    Chef José Andrés' Spanish tapas restaurant is an absolutely fabulous date night experience! From reception to wait staff, everyone is cheerful, enthusiastic, and on it. They make the place, without a doubt The food is elevated tapas, fancier than typically found across Iberia. The vibe is exactly right; tables near each other, the whole village enjoying food together. The Cono de Caviar has smoky Amar Osetra topped with gold leaf, a fabulous bite that celebrates the ingredients. The Cono de Atun lets the fish shine through. Winners, both. The Datiles - dates stuffed with almonds and wrapped in bacon - have texture and taste dancing together in your mouth. The Chorizo Casero features an olive oil potato puree and a cider reduction that brought me back to the streets of Barcelona. The Calamares Romana - deep-fried squid with an octopus ink aoili - is deeply satisfying and makes everyone's mouth black for a satisfying amount of time. It's hard to exhaust this deep menu, and we left all the dishes celebrating the native acorn-fed Iberian pigs to the next visit.

    This is a nice tapas place. Kevin who is our server made our restaurant experience extra special. Kevin was extra nice and very attentive to our requests. My friend celebrated his birthday. We got sangria, a pitcher and it was more than enough for all 4 of us. We tried and enjoyed this.fried eggplant with honey. They dates also were extra delicious. Octopus was also good. You can taste the charred grilled from the octopus.

    The evening was excellent we were able to get a lovely table for three on short notice. Since we were able to get right in. We had the Garlic Shrimp Tapas! They were quite delicious with just the right spicyness! They devein and take the heads off the shrimp! The ambience was really nice because you could sit and watch them prepare the Paella and people watch at the cosmopolitan! I really liked the decor. The Paella of the night was sausage, Shrimp and chicken. I also shared a glass of Sangria which was delicious! I would highly recommend Jaleo and can't wait to return!

    OMG! My daughter, Muff decided to treat me to a Las Vegas trip for my birthday and we went to several restaurants that we've both been wanting to go to. Jaleo was one of the top restaurants that we wanted to go to and the restaurant exceeded our expectations. Jaleo is a beautifully appointed restaurant and the decor is amazing. Low-backed sofas were actually beautiful and comfortable and the way that Jaleo is decorated is in keeping with casual yet elevated Spanish tastes. And the wait staff service was stupendous. My daughter and I never had to ask for our table to be serviced; It just happened and the staff was extremely intuitive. And the food! I left the restaurant hoping and begging that Jose Andres would open a Jaleo in the Pittsburgh area. We had the Croquetas de Pollo, Croquetas de Jamon, Gambas al Ajillo, sangria and we had a black ink pasta dish (Rossejat Negra...or Not) that was superb. I can't wait to go back again to the Las Vegas Jaleo! Definitely worth the wait!

    I needed some time to kill and it was almost dinner time when I found out Jaleo has something called 'Sangria Hour', which is their happy hour. It's daily at the bar from 5-7. I got there at about 6:40 and overall, it was a bit empty, and the bar was probably only about half full. I don't think a lot of people know about it because they don't advertise it. Even when I sat down and they gave me the menu, they didn't initially give me the Sangria Hour menu - I had to ask for it. Luckily, I still had enough time to order. I had: Patatas Bravas (fried potatoes with spicy tomato sauce and aioli) - these were a little basic. It could have used a bit more flavor - maybe more spicyness? Endibias Con Queso de Cabra y Naranjas (endives with goat cheese, oranges, almonds, roasted garlic dressing) - I normally don't like goat cheese but I really liked this. The oranges were refreshing, and I liked all the different flavors together Pan con Tomate (toasted bread with fresh tomato) and added Manchego cheese - can't go wrong with tomato bread! I probably could have eaten a few more of these They also have a few drink specials during Sangria Hour so next time if you're around during this time, check it out but just be sure to ask for the menu!

    I made a reservation to celebrate our anniversary as we've dined at other Jose Andres restaurants around the country and they are always a great experience. This location was no different. The food, service, and atmosphere were on point. Situated in The Cosmopolitan near the infamous chandelier, it offers ample exterior seating and things to see/do if you show up a little early as we did. Kevin was our server who with a team of people ensured our evening was special. We were welcomed with congratulatory signage at the table and verbal recognition of our anniversary which got me some brownie points with my wife given the smile on her face. We tried the Patatas Bravas, Judias Romesco, Carne Piquillo, Chorizo Casero, and Pollo Ajillo. They were all delicious. These are smaller dishes that are shared at the table, not single person entrees so you have to account for food choices and number of people when ordering. Given that it was just my wife and I, it was pretty easy for us to pick and choose what we wanted to eat. My wife had a ginger beer which she seems to be enjoying more of these days given our fitness kick. I on the other hand had a margarita which I thought was good, but not great. I've had better for the cost and size which seemed to be overwhelmed with ice. I would likely stick with water or a non-alcoholic beverage in the future. To celebrate our anniversary, they brought us a dessert and champagne which we really didn't need but were very appreciative of the generous recognition. Overall, a $138 bill for two people which is a little steep but it was a wonderful memory.

    First time trying Jaleo right on the third floor of the Cosmo and it was absolutely phenomenal! They have small plates to share and it's more of tapas and drinks. Service was great and reservations weren't needed on a Wednesday night at 7pm. Highly recommend to anyone! ^.^

    Always a pleasure to visit any of Chef Jose Andres restaurants. The service/food and ambiance never disappoint. That chorizo has ruined me for life as I won't be able to eat any other sausage wout comparing to this one. It is a tapas place and each plate is enough for 2 pple to try. My husband and I ordered 4 dishes/2 sides and we were full enough. It was our anniversary and our server went above and beyond. Again. Always 5 star service every time we go to Jaleo anywhere. For our special anniversary dinner we received a comped toast except I don't drink alcohol so they made a special sparkly mocktail for me that was delicious. I just can't say enough good things about the service the food and the ambiance. It's not cheap but well worth the splurge!

    Amazing food, fun shared plates and great vibes. Located upstairs in the Cosmopolitan Jaleo is a true gem. It is a little more casual thank your typical Vegas dinner. Our group did the tasting menu, omg wow!!! A few of the dishes that I thought I wouldn't like were actually some of my favorite (ex olive appetizers & I don't like olives). The tasting menu is 100% small portions, but don't be fooled it will fill you up. The staff was super knowledgeable about each course providing insight into each dish.

    Came here for the Sangría hour that's daily 5-7pm. I came on a Saturday night around 6 and found a seat at the bar right away. Around 6:30 it got full though. We got the patatas bravas, cono de sobrasada, endibias con queso de cabra, Sangría de cava, but the real HH deal was they had was their special - a bottle of wine and cheese and meat board! This was a nice stop for the night and we had great service from our bartender JT as well :)

    Lovely Spanish tapas restaurant at The Cosmopolitan! Came here specifically to eat Paella and called ahead of time to ensure that Paella Valenciana is available and it will be made with rabbit meat. Ambiance is modern, staff is friendly and menu is exhaustive. Bread and tomatoes were delicious. Spanish chorizo sausage and manchego cheese were good. Paella on the other side was a total disappointment. Expensive served in plate for one person for $80 is an insult. Considering this is the only reason I came here - I would consider my visit to be a total flop

    This was my second time here... and honestly it wasn't as good as the first! The service is always nice, they are helpful and always willing to guide you through the menu. But the food fell short this time. The pork secreto was the only thing I enjoyed this time. The paella was just ok, nothing spectacular. The shrimps also weren't a stand out for me. The appetizers we had were only ok and you honestly can't go wrong with cured meats. I hope this was just a bad night because I was really hoping to make this a go to spot for me.

    This is my second time having Jaleo, first was in Orlando. Vegas is the second. I can confirm this restaurant is okay. Starter: Bread with tomato sauce. Sauce was sweet, which it wasn't so thin and bread was think, which it was a bit thicker. But good vessel for the prosciutto. Ham croquettes: Very underwhelming. I thought it tasted more like a ham pot pit. Aged prosciutto: was very delicious, not too salty. Patta's bravo: the sauce on the bottom was nice with sweet notes. But the potatoes could be crispier. Plating cause also be better Main: Bbq chicken: surprising the best dish. Moist and light char flavor Special chorizo and pork paella. Was okay. Missing the crispy side. Also wished the chorizo was cut it and crisped. Overall okay. I think I'll try another place instead of coming back.

    It depends on what is going on at the hotel. If there is a big conference, the bar can get jammed up. If none, then the bar is big enough to find a spot.

    No. Each night they have one kind of Paella. As far as I know they don't always know too far ahead what it will be each day. It's different kinds on different night.

Both menus (last years and this years) say that the tuna is suppose to be marinated. The chunks of tuna that I ate just tasted like raw tuna and the delicious tuna I had before. It still was an ok plate but not amazing like last time. We both enjoyed the Apple Manchego Salad. That was refreshing and delicious. So was the Tomato Basil Soup with Mini Grilled Cheese. I took the smaller 1/2 sandwich and didn't know that my half had most of the cheese. My husband was slightly disappointed with his half. I thought the stuffed peppers were tasty. The Steak and Mushroom Skewers had great flavors to them but the steak was chewier than it should be. I'm still a fan but the food wasn't perfect like last time. Service was mostly good but they don't bring you new plates.

I would recommend this restaurant and would visit again. I should note that it is a bit expensive, but then again everywhere we have been in Vegas has been pricey.

Julia, our server, was very nice and friendly and got us our coffee and cleared our plates.

Every course balanced technique, presentation, and flavor, while still maintaining a sense of fun and surprise. The experience started with Jamón Ibérico de Bellota, sliced paper-thin and melting on the tongue. It's easy to see why this legendary Spanish ham is considered one of the world's great delicacies. The Ferran Adrià olives were a playful nod to molecular gastronomy. They looked like olives, but exploded with flavor in a way that instantly set the tone for the evening. The Caviar Cone was a perfect bite. Rich osetra caviar, crème fraîche, and gold leaf came together in an elegant presentation that somehow managed to feel luxurious and whimsical at the same time. The signature Cotton Candy Foie Gras was one of the most talked-about dishes of the night. Sweet cotton candy wrapped around rich foie gras shouldn't work, but it absolutely does. It was one of those rare dishes that makes everyone at the table smile. The Smoke & Ice Oysters were another standout. The contrast of smoke, chilled oyster, and apple mignonette air created a fascinating combination of textures and temperatures. The Gazpacho was bright, refreshing, and intensely flavorful. It acted as a perfect palate cleanser before the richer courses that followed. The Bazaar "Caesar" Salad elevated a familiar classic with jamón crisp and Idiazabal cheese, transforming a simple salad into something memorable. The Bison Buffalo Style was a clever reinterpretation of buffalo wings. The bison was tender and flavorful, while the blue cheese and buffalo sauce delivered all the nostalgia of game-day food in a refined package. The Classic Beef Tartare was beautifully balanced. The mustard, egg yolk, anchovy, and warm Parker rolls made this one of the strongest savory courses of the meal. For the main courses, the Ribeye Steak Chuletón showcased incredible beef flavor and a perfect cook. The Japanese A5 Wagyu was everything you'd expect from world-class wagyu, buttery, rich, and almost impossibly tender. The Setas al Ajillo may have been one of the most underrated dishes on the menu. The mushrooms soaked up the garlic-chicken jus beautifully, creating deep, earthy flavors. The Buttered Potato Purée lived up to its description of "butter, butter, more butter, some potatoes." It was outrageously rich and impossible to stop eating. To finish, the Tarta de Queso was spectacular. The Basque-style cheesecake paired with hazelnut praline and chestnut honey delivered the perfect ending: rich without being heavy and sweet without being overwhelming. If I had to pick favorites, they would be the Cotton Candy Foie Gras, Caviar Cone, Beef Tartare, Japanese A5 Wagyu, and Tarta de Queso. José Andrés has created a tasting menu that is equal parts culinary theater and world-class dining. Bizarre Meat isn't just dinner, it's an experience that you'll be talking about long after the last bite.

They have plenty of tables and an open kitchen where you can see them grilling steaks. They also have fridges full of different cuts of steak you walk by on your way to the restrooms. They have plenty of staff and the staff are really great. Our waiter Josue was excellent. As a group of 5, we tried the sloppy joes, pan con tomate, embutidos (different charcuterie), A5 cheesesteak, neptune's pillow and gazpacho as starters. Everything was tasty but the sloppy joes were incredible. So much flavor and a great mix of textures. We loved them so much, we got a second order. Highly recommend you order these if you go (two come per order). This was my favorite dish of the night. For entrees we ordered the lamb bacon, arroz meloso de cangrejo and a 2lb Washugyu steak with sides of mushrooms (setas al ajillo) and butter potatoes. Important note, all of the steaks are priced per pound, but the smallest size they offer is 2lbs so it is double the price. The lamb bacon was not good and I would not order it again. We should have known it would be fatty given that is called lamb bacon but it was roughly 90% fat which was far too much for our liking. We also did not enjoy the cheese sauce it was smothered in. The arroz meloso had decent flavor (was actually spicy which we enjoyed, but is not noted on the menu so beware if you are sensitive to spice) but had pieces of crab shell in it. When we mentioned it to a server, he said that is normal and the manager came by to repeat what he said and offer to make us another which we declined (kudos for very attentive service). The steak however was phenomenal. Cooked perfectly and extremely tasty. I really liked eating it with the mushrooms which were delicious. The butter potatoes are billed as having butter, butter and more butter and they are not lying. While others loved them, they were way too buttery for me. The steak takes awhile to cook and Josue rightly recommended we order that first then figure out apps, sides etc so that we would not be waiting too long. The meal was spaced out nicely and we really enjoyed it. It is quite expensive, but the quality of food and service live up to it.

I was lucky in that I was able to walk in and get a seat. Farman says that many nights it's reservation only. In fact, they have two menus. One that's for walk-in customers, and a second that requires 24 hours notice so they can prepare the special dishes properly just for you.
