I did notice an employee eating a big beautiful steak while she closed out her shift, I asked what cut and she said a ribeye. So I guess they cut the 1-1.5 inch thick cuts for employee steaks and customers get ribeyes a 1/4 inch thin cooked into shoe leather. Pro tip: go to Strayhorn. Rumor is cattleman's doesn't even use local beef anymore, they just cosplay ranch life so you get to eat a low quality steak with the comforting smell of cow poo.
