8/11/23 This was my first visit to Fuoco Pizza and not likely to be my last. I'd been intending to try their style of pizza for a while, and decided today was as good a time as any. Reviews are very positive, but so were those of my disastrous experience at a pizza shop a hundred yards west of here yesterday. Fortunately, this place lived up to their advance billing. But enough background. On to the nitty gritty of this review. I walked in from the back entrance (there's one in the front also), and there were about six tables capable of accommoding a max of about 25 patrons along with a couple of tables outdoors on the sidewalk. This is another order at the counter and they deliver your food to your table. No ATM needed here. They accept credit/debit cards. I walked up to the counter and was greeted by a nice, friendly young woman. She took my order of a small (12") pizza with onions, mushrooms, bacon, and extra sausage. I picked out my liter of Foxon Park Birch Beer and sat at a table, striking up a delightful conversation with the folks seated at the next table, very close by. We discussed the merits of various pizza styles and pizza joints until my pizza came to the table steaming hot from their coal fired oven. A very thin crust that had a good crunch and chew. It's a New York style, not New Haven style, so the outside edges of the crust were as thin as the rest of it. Excellent crust, but I prefer a bit of bulk around the perimeter. It's just what I'm used to. The sauce they use is sweet and just the right amount. All the toppings were generous, flavorful, and not burnt, despite the extreme temperature of that coal fired oven. One star knocked off for the thin edge crust, but that's how they make their pies. Otherwise a sensational pizza! read more

New pizza place in a town with 7 others (maybe more). I have to say upfront that for me, it's a better pie than all the others in town. On the local community boards there is talk about comparisons to "New Haven Pizza". More accurately, it would be similar to Pepe's and Sally's. As it says on the box, it's coal fired Apizza. Is it similar? Yes. The crust chews very much the same. The sauce is similar in that it's sweet, but not as sweet. The pie I got tonight was eggplant. There's no comparison to Pepe's or Sally's. Because Pepe's and Sally's don't have eggplant! The eggplant was very tasty, a bit too thin which causes it to lose any meatiness in some pieces. I still prefer "New Haven" but it's a very close 2nd and much closer to home! I always prefer supporting my town's local businesses if possible and on par. According to their Facebook page, they just served their 1,000th customer. Not bad for being open just about a week. They have a great future for sure. I am looking forward to trying the Margherita pizza next. The place is so popular right now that they start taking calls for evening deliver upon opening. I called at 7 and I had a ready time of 9. With Covid rules in place, you drive up, open your trunk and they place it in. Very easy and non-contact. However, they do make you sign the receipt if you gave a card on the phone. So, not non-contact really. I arrived at 9:00 and the pizza was placed in my trunk at 9:05. The restaurant itself looks very nice from the outside. I don't think they're allowing anyone in, yet. Very well designed and appointed. I posted pics of the pizza. I would've posted a menu but they didn't give me one. We've ordered take-out pizza from Fuoco Apizza 3 times over the past couple of months and we LOVE it. This is the way New Haven style pizza should be. Other area pizza spots have lost much of the magic my wife and I enjoyed over the years. It's becoming very difficult to find consistency and high quality pizza. Fuoco Apizza so far has proven theirs is the real deal. Fuoco Apizza is now our absolute favorite, unless we happen to be in New Haven where our choice is Sally's. :) read more

Another pizzeria that I've heard such good things about and had to try. It lives up to the hype . Coal fired oven turned out a pretty much perfect pizza IMO. Flavorful sauce , nice melty cheese, just the right amount of char. We were here yesterday 8/4/23 and we plan to put this location on our pizzeria rotation . The seating area is bigger than Lunas' but not "restaurant sized" though ample enough to be comfortable . The person taking our order was pleasant and helpful and the pizza came out quickly. My cousin and I drove up from norwalk and heard good things here. It didn't disappoint us. The mentor was a 8.5 , the margarita pizza little oily but it was dam good 8.3 and fajita is 7.9. I recommend this place to anyone who goes. read more

Love coal fired oven pizza so my wife and I drove 30 minutes to Fuoco on National Pizza Day. Very small dining room with inly 5 tables but mid week lunch not a problem getting seated. Ordered large 1/2 Sausage and 1/2 Fresh mushroom. And a bottle of local cola. The pizza was fantastic. Dough was thin and tasty. Crust just the right amount of burnt to get that coal oven taste. Perfect amount of sauce and cheese. Toppings were great. Sausage my favorite. George the owner and his son were friendly and fun. Out if my local area but absolutely on the list to go back and try a specialty pie. read more

I would DEFINITELY recommend Fuoco Apizza! Their pizza ranks right up there with, maybe even exceeds New Haven pizza establishments! The char is perfect, the crust is crispy and sauce to cheese ratio is spot on! The pepperoni is perfect cupped and cradles the oils from cooking which adds to the overall flavor. These guys know what they are doing! Their passion shows through in their cooking. Their staff are always kind and respectful and the owner is amazing! The modern rustic style is aesthetically pleasing. An additional plus is that the owner is a metal head who loves the band All That Remains, who has also visited Fuoco. Thin crust with the most spectacular char! Our first time here and we'll definitely be regulars! We knew there wasn't many tables and had every intention of eating in the car. A table opened just as our pizza was ready so we grabbed it. With only about 6 tables in the place, you inevitably end up talking to each other which was pretty cool. The owner comes out whenever possible to talk, clear tables, deliver orders etc. This is an added bonus to see that kind of hustle and service. The pizza comes with char which we LOVE. If you're not a fan, you could ask for no char, but I'll never understand why!! We ordered the small and they came loaded with toppings. They don't skimp! The table next to us waited a bit for one of their pies. The owner delivered a large which was the biggest large we've ever seen! He then apologized for the delay and said the chef felt the original one came out with too much char! I legit wanted to ask for their rejected pie to go! No such thing as too much char! The crust is thin and crisp, including the middle. We're looking forward to coming back! read more

The dining room is tight, but I think most people get takeout. We ate in, which was fine. It's mostly self serve in the dining room, another thing I have no problem with. The pizza was absolutely fabulous. High temperature bake was evident with the chewy crust. The tomatoes are delicious, and overall, Fuoco is a winner. read more

Best pizza I've had in the United States. I want to qualify this by saying I grew up in (and, as an adult with a family, have returned to) the New Haven area. So I've spent much of my life absolutely spoiled by great pizza. I've also been to Italy nearly a dozen times, and have eaten a terrifying amount of pizza on every trip. So I have a pretty decent sample size to draw from. Even in the context of New Haven apizza, Fuoco is special. It might be the most aesthetically "beautiful" pie I've ever seen--perfectly singed, slightly asymmetrical, beautiful depth of color and texture. It's art. I literally gasped when our pies came out. And the coal-fired oven taste is exactly what you dream about when you think "brick oven pizza." You taste the char, but it complements and doesn't overwhelm the tangy sauce and savory crisp. The crust feels suitably robust, but in perfect harmony with the toppings. I'm not sure how old this particular oven is, but it has an "old" taste (which is ultimately what the goal is with brick ovens). A lot of the Great New Haven Apizza places--the Wooster St. giants, Modern, even Bar (which itself is hugely underrated)--don't have to push super hard to refine and improve. They've done the work, they've gotten the notoriety. Fuoco tastes like the next generation of New Haven apizza. It tastes like the past, and it tastes like the future. If you are anywhere within an hour of Cheshire, and you are a pizza fan, you should consider it urgent and important to check it out. Also FWIW the owner is extremely kind and humble, the staff is attentive and quick (and all look really happy to be there, which makes me think they are treated with respect), and the building is right in the middle of town but feels nice and quiet, with a sweet little patio out front. But at the end of the day, a pizzeria is judged by what they do with the classic foundational elements of pizza: dough, acid, heat. Fuoco knocks all three of those things out of the park. Fuoco is now part of my top 5 pizza spots in CT. We decided to try Fuoco for the first time over the weekend and were completely blown away. The spot itself is small, with a handful of tables inside and a few tables outside if you're dining in. On a Friday night, it was about a 20 min. wait for a table - not bad at all. We ordered a pepperoni/onion pie along with a traditional cheese pie and wow - better than I was expecting. You open the box and smell an amazing garlic aroma, ricotta is so creamy, with mozzarella, spinach and tomatoes. We tried the New Haven style plain pie (of course), and a regular cheese - both were delicious! They often run weekday specials, so make sure you sign up for their text messages. Usually it's a pizza + appetizer or dessert deal, but the day we ordered they had a BOGO deal: but one large specialty pizza, get a large cheese free. Two 'zas for ~$18 :) Service was quick, super friendly, and efficient - when calling for takeout, I received a text that my order was received, and another text when it was ready to be picked up. This is a solid new pizza place in town! I ordered The New Haven (a specialty pie) at 6:30 and was told that it'd be ready for pickup at 7:30. The New Haven is made up of crushed Italian tomatoes, garlic, oregano, olive oil, and pecorino cheese. A large is $16 and a small is $11--pretty reasonable prices. It was a nice surprise that I didn't even have to get out of my car to get the order. Over the phone, they ask what kind of car you're driving so that they can bring out your pizza ASAP. My only complaint is that some parts of the crust were incredibly burnt. I'm not a big crust person, though, so this wasn't a dealbreaker. As long as this doesn't happen again in the future, I have a feeling Fuoco will be one of my new favorite pizza places in Cheshire! read more

Pizza is good. Really good. High hydration dough, nice leoparding on the bottom, perfect N'Haven char on the edges. Coal fire is hotter and drier than wood, you can tell by the way the dough comes out. As an avid pizza geek, this place is probably in the top 10 pizzas I've eaten in CT. When explaining this place to a friend, I said "it's Sally's, without the line". That's no joke. I always say that your odds for getting good pizza goes up when they sell Foxon Park. Approaching the counter, the smell of the pizza and a fridge full of gassossa and birch beer gave me tingles. I liked its thick bacon, but they could have gone a lighter on the sauce in my opinion. The flavors spoke for themselves! The curbside pickup process was very easy - always a plus!
