    Oh my goodness! I went to Ebisu and Ramen Star for lunch today and they did not disappoint. Owned by a husband and wife team, her husband used to work at Sushi Den, they make their noodles and sauces from scratch. I had their sashimi salmon that was to die for.

    Ebisu is a treat for those who love sushi and ramen! I love that you can get a half serving of ramen with a sushi roll. I always get stuck in the dilemma of choosing between ramen and sushi, so not having to choose was AWESOME! I got the spicy black garlic tonkotsu and it was excellent! I love that kimchi is used to spice things up. It had a rich broth with a lovely black garlic oil that really set it off. I would come back for the ramen alone! But, back to the sushi, I got the spicy tuna. I really enjoyed it too! I love that kimchi is a prevalent flavor in their food as someone who loves kimchi. I doubt there is anything that would be bad on the menu here. I had the hardest time choosing something to eat before going to see a movie across the street. Definitely try something with black garlic though!

    This place was fantastic. We both got small black truffle tonkotsu ramen for $12 each. This was fantastic! The only negative was my egg was cold and the meat was warm, not hot. Even with that, it was the best. A bit of a drive for us but I would go back. I would try some of their sushi items next time too. Highly recommend. And their kimchi that was in the ramen was really great and I am picky with my kimchi!

    For a $18 bowl of ramen, I had higher expectations. The toppings were good, egg was cooked perfectly, I liked having a choice of noodles, but the broth lacked depth of flavor and that salty umami. I haven't been able to find the perfect bowl of ramen in Denver yet, unfortunately.

    Seeking to sample all the things at Junction Food Hall, my husband and I chose to start our adventure with a couple rolls (California and Spicy Tuna Crunch) from Ebisu Ramen and Sushi. PROs: ++ Everything was super fresh! This literally Makes or breaks the California roll and their's passes the test. ++ The presentation was on point. The rolls were rolled up perfectly, topped with garnish and drizzles, and served up with ample wasabi and ginger, yum! ++ Our order was prepared quickly without sacrificing quality! ++ They feature a variety of both traditional and creative takes on rolls. For instance the "crunch" in the spicy tuna crunch roll comes from tempura fried long beans and green onion! CONs: -- The prices were a bit steep. At $9 and $18.50 respectively my wallet was feeling the pressure, but sometimes you gotta treat yo'self. Ebisu Ramen and Sushi was definitely the perfect way to kick off our Junction Food Hall adventure. While I'm not often in the area, I'd consider making a special trip to check out more of their menu offerings.

    After picking up my Yelpie ("Writer of the Year" baby!) and surveying the various booths at Junction Food Hall, I found myself eying the menu at Ebisu Ramen and Sushi for lunch. Springs rolls, hand rolls, sushi and ramen comprise the massive menu with pictures of each dish - which literally made me drool! I ultimately decided on an order of the Spicy Tuna & Triple Crunch Roll which consisted of spicy tuna, avocado, cucumber, mango salsa, Japanese rice crunch, crunch mix, triple sauce (sweet soy sauce, green garlic aioli, spicy aioli)! After scanning the QR code at the window, I simply placed my order online and picked it up about 7 minutes later! My plate looked gorgeous in presentation and featured a side of soy sauce and ginger - which totally balanced the plate and palate! The tuna was spicy and delicious while the outer layer offered the perfect amount of crunch! YUM! The roll was much bigger than anticipated and totally hit the spot! For the quality of fish, it makes sense as to why this roll is so expensive, however, be prepared to pay a pretty penny. Pricing for sushi varies from $9-$19 per roll, while the ramen bowls range from $10-18 a bowl. Although delicious, my meal was a whopping $18.50 for 8 pieces of sushi which had me a little shook! However, as stated above, the quality of ingredients makes up for the price tag. When back at Junction, I'd return here for another round of sushi.

    One of the most underrated sushi spots in my opinion! The quality and flavors are so delicious. Both the crunch garden and salmon crunch roll are my go to's here and taste VERY similar to Bamboo Sushi's green machine roll. The shrimp tempura was also delicious.

    Amazing, Ramen and sushi spot in the food hall!! The rolls are extremely balanced and very consistent. It's also great that they have a small, small and large Ramen so you have options with many different flavors. We stopped in randomly on a Sunday and they were having a special on most of the sushi rolls so it's also a great time to go if you are looking to try it for the first time! The staff is also very friendly and the same people are always there, so I think that leans into the consistency of their product. Must try!

    Came here for lunch and had a beautiful bowl of ramen! The egg was perfectly cooked and the kiddo loved his avacado roll and miso soup lunch special. Affordable and tasty!

    Their Maki is awesome. Great flavor and the presentation was superb. Their location presents a very interesting vibe at lunch as it is all young professionals. As busy as they were the service was still fast. Give 'em try you be glad you did.

    This was a pleasant and humbling surprise! The ramen was PHENOMENAL. All caps necessary. Ebisu Ramen and Sushi is a goldmine inside Junction Food and Drink. What's the story morning glory? I had an event, packed up the car, and desperately needed dinner. Junction is right off the highway and since I wasn't craving anything in particular, I felt like going to a food hall with plenty of options was the move. I walked in (Monday night at 8:45pm) and only two stalls were open. This narrowed down my decision quickly and Ebisu was what I landed on. And god almighty, it was oh so satisfying! For starters, the space is wonderfully decorated for a food stall. They have a small counter you can sit at with those eye-popping lanterns. The service was friendly, albeit they were closing soon, and the woman who rang me up made sure my order came with lots of spicy sauce. Pro tip, you can actually select the noodles for your ramen! + Spicy Black Garlic Oil Tonkotsu // braised pork belly, marinated soft boiled egg, kimchi, chive, green onion, bean sprouts, wood ear mushroom, crunch mix, spicy shoyu tonkotsu broth, black garlic oil, and chili oil. Hands down, the best ramen I've had in a hot minute. The flavors were rich and playing off each other wonderfully. The accompanying sauces added SO MUCH DEPTH, even though it didn't seem possible for the flavors to be any better. Perfect soft boiled egg, loved the addition of kimchi, tender pork belly, and the broth was chef's kiss. The kicker? As I begun to write this review, I wanted to list all the ingredients of my dish. Lo and behold on their website, it says the Ebisu Chef, Soon Choi, was the former head chef of Sushi Den. No wonder why this place slaps!!! Sometimes the best food is found in the most unassuming places. Here's a prime example of this phenomenon.

    Such a lovely mom and pop in the Colorado Center! You can find Ebisu in the middle of the Junction, just across from Dave and Buster's and the movie theatres. Ebisu offers ramen, sushi rolls, sushi spring rolls(!)... the menu hinted of fusion food - Korean-Japanese, perhaps? - that drew me instantly. I eventually came back the next day, because it was that interesting. The ramen is ridiculously good. They offer two kinds of noodles and they'll show you both for you to choose. I ordered the black garlic oil broth and it was thick, creamy and so heartwarming. Gotta love good comfort food. They presently offer a promo of 10% every sushi roll if you order a ramen, so I also tried the Salmon and Mango Salsa Roll. The taste was decent, but the roll wasn't entirely ... traditional? ... in its preparation. Eating it, I was reminded of why the food seemed more experimental than other places. However, I have to commend them on their sushi spring rolls. This is pretty unique and an excellent display of fusion food at its best. I tried the spring roll with spicy tuna and shrimp tempura, but I wish I'd also ordered the ones with crab and/or other fish. Price-point is very reasonable for the quality and quantity. I recommend stopping by for dinner or a snack between games and drinks.

    I'm all up for new Japanese and Ramen spots in Denver! At Junction we have the new Ebisu Ramen and Sushi. Since moving to Denver, I've been on the search for the perfect ramen; Denver doesn't have many if not any authentic ramen, all of the places I've been too have either lacked the body/saltiness in the broth or either it's too "Americanized" in terms of flavor. Have we have a new contender in Denver's best ramen? I decided to go with the spicy black garlic tonkotsu. Right off the bat, the dish looked amazing and the smell of garlic was everywhere. But does it live up to the hype? Unfortunately it did not. The broth was not full bodied, salty, and hearty. I guess I was spoiled by really strong ramen base growing up. The garlic oil was strong and the chashu was actually good. It was melt in your mouth good! The egg was cooked perfectly, I'm guessing a 7 minute egg? The noodles were ok, it did not have that bounce and chew I look for in the perfect ramen noodle. Maybe it needed more kansui? I'm still looking for the perfect inhouse/home made ramen noodle. It filled me up and I got my ramen fix, but I will be looking else where. Next time I'll go for the sushi!

    Both the sushi and the ramen are excellent. Very nice people running it as well. I get the spicy pork ramen all the time. Highly recommend.

The Uncle salad was a great starter with charred cabbage, lemongrass, mint, cilantro, arugula, and peanuts lightly coated in a Thai coconut dressing. A slight burn only leaving you to crave just one more bite, ha! The fried soft shell crab in a bao bun with green papayo slaw, coconut mayo and cilantro nam prik was sweet, perfect crunch and memorable. Two for two with one dish left. The cold spicy sesame noodles with seasoned chicken, granny Smith apple slivers, arugula, cashews and nanami togorashi, a perfect closing dish for an exceptional meal. The service, food quality, flavors and preformance from the bar seats were second to none. The concept, portion size, flavor and cost were a real treat in the big city food scene of Denver. If you haven't been here yet, get to the internet and book a table, I promise you won't regret it. To the staff, chefs, and all members of Uncle, thank you for a surprising and incredibly great meal, we will return on our future trips to Denver.

It's a no-frills kind of place in a prime location.

The only downside was the karaage, which was slightly different than what I was used to, but it was still delicious. We left with our stomachs full, smiles on our faces, and a warm goodbye that has turned into a "see you later," as I will definitely be back.
