Shortly two seat opened up in front of the kitchen which I was excited about. To watch the kitchen chef and crew work was like a fine tuned engine. They were in sync with such a small kitchen. The coffee was perfectly balanced and just the right punch for a good wake up juice. We ordered the monte cristo and the egg bird biscuit along with a side of lemon beignets. The monte cristo was rich with flavor and the ham and havarti were nice salty balance. The big bird biscuit is what breakfast dreams are made of. Toasted biscuit with sunny egg with thick cut crispy bacon with a very tender perfectly fried chicken breast. Along side a sausage gravy with just the right amount of seasoning to carry it to bites of heaven. The beignets were fluffy lil pillows topped with a light lemon powder sugar. First of all, this place is in the midst of a very chaotic food hall with lots of people around, but the guy who was working was very nice and helpful in making choices. The cheese was folded into the egg and the biscuit had some crispy bits while remaining soft inside. The biscuit, like all biscuits, was a bit heavy so I ate this opened face to cut back a bit. We were staying at The Cosmopolitan and I would rather not keep getting to our car to drive to different places, so I've tried as many places as I could on the second floor of our hotel. It's difficult to find vegetarian/ halal options, but thankfully, donuts (for the most part) are vegetarian friendly. I've got the biscuits and they are great with butter and jam. I just request the sandwich without the meat and it's delicious and filling. I'm pretty sure you can't go wrong with any of the donuts, although I will say that I lean more towards the cinnamon rolls- the creme brulee one cinnamon roll is great. For some reason, I ate more donuts than I ever expected on this trip to Vegas. I came here right after eating Milk Bar which I thought was an interesting choice to make so I may have been a bit dessert out and biased in my review. They were sold out of their major desserts, so we got to try the Maple Bacon Doughnut. I appreciate how thick-cut the bacon was and its saltiness helped cut through the sweet maple flavor. I felt that the doughnut itself a bit like that of Krispy Kreme, meaning it wasn't as thick or airy as I would've wanted. I think maybe if I had to get doughnuts again in Vegas, I would go for Pinbox's. I will say that one thing that impressed me was the size of the doughnut. This is the only place I tried on the strip (which is limited I admit) that actually had turkey sausage. It was sooo good! I'm sure they hand patty it and likely have their own seasoning blend. The hot lavender latte was as smooth as silk and strong. The cashier was so friendly, even though the line was long.
