Please reconsider making the same recipes sugi had. You don't use real chilies, thai or habanero with the spicy tuna #2. When a restaurant has excellent recipes everyone is happy with, don't change them, as you will continue to lose business. Today was my last time going there, as the recipes are not the same, and sugi took the time to teach you how to make the recipes that made him very famous. We were big fans of the old Hakata for over 22 years. When the business sold, we tried it, but were disappointed. Figuring they needed time to get established, we waited a couple of months and tried the restaurant again. This is what we found: -- Same menu, but the dishes aren't nearly as good. -- Grasped my chair bottoms in order to scoot my chair closer to the table. My hands came up sticky with some substance that felt like honey. -- Went to the restroom to wash my hands and there was a poo on the floor of the women's bathroom! I had to notify some staff about it. -- The floor of the hallway leading to the restrooms was sticky under my shoes. --The carpet in the dining room was filthy. --There were hardly any customers at a time of day that was normally very busy. We could hardly eat our food at that point. We paid and left. It is a shame that the new owners may kill this formerly wonderful restaurant. They need to get their act together. read more

Run by a very capable Japanese-American family, the lunch here was really great. Reasonably priced, good service, and great food. We ordered lunch items, so I can't really speak to the sushi, but the bento box at $9.50 was a great deal. I like that it included an udon, and the gyoza was in a great little sauce. I've never heard of a Japanese champon before, but it sounded like a spicy Korean-Chinese soup I know so I tried it. It was nothing like what I was expecting, but it was really tasty. Good enough that I could see myself craving this again. If only it was closer to Seattle... In general, great service, good tea, and I even liked the ice cream to wrap up the meal. Service was excruciatingly slow; it took over an hour for my family to get food with no explanation and no apologies. And, the place was not busy and we saw the cooks chatting for at least 30 minutes. When we did get food, it trickled out meaning the first person got their meal and 27 minutes later the last person got their meal. And then it wasn't even good! Would never return. read more

We had a reservation for 4 people at 12:30. Were seated promptly, waited twenty minutes to order and another 60 minutes for the sushi and bento box to be served to our table. The restaurant looked different (less clutter, and fresh paint) than previous numerous visits (which were absolutely amazing from a food and service standpoint). We ordered 2 dinners for takeaway. We ordered the Hakata bento and the sashimi/ temporal combo, each about $20. Our meals were ready in about 20 minutes, brought to our car by friendly staff. The tempura in each meal consisted of only 2 small and limp shrimp, a small floret of broccoli, a bit of onion, a soggy zucchini. As we picked up right on time and opened the boxes as soon as delivered we were surprised at the condition of the tempura. The sashimi was pretty plentiful and fresh. Salad in the bento was tiny, just one small corner of the takeout box. Underwhelmed . Overall meh. read more

Best sushi in the Seattle area. I lived in Japan for 4 years and my wife is Japanese and their sushi is perfect. Don't pay attention to the reviews talking about the service or small portions. This is not American sushi this is Japanese. That means the Nigiri is not the size of your hand. It is the same size as it is in any sushi place in Japan. These people are Japanese. In Japan servers don't come to your table ever 5 min to check on you, If you want something you flag them down and ask. During peak rush hour they only had 3 waitresses on staff, A wait for service is understandable. For the reviews saying the waitress didn't have enthusiasm. Anyone who has been to Japan would understand why and is not a reason to discount them. You want a crazy happy server go to Applebee's l, if you want good sushi come here. I want to start by saying that the sushi and shashimi I had was delicious. I will definitely be back just for those two items. I ordered the Spicy Tuna Roll #2 and the salmon and shashimi. The salmon was dry and overcooked which was disappointing. I love salmon when it is cooked well. The sperate parts of the course come in little plates and bowls which makes the table crowded but if you are like me and don't like foods to touch, then it's perfect. Service wise, the service was slow. I ordered water and I had to ask for it three separate times. Most times this would piss me off but because they provide tea when you sit down so maybe the tea is to make up for the slow service. The restaurant itself is dark, and could use a good carpet cleaning. The tables are COVID compliant though and have separators. I have been told that they had table separators before COVID for privacy. read more

I like quality ingredients put together with care. Hakata comes through every time. Whether it's beautiful and fresh nigiri, warm and delicious baked mussels, or the occasional special roll just for sitting at the sushi bar, it's always done well. I had no idea if I'd be able to find quality sushi after moving outside of Seattle but I have and I'm delighted. Great: OMG Roll - tasty, almost dessert-like Baked mussels - absolutely delicious Nigiri - fresh fish, perfect rice consistency and ratio Warm sake - perfect temperature and good quality Looking forward to: Hamachi kama - Always order too much and never get around to trying it. I felt a great disappointment as I left Hakata, and that was because I didn't know about it until I had decided to leave Washington state. But I will definitely be back many times before I go. When I first arrived I noted the relatively small sushi menu, a very good sign. When you go to any restaurant that serves any cuisine and they have pages and pages of dishes you know your best hope is mediocrity because they are just slapping things together without care in the kitchen. When a chef truly cares about his offerings and has honed his craft to perfection, the menu is small and carefully chosen. With sushi, the most important and telling thing is the rice; Chef Sugi-san's rice is absolutely perfect. Prepared with care, the sushi rice flavour is subtle and the texture absolutely on point. I cannot recall when I have had better. I ate past the point when I was full and wanted to keep going even though I couldn't. Everything about the sushi at Hakata was...well, I'm running out of superlatives to use but it was absolutely fantastic. I can't praise it highly enough. Chef Sugi-san's sushi isn't just great sushi for Kitsap county, it's great sushi anywhere. The fish was fresh and tasty. The spider rolls were as gorgeous to look at as they were to eat. The nigiri were some of the best I've ever had. Another thing I noticed and was greatly amused by is that Chef Sugi-san doesn't seem to care much about presentation and that's not something I've thought about much before. When you go to other, inferior sushi restaurants you often will get beautifully and technically prepared maki that fall flat when it comes to flavour and quality. The maki I ate at Hakata were sometimes not the same size compared to one another, some were plopped down indecorously in my board, there was no flair or artifice, no garnish or attempts to pretty up the food...it was just amazing sushi that doesn't need to hide behind good looks, it stands on its own. It takes confidence in one's skills to serve sushi that way and Chef Sugi-san has every right to be confident. His sushi is, and perhaps this is the highest compliment I can pay, absolutely PROPER sushi and even though I would have liked to have discovered Hakata sooner, I'm grateful that I did. This is a casual spot for lunch which has a good selection of sushi and rolls for an affordable price. Friendly service and fairly quick despite the lunch rush. I ordered the spicy tuna roll to start which came in 6 pieces for $5.50. It was delicious despite somewhat falling apart. They could improve their presentation but the taste delivers. For the main entree I had the tempura prawns and vegetables which comes with rice, miso soup and marinated bean sprouts. Tea is complimentary. My companion had the tonkatsu donburi, cooked perfectly. I was so excited to try this place out, one of my close friends said it was amazing she's gone for years. I grew up on east coast in a restaurant family so this was really going to be a treat. I called yesterday and spoke to a very nice young woman who suggested that if we were coming on Friday for dinner we should make a reservation, even thought I was concerned since they said they were only open until 8 I figured it was worth it even for a short evening. I confirmed with my friend who has to drive up from an hour plus away what time and called back today. A completely different older person with a very strong accent promptly told me: "Usually we don't take reservations after 5:30 because it's busy..." I was actually speechless for a moment, and just to clarify said I had called yesterday and was told to call back today to make a reservation, we can't make one for 6:30 is what you are saying now?" She repeated the same sentence. I asked again mentioning my friend had to drive a long way and we had to work until 5:30 so we couldn't make it to an early seating she just, said well you can come but we don't usually take reservations after 5:30. Here I am trying to support a local business and following normal restaurant protocol ( when your place is busy that is why you TAKE reservations) and was basically told to just take my chances and show up. Despite them closing 1 hr 30 minutes later so if there was a wait it would be no deal. VERY surprised at that kind of response considering so many business are trying to make ends meet. May try it some time in the future on my own but after that I highly doubt it. Their sushi maker may be amazing but that front end staff turning people's money away isn't going to help during a pandemic. read more

My kids had chicken and beef teriyaki and I ordered Sukiyaki. It was hands down THE BEST Sukiyaki I ever had!!! Granted the only other one I ever tried was from Onami, but still... I have been going here for years. I highly recommend the Spicy Tuna #2 and the Udon!! The Spicy Tuna #2 is a twist on the traditional spicy tuna. It has garlic and chunks of onion. It is spicy in more of a radishy, onion way, rather than spice you would normally get. I think the Spicy Tuna #2 may be my favorite sushi roll ever! The people here are always nice, and usually pretty quick. Although, it can get VERY busy on a Friday or Saturday night around dinner time. They are also very quick with take-out. My only recommendations in order to improve the restaurant would be to switch the tea (not my favorite, but I still drink it,) and to maybe have a bit more sushi rolls to choose from. I normally don't make reviews based on bad service but it sounds like from my experience and the other reviews that the new owners are just lazy. Sushi is expensive. It's easy to pass by, but definitely worth the visit! I've been here several times over about a decade now and the service and food has never failed to be amazing. The sushi is always great and the bentos are the perfect size! I always get the tea (which is served when you sit down), and it always hits the spot. My last review of this restaurant was back in 2015 when it was truly a Japanese restaurant. When Sugi sold it a few months ago I knew better than to expect much and decided not to bother. Today I decided to try Tonkotsu Ramen take out for lunch. While picking it up I was disappointed that someone had removed everything representing Japanese and was faced with 4 bare walls. When I got the "Tonkotsu Ramen" home I was truly angered by the fact that I had paid for a bowl of noodles and little more. It didn't smell, look, or taste anything like it was supposed to?? So i just got my bill and paid and tipped generously. I wasn't mad. The place was packed. But that's the only thing that threw me off. Other then that the bento box is always good. they have very few veggie friendly options...in fact, the menu itself ois pretty limited. Amongst the options...you got fish, fish, some chicken, fish, fish and veggies. Lame for me, but my pescatarian friend seemed to enjoy it. Soo...the menu pretty much caters to those eat fish. Even the agedashi tofu has bonito(fish) flakes garnishing it. I ordered the veggie roll(4pc) which was huge. Not a huge amount, but awkwardly big pieces. When it comes to sushi...bite size is best...it's kinda silly to try and eat it in more then one bite...it falls apart on your lap/table/plate. Which is pretty much what happened. The service was good and the green tea was excellent...we went through two decent sized pots. The food itself was ok, if not a bit over priced.
