexican carrots with jalapeño & onion) were some of the best we've tried.
