Came here for our first meal of the day in Vegas. The wait looked long and it was, but it felt like it was an ongoing. They move really fast here. Got our orders and had to look for a seat right away. At the time we came (literally rush hour), it was hard to find a seat nearby. We got super lucky to find a small spot but as people left we quickly grabbed them. 6/10 I got the midtown and it was okay. If you're into soft egg this would be it -- I thought I would but not really. My friend got hers with bacon and she enjoyed hers. Maybe add more protein to your sandwich if it's not included. I went to Egghead inside of Aria's Proper Eats food court. Long wait and a little pricey, but I enjoyed the sandwich. It was fresh, hot, and very filling. I ordered the Soho but considered getting the Midtown. I added some jam to my sandwich and it really helped to elevate all the flavors. They hail from NYC, as suggested by the names of their sammies. My favorite is probably the Chelsea and the Midtown. The difference is one comes with a sausage patty and one with bacon. Both have a fried egg with a runny yolk, shallots, tomato, cheese, and spicy aioli. Packed with protein to fuel up those 20,000 step walks in Vegas! The Greenwich Village is their vegetarian option with kale, avocado, and scrambled eggs whites. I also recommend sharing their Cheesy Hash Brown. A $7 perfectly fried hash brown the size of a playing card deck and loaded with melted cheese. Utterly decadent! Highly recommend Egghead for a quick, cheap, and nourishing breakfast. read more

The bread was buttery and I will say, I prefer by breakfast sandwiches a bit more toasted and less on a "bun". Some kind of different bread option would have been nice. Egghead is located in the Proper Eats Food Hall, which can be found inside the ARIA Resort & Casino. Ordering our food at the register was quick and easy, despite having a couple of people ahead of us, and the staff were super friendly! After placing your order, you walk to the pick-up area, where you can either sit or stand and watch the staff prepare your sandwich right in front of you. I got the Chelsea, and was thoroughly impressed with how delicious it was! I'm not even a big fan of tomatoes, but the tomato worked really well with the other ingredients. The spicy aioli wasn't that spicy, but had a really great flavor to it! The sausage patty was average, but by no means bad. It was priced pretty decently for a Las Vegas breakfast sandwich too! I also got a crispy hash brown and my god was it fantastic. The epitome of what every hash brown should aspire to be. While it was greasy, it was packed full of flavor and it was huge. Forget those skinny McDonalds hash browns - Egghead's hash browns are thick as bricks and so much tastier. I really wish we had one of these where I live, but alas, we don't and probably never will. The service is efficient and very well organized. Located within the Proper Eats food hall, it's a grab and go type of deal. I highly suggest the Greenwhich and The Soho. If you're a fan of the fried egg, opt for The Soho. If you're a fan of greens and a scramble then opt for the Greenwhich. This place is by far one of my favorite spots to get a breakfast sandwich. It's simple but big on flavor. First of all, if you're a big fan of hash browns, then this is the place for you! Any kind of crispy potato for breakfast is my all-time favorite kind of meal, and this place does not disappoint. In fact, it will exceed your expectations. There are two downsides. One, this place is slow, so if you are in a rush, it might not be for you. But honestly, it is worth the wait. Two, I wish they had different cheese options. American cheese is not my favorite, but everything else is so yummy, and the cheese is melty enough that it helps me get over the fact that I would prefer a different cheese. The food is hot, fresh, and absolutely delicious. Another reason this restaurant is a place after my heart is that they offer the option to add a hash brown to the sandwich. Of course, you do not have to, and you can order the hash brown patty separately. However, this is something I have done every time I get a breakfast sandwich or burrito, anytime, anyplace. To me, a breakfast meal is not complete without some crispy potatoes. The hash brown patty is rectangular in shape, extra crispy on the outside, with a very soft but fully cooked inside. It is the perfect balance. I included a few pictures in my review, including one that shows the hash brown patty from the side to highlight how thick and delicious this brick of potato goodness truly is. We ordered two breakfast sandwiches and split them fifty-fifty because it's the best way to try several items on the menu without being wasteful. However, we each got our own hash brown since we did not want to share that part. We both ended up putting our hash browns on our sandwiches, agreed this is what we will do next time, and laughed when we saw the sign offering this option. As mentioned, this place is simple and only has four breakfast sandwiches on the menu. First of all, all of their sandwiches come on their deliciously soft, freshly-baked potato brioche bread. They have a few other things as well. One of our sandwich selections was the Midtown. This sandwich came with a fried egg, crispy bacon, American cheese, sliced tomato, fried shallots, and spicy aioli. I personally loved this one the most since I lean toward bacon over sausage, but both were delicious. The second sandwich we tried was the Chelsea. It came with a fried egg, sausage patty, American cheese, sliced tomato, and fried shallots, with spicy aioli spread. This was the other person's favorite because they prefer sausage over bacon. So either way, you cannot go wrong. They also have a veggie option. The Greenwich Village comes with scrambled egg whites, kale, sunflower seeds, avocado, caramelized onions, tomato, and American cheese. I haven't tried this one, but it sounds delicious. Just for those reading the review, the fourth sandwich on the menu is the Soho. It is simple and comes with scrambled eggs, American cheese, and bacon. If you don't want a sandwich, you can also order a cheesy hash brown patty by itself. They also offer a variety of beverages, including canned and drip coffee. Lastly, this restaurant is located in a food court-style area in the Aria, so there are plenty of seating options, and it is convenient for those who want to eat other foods nearby. Just be sure to check the hours for the different restaurants and cafes in the food court, as they all have varying hours of operation and might not all be open at the same time. I highly recommend breakfast here if you're a fan of hash browns or breakfast sandwiches. This place is the perfect marriage of the two. They were both really tasty. I only gave a 4 out of 5 because I feel that the egg could have been cooked a little longer. Even though it was good by the end the softness of the egg was getting to me. Seemed like they really maximized the use of the area with several restaurants staggered around. However, there was a lack of seating due to how busy it was. We took the items to go and went back to our room. The food was overall pretty good. We were surprised by how big the hash browns were. I just thought the $7 for the hash brown was a Vegas price; but I truly think they could cut them in half and charge $4 instead. The outside was crispy but due to the thickness, the inside was a bit soggy. We paid $67 for 3 egg sandwiches & 3 hash browns. Not too bad considering it's on the strip. Enjoyed a recent breakfast here. Upon walking up, I was hit with sticker shock looking at the prices as they have increased since I've seen menus online, I had the Greenwich Village sandwich. My guest had the SoHo and substituted sausage for the bacon. Both sandwiches were tasty and hot, but didn't justify the price for a fast food type of breakfast ($12 each). If you asked me to choose between Egghead and Eggslut, I'd say skip the lines and come here instead. I got the midtown with fried egg, bacon, cheese, fried shallots and dijonnaise. The fried shallots really made a difference in giving the sandwich a smoky flavor along with the bacon. The egg was well fried and not over or undercooked. The tomato in between cut through a lot of the fat to give the sandwich some moisture. Overall a decent but heafty sandwich.
