    Our dinner plans on Mother's Days fell through and we called around to find somewhere to go to celebrate Mother's Day with my family. We were able to get last minute reservations for prime dinner time at Fishkill Prime. Upon arrival we saw that they had decorated nicely for the occasion. We were given a choice of which dining room to be seated in. Sadly, I was on medication that I can't mix with liquor, so it was just a Diet Coke for me. They were offering complementary wine spritzers to all the mothers. We ordered the escargot and Brussels sprouts to start. The escargot was good, but the Brussels sprouts were the star of the show! My husband makes incredible Brussels sprouts at home, even he had to admit that these were far superior to his own. For our entrees I ordered the duck and it was amazing. My husband ordered the ribeye. He said it was very good but a little on the salty side. Our daughter ordered the sea bass and said it was very good. This is definitely a great place for a date night or to celebrate a special occasion. We will definitely be back and I will try their cocktails when we do.

    Great food, staff, and service. Went here for dinner and was greeted with several dining options. Endless specials with quick service. Vast amount of dining seating with a full bar.

    We were intending to go to a different restaurant in Fishkill on a Sunday night and found Fishkill Prime - it looked classy and comfortable. Bottom line it lived up to the appearance. Had the salmon per the recommendation of the waiter who knew the menu. It was soft, well prepared and mouth watering. The following week tried the Chilean seabass and it was equally light and delicious. We brought guests here twice now and look forward to coming again!

    4 cheese ravioli with bolognese sauce and spicy rigatoni topped with barrata and pesto.

We ordered oysters, prosciutto with watermelon, chickpea-crusted fried calamari, scallops, and two pasta dishes--one with veal and the other with scallops. Plus cocktails and wine. The oysters were magnificent--fresh and delicious. The pasta wasn't particularly memorable, but the scallops turned out to be very tasty... While the dishes weren't extraordinary, they were certainly tasty enough. The most unpleasant--and even awkward--part was that the waiters were in no rush to clear away dirty dishes (and sometimes didn't do it at all), even though the tables there are quite small. You end up eating surrounded by dirty plates and glasses, which certainly doesn't help the impression of the service quality. Even when we asked for the dishes to be cleared, it didn't happen. We were told they would clear everything when they brought our second round of cocktails, but since the cocktails never arrived, the dirty dishes stayed on the table. It's unlikely we'll visit this restaurant again. We live just a seven-minute drive away, but we have no desire to spend over $300 again to eat in an atmosphere reminiscent of a roadside diner.

The main theme seems to be fresh fish, seafood, and it seems fresh everything else. (Confirmed that they get fresh shipments daily). A reunion with family and so were happy to talk and have some bread, and drinks while they were wrapping up their other patrons also enjoying themselves. The main purpose seemed to be to time taking our orders in a way that they would come out properly. As the food came out, it was one wonderful dish after another. I could name and describe eschar one, but fresh and flavorful is the best way. I can imagine that at the time when we arrived that the kitchen was hopping. The chefs seemed to focus very well on each individual order, so of course it took some, but not excessive time. As it took a little while to start we also were not rushed out. Perhaps if we had gotten there at 5 then I suppose we might have been moved along some, since restaurants need to get some turnover at the peak hours, we were happy to offer some well rewarded patience, which was reciprocated with polite, warm, service and great food. This is a regular place for locals who know what they like. It is well worth putting some effort in to explore the various foods and drinks offered, as they were all exceptional. So, I must give it 5 stars. The food is fantastic, the atmosphere is unique and actually stunning, especially during daylight where you are overlooking the Hudson and into the mountains across the river.
