    Welcome to Jaleo brought to you by Chef Jose Andres, housed in The Cosmopolitan Hotel. This is a Spanish restaurant bringing you authentic paella's cooked over open fire, assorted tapas, delicious sangria's, steaks, seafood, and great desserts. Customer service from every employee is just stellar. Food is served in small portions so can you enjoy many different items. A simple standout was a shaved fennel and apple salad with walnuts and bits of manchego cheese. Great atmosphere with comfortable seating. I would definitely go back to enjoy so much more on this delectable menu. Highly recommend

    We dined at Jaleo and it was truly an amazing experience from the beautiful women in the front till our leave! We didn't have reservations but I would recommend it. I think we were very lucky on a Saturday night to be seated within a few minutes. Our seating was just what we hoped for without even asking. We love booth seating because we explore menus and love good food. Our server (KEVIN) was excellent along with the server assistant (NATHANIEL). Shout out to these men for truly exceptional service. They both worked hard as we watched them demonstrate their expertise all over the restaurant. If you love sparkling water please try theirs which is the best I have ever had. I didn't order drinks guys I just enjoyed the water. The food was sooooo delicious ! Everything was cooked to perfection. I love seafood but not really shrimp but I ordered 2 servings OMG! They noted my pork allergy which was great. Kevin was even more impressive by telling me he forgot the scallops came with pork but got the cooks to prepare it without the pork so it only took a few minutes longer. This sold me here because not many people are accountable for mistakes but this never made it to my table! ‍ THANK YOU KEVIN! Thank you to these men cook also for preparing it so fast because there was no lag time! Everything was PERFECT! We will definitely be going back to dine here again!     I went into Jaleo with high expectations. José Andrés is a legend, and I was eager to experience his take on Spanish cuisine. The food largely delivers, but the ambiance left me wanting more. For a concept with so much cultural richness to draw from, the space feels like a missed opportunity. The one exception is the "e" room, an intimate 9-seat chef's experience that is creatively and beautifully decorated. I peeked in but didn't dine there as it runs around $300 to $400 per person. We started with the manchego, and it set a great tone. The raw sheep's milk flavor is tangy and bright, and the young, creamy texture pairs beautifully with the Marcona almonds. Simple and well executed. The Bikini de Jamón y Queso Manchego was one of the highlights of the night. It's a pressed sandwich of Serrano ham, Manchego cheese, and caramelized onions, served with a honey mustard sauce on the side that is excellent. Sounds simple, tastes remarkable. The Cono de Sobrasada is a cute little bite that comes in a crispy brik pastry cone filled with sobrasada Ibérica, a hint of goat cheese, and a drizzle of honey. The honey is essential here because the sobrasada is bold and intense on its own. It's a fun tapa but I expected a little more from it. For tapas, the Berenjenas Fritas a la Malagueña is a must order. Crispy fried eggplant paired with a light yogurt, lemon, and honey espuma that hits a perfect balance of salty and sweet. Don't skip it. The undisputed star of the night was the Gambas al Ajillo. Shrimp sautéed in olive oil, garlic, and chili peppers with an aroma that pulls you in before the plate even lands on the table. Mouthwatering from start to finish. We closed with the Tarta de Queso, a Basque style cheesecake made with goat cheese, finished with honey and salt. I appreciated the concept and I knew going in that this would be nothing like a traditional cheesecake. That said, I've had better versions of this dish elsewhere. This one was slightly overbaked and a touch dry, and the flavor didn't quite reach the depth it promised. Overall a memorable Spanish dinner with some real standouts. Lean into the tapas, order the gambas without hesitation, and save room for the Bikini. For the location and the caliber of the concept, $120 for two without alcohol feels like a fair deal on the Strip.

    Margarita Ibérica - BEST SPICY MARG EVER.

    If you like spicy, you HAVE to get the Margarita Ibérica. This is the greatest spicy margarita ever. The mezcal gives it a smoky edge, and the foam on top ensures that you get that combo of saltiness on every sip. It is their house margarita and all the servers swear by it--for good reason. I asked about it, and they said the secret is árbol chili peppers which they incorporate into the mezcal for that perfect blend of spice! PRO TIP: if you have anyone at your table who isn't good with spicy drinks--just ask for it with only half the spicy mezcal. My daughter did this and was able to enjoy it with me.

    This is a nice tapas place. Kevin who is our server made our restaurant experience extra special. Kevin was extra nice and very attentive to our requests. My friend celebrated his birthday. We got sangria, a pitcher and it was more than enough for all 4 of us. We tried and enjoyed this.fried eggplant with honey. They dates also were extra delicious. Octopus was also good. You can taste the charred grilled from the octopus.

    Chef José Andrés' Spanish tapas restaurant is an absolutely fabulous date night experience! From reception to wait staff, everyone is cheerful, enthusiastic, and on it. They make the place, without a doubt The food is elevated tapas, fancier than typically found across Iberia. The vibe is exactly right; tables near each other, the whole village enjoying food together. The Cono de Caviar has smoky Amar Osetra topped with gold leaf, a fabulous bite that celebrates the ingredients. The Cono de Atun lets the fish shine through. Winners, both. The Datiles - dates stuffed with almonds and wrapped in bacon - have texture and taste dancing together in your mouth. The Chorizo Casero features an olive oil potato puree and a cider reduction that brought me back to the streets of Barcelona. The Calamares Romana - deep-fried squid with an octopus ink aoili - is deeply satisfying and makes everyone's mouth black for a satisfying amount of time. It's hard to exhaust this deep menu, and we left all the dishes celebrating the native acorn-fed Iberian pigs to the next visit.

    Everything in the happy hour menu was incredible. With a wide variety of tapas, the seafood was extremely flavorful paired with a delicious sangria and hand selected wine by their in house sommelier. The service and ambience was wonderful with extremely friendly staff, our servers name was Nina therefore if you get to have her help you, don't be afraid to ask for recommendations! The black ink squid calamari, potatoes and chicken fritters were very tasty. Can't wait to order them again and try others in future!

    I needed some time to kill and it was almost dinner time when I found out Jaleo has something called 'Sangria Hour', which is their happy hour. It's daily at the bar from 5-7. I got there at about 6:40 and overall, it was a bit empty, and the bar was probably only about half full. I don't think a lot of people know about it because they don't advertise it. Even when I sat down and they gave me the menu, they didn't initially give me the Sangria Hour menu - I had to ask for it. Luckily, I still had enough time to order. I had: Patatas Bravas (fried potatoes with spicy tomato sauce and aioli) - these were a little basic. It could have used a bit more flavor - maybe more spicyness? Endibias Con Queso de Cabra y Naranjas (endives with goat cheese, oranges, almonds, roasted garlic dressing) - I normally don't like goat cheese but I really liked this. The oranges were refreshing, and I liked all the different flavors together Pan con Tomate (toasted bread with fresh tomato) and added Manchego cheese - can't go wrong with tomato bread! I probably could have eaten a few more of these They also have a few drink specials during Sangria Hour so next time if you're around during this time, check it out but just be sure to ask for the menu!

    The evening was excellent we were able to get a lovely table for three on short notice. Since we were able to get right in. We had the Garlic Shrimp Tapas! They were quite delicious with just the right spicyness! They devein and take the heads off the shrimp! The ambience was really nice because you could sit and watch them prepare the Paella and people watch at the cosmopolitan! I really liked the decor. The Paella of the night was sausage, Shrimp and chicken. I also shared a glass of Sangria which was delicious! I would highly recommend Jaleo and can't wait to return!

    OMG! My daughter, Muff decided to treat me to a Las Vegas trip for my birthday and we went to several restaurants that we've both been wanting to go to. Jaleo was one of the top restaurants that we wanted to go to and the restaurant exceeded our expectations. Jaleo is a beautifully appointed restaurant and the decor is amazing. Low-backed sofas were actually beautiful and comfortable and the way that Jaleo is decorated is in keeping with casual yet elevated Spanish tastes. And the wait staff service was stupendous. My daughter and I never had to ask for our table to be serviced; It just happened and the staff was extremely intuitive. And the food! I left the restaurant hoping and begging that Jose Andres would open a Jaleo in the Pittsburgh area. We had the Croquetas de Pollo, Croquetas de Jamon, Gambas al Ajillo, sangria and we had a black ink pasta dish (Rossejat Negra...or Not) that was superb. I can't wait to go back again to the Las Vegas Jaleo! Definitely worth the wait!

    I made a reservation to celebrate our anniversary as we've dined at other Jose Andres restaurants around the country and they are always a great experience. This location was no different. The food, service, and atmosphere were on point. Situated in The Cosmopolitan near the infamous chandelier, it offers ample exterior seating and things to see/do if you show up a little early as we did. Kevin was our server who with a team of people ensured our evening was special. We were welcomed with congratulatory signage at the table and verbal recognition of our anniversary which got me some brownie points with my wife given the smile on her face. We tried the Patatas Bravas, Judias Romesco, Carne Piquillo, Chorizo Casero, and Pollo Ajillo. They were all delicious. These are smaller dishes that are shared at the table, not single person entrees so you have to account for food choices and number of people when ordering. Given that it was just my wife and I, it was pretty easy for us to pick and choose what we wanted to eat. My wife had a ginger beer which she seems to be enjoying more of these days given our fitness kick. I on the other hand had a margarita which I thought was good, but not great. I've had better for the cost and size which seemed to be overwhelmed with ice. I would likely stick with water or a non-alcoholic beverage in the future. To celebrate our anniversary, they brought us a dessert and champagne which we really didn't need but were very appreciative of the generous recognition. Overall, a $138 bill for two people which is a little steep but it was a wonderful memory.

    First time trying Jaleo right on the third floor of the Cosmo and it was absolutely phenomenal! They have small plates to share and it's more of tapas and drinks. Service was great and reservations weren't needed on a Wednesday night at 7pm. Highly recommend to anyone! ^.^

    Always a pleasure to visit any of Chef Jose Andres restaurants. The service/food and ambiance never disappoint. That chorizo has ruined me for life as I won't be able to eat any other sausage wout comparing to this one. It is a tapas place and each plate is enough for 2 pple to try. My husband and I ordered 4 dishes/2 sides and we were full enough. It was our anniversary and our server went above and beyond. Again. Always 5 star service every time we go to Jaleo anywhere. For our special anniversary dinner we received a comped toast except I don't drink alcohol so they made a special sparkly mocktail for me that was delicious. I just can't say enough good things about the service the food and the ambiance. It's not cheap but well worth the splurge!

    How easy is it to get bar seats on a Saturday night around 6:30? Do we have the ability to order some or all of the food on your menu at the bar?

    It depends on what is going on at the hotel. If there is a big conference, the bar can get jammed up. If none, then the bar is big enough to find a spot.

    Do i have a choice as to what paella i can order on any night?

    No. Each night they have one kind of Paella. As far as I know they don't always know too far ahead what it will be each day. It's different kinds on different night.

    We've done fine dining before and usually it takes about 2+ hours to get through the meal. We have a show to get to at 8pm at the Palazzo. Is it cutting it too close if we have dinner at 5:30pm?

    I don't think you will be able to make it. There are seating at 5:30 and 8:30. I've done the 5:30 seating twice and once we finished right at 8:05pm and the second we finished at 8:19pm. Finished meaning when the last course was served, chefs gave…

    Tell them when you make the reservation and they will make adjustments. They were really accommodating to some of the other diners when I visited.

    Are you still hungry after the course?

    Holy... where do I even start?…read more A friend highly recommended this place, so I went with high expectations. Somehow, Fideua still managed to exceed every one of them. A few tips if it's your first visit: 1. Order from their pre-order menu (at least 24 hours in advance). 2. Come HUNGRY. Seriously. 3. Set aside 1.5-2.5 hours to enjoy the full experience. 4. Save room for dessert. What I ordered: - Sautéed Shrimp, Calamari & Octopus (Sepa/Gambas/Pulpo al Ajillo) - Sea Bass Oven-Cooked in a Salt Crust - Ox Tail (Rabo de Toro) - Chef's Signature Seafood Fideuà - Warm Bread with Spanish-Style Aioli - Chef's Choice Dessert (Surtido de Postres) I would order every single one of these again without hesitation. Fideua is a small husband/wife restaurant about 10-15 minutes off the Las Vegas Strip, by Head Chef Farman and Sous Chef Barbara. Barbara makes the desserts in-house, so the selection is limited.. but that's exactly why they're so good. Beautifully balanced, not overly sweet, and the perfect way to end the meal. One tip: don't finish the aioli with the bread. Save it for the sea bass, ox tail, and paella/fideua. You'll thank me later. This was one of the best meals I've had in Las Vegas. What I loved most was how authentic everything felt. The ingredients are imported from Spain, and nothing tasted "Americanized". The food, service, and hospitality were all exceptional. I've eaten at many José Andrés restaurants across different cities, and while I enjoy them, they're much more modern fusion. Fideua delivers something much closer to what you'd actually experience in Spain, and that's what makes it so special. Honestly, I haven't had a Spanish meal this authentic even in Los Angeles. There are a couple good ones but not THIS good. The pricing is also incredibly fair. To get this level of quality on the Strip, you'd easily pay two to three times more.. and even then, I doubt the food would taste better. If you can, book an earlier timing so you'll have the chance to chat with Farman & Barbara and his culinary journey. His warmth, curiosity, and passion shine through not only in conversation but in every dish that comes out of the kitchen. I already can't wait to come back in a few months to try other dishes on the menu.

A mile away on the strip a $35 paella would cost over $100 and not be as good. This is a small family owned business. And they encourage you to stay and enjoy yourself. I was lucky in that I was able to walk in and get a seat. Farman says that many nights it's reservation only. In fact, they have two menus. One that's for walk-in customers, and a second that requires 24 hours notice so they can prepare the special dishes properly just for you. They have flamenco on some nights- check their website to see when there's live music. It's a gem of a place. I'll be back with my wife the next time we come to town.

Old items on menu... bacon wrapped dates, beet salad, pulpo, mussels were all still really good! Crab cakes were bland. Do not recommend this dish. A staple and OG restaurant of Vegas in the past and still and great place now, just with an upgraded look. Parking is easy.

Every bite is a journey that takes you that makes you rethink food and what you believe you know about food. You walk in knowing that you hate beets and you walk out wondering if maybe you should go and buy some beets at the store and give them another try because é made them so delicious. When you arrive you start out sitting outside of Jaléo having drinks and getting to know the people that will be dining with you. The dining room only holds eight people per service. You receive your golden ticket, which is your admission into a world of pure imagination just like Willy Wonka. They tell you when you enter that you're entering the mind of Chef Jose. The room is fun and quirky with odd little knickknacks in everywhere you look. It makes you wonder what you ate in for.... In a really fun way! Then you are taken on a culinary journey. You will have mind-blowing combinations like cotton, candy and foie gras or beets and manchego or the most amazing crab dish you've ever had in my life. The service is spot on, and the flavors are delicious. It is an experience everyone should have at least once in life and I would definitely recommend it to any one I meet!!

Walked in and even though we had reservation for 5:30pm, the host accommodated us. We had our choice of where to sit and we picked a table by the window. Nice restaurant with high ceiling, warm decor and a small wine glass cellar that you can see from most anywhere you sit in the restaurant. The moment we arrived to the moment we left, service was amazing. Timo was a waiter and was so attentive to us. Great recommendations and we enjoyed it all. Our water glasses and water bottle on the table were never empty. Timo and support staff were great. You have a few AYCE options and we did the $65pp. The first 3 items on this menu are only provided once while the rest of the food menu is unlimited. You have 90mins to dine. We actually only ordered up to 2 on a few items as we actually did get pretty full. The appetizer size food items were all flavorful and most served on crostini. Some were savory amd refreshing. Great sauces to complement the fish or meat. We had 3 dessert options. We did the cheesecake and the white chocolate pudding. Omfg, loving the rich creaminess of the pudding with sea salt sprinkled and topped with tiny roasted marshmallows. The cheesecake is not served with anything but it's not plain at all. It's beautifully buttery and light. 2 things that stood out: The chef came out to chat with us which was so enjoyable. The food and service were already great and the chef's attention to each table was a topper. Timo, our waiter cleaned our table of crumbs and provided new folks and napkins so that we can enjoy dessert. We appreciated that. All went well and we will visit again. Totally recommend ADB!

Goes well with the meat, cheese and olive oil. 3. Japanese Vaca wagyu 8oz; a must. Perfect amount of fat ; meat is tender nicely seasoned. Make sure medium rare. 4. Japanese Sangria. Plum wine flavored and tasty, loved it. 5. Seafood paella; like any paella it takes a while to prepare. Was not a fan of it. It was a bit bland and dry. But you can just a bit of salt to season it. 6. Beet salad; must have. Love the tender beets with who knows the sauce and dressing. Hints: 1.sit on the counter /bar to get the full experience. 2. So, give yourself ample time to play the parking lot vulture game. When you first walk in, be aware there's a dart board that people might be shooting darts at. This is definitely a safety concern if neither party is paying attention. There's not a host stand nor signage indicating if you should stand at the bar awkwardly or if you should seat yourself. So, we stood there for a couple of minutes waiting to be acknowledged. Seating is pretty limited, another thing to be aware of. There were 3 half booth/half table seats (high top) and only bar seats from what I could see. Maybe not the most ADA accessible spot. They were offering happy hour when we were there, which is neat since it was a Saturday at 7pm! They had some good options for drinks and food at $5 a pop. We looked at both the happy hour menu and regular menu. We each ordered a glass of Tempranillo wine. They had some solid options from Spain and elsewhere but not a lot of "by the glass" options. Pretty typical for a small establishment though. Sadly, the paella couldn't be served/prepared? The server stated they were out of some other items. Her wording led me to believe they just didn't have the operational capacity to make more than one paella dish at a time, which is disappointing. The food was mediocre. The octopus was definitely chewy, and seemed like sliced tako that should have been served as nigiri vs what you'd expect at a tapas spot. The bacon wrapped dates were way too big and the weird mini cleavers were not the greatest for trying to cut the food down with--they didn't have normal utensils nor napkins (just small bar napkins). I did like the pan con tomate. Honestly, this place was super disappointing--I started out with 3 stars but then realized through the course of writing this review, 3 was a reach and 2 was more appropriate. I don't think I'll come back here and especially not for a date. They have a LOT to improve on.

We ordered the majority of small bites, oysters, and the Bluefin Tuna with Fried Egg was one of the most unique and decadent bites. Croquetas are always perfect but the star was the Miso Glazed Pluma Iberico. I've never had pork so succulent and perfect. I will have dreams about it.
