We dined at Guiso Latin Fusion in Healdsburg last night. Chef and owner, Carlos, is amazing! He once opened the restaurant for us and our friends, Grant & Yoka, when they had mistakenly taken our reservation on a day they were closed. We showed up, they realized the error, and he graciously opened the doors and cooked up a storm for us. His cuisine is so flavorful, done with finesse and a true passion for cookery. If you're in the area, I would highly recommend Guiso.

I found a recommendation for this cute little restaurant on Yelp, and it was a great meal. I made a reservation through OpenTable, and when I was making it, I saw they had an option to do the fixed price menu ($85 for four courses), so we picked that. When we got there, we were seated outside. The inside area looked a little small, but the outside area was very lovely. They had heating lamps out there, but not turned on, so I am sure it would be nice if it was colder outside. The four-course fixed price menu doesn't seem to be a set thing, but kind of what the chef wants to make. There were three of us, and we got something different at each course, except the salads were the same. The lamb kebabs I got were pretty outstanding, and the shrimp was spicy! We really enjoyed the appetizer course, especially the chicken tinga tostada. The mini-cubanos were good as well. The three desserts were all really interesting; my favorite was the flan. This whole meal was really delicious and unique. I would definitely return. I would note they don't have a cocktail menu but a selection of wines and beers.

Our party of 9 was seated in the outdoor heated patio, and it was a very pleasant evening so we were comfortable throughout the meal. The waiter was very personable and efficient, and Chef/Owner Carlos came by to ask how everything was as well. We shared a good variety of dishes: pupusas, chicken tostadas, smashed burgers, spicy sauteed prawns, chile rellenos, caribbean version of paella, cheesecake, chocolate flan, and wine! What a feast. Each dish was steeped with Salvadorian flavors and spices, and expertly prepared (nothing was dry or tough or raw or bland in the slightest). The only note is that the tasty pupusa appetizers were somewhat overpriced. I have been to downtown Healdsburg a few times now, and can recommend Guiso if you're looking for a well-prepared meal with high quality ingredients and some latin/caribbean flair and creativity.

I was so excited to try this as it was on my list of places to try. My husband and I went on laat minute date night and decided to give Guiso a try. The place was really small and LOUD! It was hard to have a conversation with someone as I felt like everyone was yelling to tell their story. Food - we ordered Pupusas (1 of each flavor) and it was very tasty. Brussels sprouts, was so good the sweet and spicy flavor was a great combination. Paella was good, it could use a bit more seasoning and rice. It looks like Cioppino, it was a bit soupy than Paella I'm used to. Cachapa, the corn pancake was really delicious but steak was too little. Because the place is TOO SMALL, they have a very little kitchen they have to bring out your food one at a time. So, if you have multiple people in your group and your ordered appetizers, your food won't come out all at the same time. By the time we got my food I was full, because my husband and I keep sharing the food they're bringing out. Most of the food we ordered was pretty good, I would like to come back and try out other food on the menu! If you don't like cramped and loud place, this is not for you. Sitting outside is not always an option especially during cold nights.

Thank you Esteban for the amazing service and thank you Guiso staff for the amazing food! We shared the ensalada, papusas, and camarones borrachos. Great to come back and looking forward to coming again!

Beautiful, creative dishes. Reinterpretation of classic Salvadorian dishes. All of the flavors were unique and awesome. It's definitely more on the tapas side in terms of portions, but worth it. The quesadillita for dessert was very unique and delicious!

Wowza!! This lace rocks my gluten free world! Fabulous flavors, robust dishes, local support with their wine list, winner all around! I can't believe I've slept on this beautiful restaurant for too long. We had the chicken tostadas, fish tacos, and beef skewers- all were delicious and flavor forward with meats executed perfectly. Inside is small, so we'd planned ahead with a reservation and I'm glad we did because it was cozy inside and I preferred that versus the patio seating which is also an option. I just couldn't believe how much of the menu is naturally gluten free and there are so many delicious options to consider. Truly a gem and pleasure for folks like myself that have restrictions with food but can feel "normal" in ordering so many options off the menu. I loved the open kitchen to see the action, that's always a nice touch, in my humble opinion.

First of all, the staff that served us were great, very friendly and attentive. This is 3 stars review is mainly for the reservation experience and the food was mediocre. Reservation experience: called and confirmed table for 7 (4 adults and 3 children), staff confirmed then call back to ask for a credit card but I was driving while he called so I said will call back. We'll, I forgot to call back and when we arrived for our reservation time, there was no table reserved for our party indoor, while they assembled our table outdoor, it was cold and with 3 kids, not pleasant. Food: Nothing special or memorable, by the time the food come out, it was luke warm and not noteworthy, the most disappointing is their bread, for $7 of bread, I was hoping it to be soft and delicious, yet, it was just plain and a bit grainy. I had high hopes for a 4.7 rating restaurant on Yelp, but this one is definitely not worth it and won't be coming back again.

Guiso is a nice little place in a fantastic setting--right on Healdsburgs main square! Perfect for the Hbg Jazz Festival or Tues Nights (read, byob and food w chairs and blankets, but set them out early (cannot dump n run n return!) and leave one person until show time!). The salad was amazing and brochette very good. Very very small venue and a bit loud for old ears! Great service!

Guiso is an Excellent choice for pre-show dinner as it is adjacent to Raven Performing Art Center. Shared pupusas & paella (with Rose). Recommend reservation as indoor seats about 18 + outdoor seating. Friendly service. They close @ 9 but suggested they offer dessert service on show nights, we really wanted to try the flan... next time!

The food is always good! Came to try out the Chef's tasting menu at $85 for Mother's Day and was disappointed. Thought we might try out some new dishes off menu but that wasn't the case and didn't get what we wanted from the menu. It would have been better to order off the menu for sure. It also didn't help that we didn't get the "family " server so the experience wasn't as great. We did give our waiter what dishes we would prefer to try but he only served 2 of four. It was also a bit discouraging to know that the limited menu has not changed much in 3 years. But the food is wonderful and tasty!

    Lexi G.

Absolutely well deserved Michelin Star! Food was outstanding not only beautiful but delicious. The service was great, extremely welcoming, very knowledgeable on the menu. I cannot wait to go back.

    Can you bring a dog?

You might be able to sit outside with a dog… they have outdoor seating (it’s covered, to help with heat, etc.)

Do they cater (or just deliver) for small groups? (i.e. 10 people)

Due to staffing challenges we currently are not offering catering services: you can order take out through OpenTable. Thanks for your inquiry.

    Is there a corkage fee?

Yes, I don't remember the amount, but it wasn't very high

    Do you take reservations?

Hi, thanks for contacting us; yes you can book your reservation through our website: www.guisolatinfusion.com

Do they only have wine for alcoholic beverages?

Wine and beer is the only alcohol. No stiff drinks. Coffee & various teas.

Are there gluten free options or can certain things on the menu be made gluten free?

I safely ate gluten free there. They didn't have a specific menu, but the waiter worked with the chef to verify that my choices were safe. The experience was efficient and the food was delicious!

The arroz (rice) was especially delicious with a perfect amount of spice. We also got a couple of drinks, which were strong but balanced and tasted how they were described in the menu. I also was very curious about Peruvian ceviche. Mexican-style ceviche is one of my favorite things and I make it a lot, but had never had Peruvian ceviche. It seemed like the perfect lunch. The restaurant is really beautiful inside, with wood and stone and earthy colors. The place settings are all very nice handcrafted ceramics and the bar was a giant wooden fancy installation. During the day it was very quiet, but with all the hard surfaces, I imagine it was pretty boisterous at night. I told the waitperson that I was interested in ceviche and whether he had recommendations. He pointed me towards the ceviche carretillero (cart ceviche), which he said also had their house ceviche, fried calamari, fried yucca and plaintains and that it would be more substantial for a lunch. I later looked up "ceviche carretillero" and found out that in Peru, a street food was ceviche topped with crunch fried calamari and that it was very popular and served out of carts! The preparation was lovely, with a pile of their fish of the day, which was a type of cod, in the middle with shredded onions on top. surrounding it was fried calamari, sweet potato, yucca, and extremely thin and beautifully fried plaintain strips. He offered to pour the small pitcher of Sangre de tigre on top and I agreed. Sangre de tigre is the marinade used to "cook" the fish. It is different than Mexican ceviche!! While not spicy with chiles, it was spicy with ginger and I don't know what else. It hits your throat, not your palate, which I thought was so interesting. I would not say it was "hot spicy", but I did cough a bit when I swallowed! It was very good! The fish was cut into fairly big rough pieces so you could really taste it. The calamari was excellent, as were the yucca and plaintain. I used the plaintain like I would fried tortillas in a Mexican ceviche, and using it almost like a spoon. I don't know if that was proper or not, but it worked for me! The Yucca would have been perfect with some mojo sauce, but that's a Cuban thing. I wonder if their is a comparable Peruvian sauce? The portion was generous and perfect for someone who came to lunch hungry. I really enjoyed my little middle of the day splurge lunch!

I've eaten at Colombian restaurants all over Queens NY, Florida, and throughout Colombia, so I have a lot to compare it to. This was, unfortunately, the most disappointing experience we've had. The service made us feel unwelcome from the moment we walked in. The owners barely acknowledged us, and even though they speak Spanish, they spoke English to my Spanish-speaking husband. No one explained the menu or offered any recommendations, which made the experience feel cold and uninviting. As for the food, the bandeja paisa was very disappointing. There was essentially no carne asada, and the chicharrón was almost entirely fat with very little meat. What surprised me the most was the lack of hospitality. In my experience, Colombian restaurants are usually incredibly warm and welcoming. The staff often greet you warmly, offer recommendations, and make you feel appreciated as a customer. I've honestly never had an experience like this at any Colombian restaurant. The atmosphere here felt cold and impersonal, more like eating in a hospital cafeteria than a family-owned Colombian restaurant. I genuinely wanted this restaurant to be great and was excited to support a local Colombian business, but between the unfriendly service, the lack of hospitality, and the disappointing food, we won't be returning.
