Holy... where do I even start? A friend highly recommended this place, so I went with high expectations. Somehow, Fideua still managed to exceed every one of them. A few tips if it's your first visit: 1. Order from their pre-order menu (at least 24 hours in advance). 2. Come HUNGRY. Seriously. 3. Set aside 1.5-2.5 hours to enjoy the full experience. 4. Save room for dessert. What I ordered: - Sautéed Shrimp, Calamari & Octopus (Sepa/Gambas/Pulpo al Ajillo) - Sea Bass Oven-Cooked in a Salt Crust - Ox Tail (Rabo de Toro) - Chef's Signature Seafood Fideuà - Warm Bread with Spanish-Style Aioli - Chef's Choice Dessert (Surtido de Postres) I would order every single one of these again without hesitation. Fideua is a small husband/wife restaurant about 10-15 minutes off the Las Vegas Strip, by Head Chef Farman and Sous Chef Barbara. Barbara makes the desserts in-house, so the selection is limited.. but that's exactly why they're so good. Beautifully balanced, not overly sweet, and the perfect way to end the meal. One tip: don't finish the aioli with the bread. Save it for the sea bass, ox tail, and paella/fideua. You'll thank me later. This was one of the best meals I've had in Las Vegas. What I loved most was how authentic everything felt. The ingredients are imported from Spain, and nothing tasted "Americanized". The food, service, and hospitality were all exceptional. I've eaten at many José Andrés restaurants across different cities, and while I enjoy them, they're much more modern fusion. Fideua delivers something much closer to what you'd actually experience in Spain, and that's what makes it so special. Honestly, I haven't had a Spanish meal this authentic even in Los Angeles. There are a couple good ones but not THIS good. The pricing is also incredibly fair. To get this level of quality on the Strip, you'd easily pay two to three times more.. and even then, I doubt the food would taste better. If you can, book an earlier timing so you'll have the chance to chat with Farman & Barbara and his culinary journey. His warmth, curiosity, and passion shine through not only in conversation but in every dish that comes out of the kitchen. Spectacular food and great people! Everything here is seriously top notch. Farman and his wife are amazing hosts. The ingredients are all fresh and organic. A mile away on the strip a $35 paella would cost over $100 and not be as good. This is a small family owned business. And they encourage you to stay and enjoy yourself. I was lucky in that I was able to walk in and get a seat. Farman says that many nights it's reservation only. In fact, they have two menus. One that's for walk-in customers, and a second that requires 24 hours notice so they can prepare the special dishes properly just for you. They have flamenco on some nights- check their website to see when there's live music. It's a gem of a place. I'll be back with my wife the next time we come to town. read more

We walked into a charming warm and modern dining room, welcomed personally by the chef-owners Farman and Barbara as their first guests for an early dinner on Saturday night. Our daughter had requested to try Spanish cuisine for the first time and we were pleasantly surprised to find Fideus, specializing in paella and tapas. Little did we know what a treat we were in for that evening! Farman and Barbara were meticulous and gracious throughout the evening, hosts interacting more like friends welcoming new guests into their own home for dinner. They explained the menu and pointed out suggestions, checking on tastes and prefered spice levels, then in turn so very warmly and professionally checking if we needed anything else and even providing a little bell to the table to catch their attention from chef duties in the kitchen! The food was exceptional as everything was prepared fresh on order and personally crafted and served to the table by Farman and Barbara themselves! My wife and I had the pleasure of experiencing Fideua, and it was one of the most memorable meals we have had in recent years. Don't plan on stopping in for a quick bite, plan on savoring the relaxed pace, the authentic ambiance and the very personal service that you will get from Farman and Barbara. This couple literally runs the front and the back of the house, giving owner-level attention to every aspect of the experience. We had the Sepia Al Ajillo, which is wild calamari and fresh shrimp, cooked perfectly and presented for sharing on a small platter will an Ajillo (olive oil base) with a perfect amount of back heat that enchants your palate. Next, what they humbly call "Toasted Bread " is a play on a bruschetta topped with a delicate tomato compote then a thinly sliced Spanish Serrano Ham, which reminded me of an Italian Prosciutto. While we waited for the main dish, we snacked on a medley of nuts and cheeses. Honestly, I felt loved. The main dish of Squid ink rice with seafood exceeded our expectations, which were very high by that point. Every bite was full of fresh seafood and just the right amount of heat. Basque Cheesecake, Almond Tart and a sort of Tiramisu were presented on a platter for sharing... all homemade and unforgettable. We happened to be there on an evening that included an extremely talented Flamenco guitarist, regaling us with music that elevated the experience to levels unmatched. Fideua is an incredible hidden gem in Las Vegas. If you consider yourself a foodie, I highly recommend that you make time for this place. It's a bit off the Strip and it feels as if you have a private team of chefs preparing your meal. First, make a reservation online. Then, the day before, give them a call to place your order, as much of the menu is only available if you preorder. With the logistics out of the way, prepare to be amazed! The husband and wife team, working along with another cook, will bring out plate after plate of delicious Spanish dishes, each accompanied by the friendliest of attitudes. My favorite dish was the paella negra, a deeply flavorful seafood and squid ink paella. Pro tip: mix each bite with some of the aioli they bring for an extra boost of flavor. But really, everything was quite good. The squid and potato dish and the Spanish omelet are champion contenders themselves. Spread a little aioli on bread and top with omelet for a decadent treat. You should definitely try a few of the tapas as well; the pan con tomate with ham was divine. We meant to share a couple but ended up ordering all of them somehow, with absolutely no regrets. You can put some aioli (do you detect a theme?) on each to elevate your experience even more. For dessert, do your best to make room for the almond cake, served with berries and ice cream. The Basque cheesecake will also knock your socks off, should they still be clinging on by this point of the meal. I could go on, but you get the point. Make a reservation in advance. One thing that makes Fideua stand out is that once you make a reservation, you can call to customize the menu according to your dietary needs. They can design the entire meal around your diet and preferences. I went to an office Christmas party here and they were able to meet all the dietary restrictions for one of the guests. I have been here several times and each time there is something that leaves me more impressed than the last. The last time we were here, they had a Spanish guitarist come and play music. What to know: - make reservations 48hr ahead - preorder menu for reservations, need to call 24hr ahead - large shared parking lot - real good food. 50-80 $/pax - no liquor license (yet - they are a new restaurant and expect their license by March 2025) Food highlights: (everything was ordered in advance, not sure if thats completely necessary) - Squid con patatas: fresh and tender baby squid, cooked the best I have had. Potato was very yum and soft. Mixed with onion and parsley - Pan con salmon: bread with salmon and mustard sauce (tapa). One order is one piece only. Salmon was broken into chunks, not overcooked. Mustard sauce with dill was nice. - Almond cake: delicious cake served with ice cream (not your average haagen dazs) and berries - Pan con tomate (added ham): tomato flavor is light and refined. I don't like the artificialness of canned tomato products and thought these tasted great. We added spanish ham (we were told from Serrano) which I thought was worth the extra cost. Very flavorful and cut in-house Only the mussels I thought were under the bar set by the other dishes. Everything else was near perfect. My lunch at Fideua was very enjoyable! Was craving for paella and found this gem. Luckily they were willing to accommodate order for one person. I had the squid ink paella, which was awesome. Unlike other seafood paella that usually has a stronger briny taste, the paella here has more traces of sweetness (likely from onion?) and spiciness. And the addition of aioli was brilliant! It added so much flavor to the rice. The sautéed calamari was also great with mild spiciness trenched in garlic sauce. I ended my meal with a combo of basque and almond cake. The almond cake tasted good with a nostalgic style. Service was impeccable; the owners were friendly and communicative, I had such great time here. The walk-in menu is a bit limited, mostly centered around paella (but still a good selection to choose from). Looks like it's better to reserve in advance if you'd like to try the full menu. Menu offers daily specials, salads and Andalusian gazpacho, small bites and mini toasted sliders, Spanish pasta and rice dish with choice of vegetables, chicken, seafood, they have sirloin steak, wild caught salmon, as well as desserts, kids menu, and soft drinks. Andalusian Style Cold Tomato Soup ($6) is delightful! It's cooling and made with a flavorful blend of tomatoes, cucumber, bell pepper, onion, garlic, olive oil, vinegar, and topped with fine breadcrumbs. Watermelon Arugula Salad (half portion, $7) is yummy! It's a refreshing salad with arugula, sweet watermelon, fresh cucumber, feta cheese, fresh mint, and drizzles of olive oil, lime, and honey dressing. Pan Con Tomate (3 pieces, $6) is tasty and good! It's toasted bread with garlic, grated tomato, and olive oil. Potatoes with Aioli ($6) is also good! It's deep-fried potatoes with aioli sauce. For dessert, Almond Cake ($6) is lovely! It's soft, gluten-free, has a hint of cinnamon and lemon, and lightly dusted with powdered sugar. This complements wonderfully with Fruit Platter ($6) which has a nice selection of seasonal fruits. From the friendliness of the chefs, the ambiance and decor, and the delicious food the entire meal was *chef's kiss* wonderful. If I was you, I'd check them out sooner rather than later before they become so popular reservations become difficult to come by. It's still early days (as of our dinner there) for this unique restaurant and we were the only patrons there that night, but considering the thoughtfulness and diligence of the proprietors/chefs, I am very confident the quality of the experience will continue to be as stellar as it was for us. So, for now, make sure to make a reservation so they know you're coming and they'll make sure everything is as perfect as we experienced.
