While checking out The Foundry, we stopped at Steve's Meltdown and decided to try their $30 grilled…read morecheese flight, which came with four half sandwiches featuring some of their top grilled cheeses. This was such a fun way to try several different combinations without having to commit to just one, and honestly, all four were the bomb.
The Forever Young was the classic of the bunch, with Colby, American, and mozzarella on sourdough. Simple, cheesy, and delicious. It was supposed to be served with marinara, but unfortunately, we didn't receive any of the dipping sauces with our flight.
The War Figs was probably my favorite. It had fig jam, goat cheese, white cheddar, balsamic, and bacon on sourdough. The sweet and savory combination was so good that I could have easily eaten an entire sandwich of this one.
The Blackberry Beret was the most surprising combination, with blackberry jam, pesto, goat cheese, and mozzarella. I wasn't sure what to expect from blackberry and pesto together, but I really liked it. My husband isn't a huge goat cheese fan, so this one wasn't as much his thing, but I thought it worked really well.
Finally, the Ranch Against the Machine had jalapeño cream cheese, white cheddar, chicken, bacon, ranch, and tomato. It had a little kick to it and was really flavorful.
Just as importantly, they absolutely nailed the basics of a good grilled cheese. Every sandwich was served piping hot, and the sourdough was perfectly crispy and buttery. Grilled cheese can easily become too greasy or soggy, especially with this many different fillings, but that wasn't the case with any of these. The bread and texture were on point across the entire flight.
Overall, the grilled cheese flight was a great experience and a fun choice if you want to sample several of their sandwiches. I also loved the personality of the place, including the "Gouda vibes only" sign on their screen, which I immediately had to send to my son because he loves making grilled cheese with Gouda.
