Surprisingly, solid hand roll experience. It is not a 5 star restaurant and it's not Japan. That being said, it is a solid causal dining spot. We had the 5 hand roll meal and the uni roll. All were good with the nice touch of crunchy nori (seaweed). Service was great. We will definitely be stopping by often. Missed the pictures because I was so eager to eat. read more

Located inside of Tokyo central in West Covina. I was so excited to try this spot. The rice is different from most hand roll spots I've tried. It's made of Red and black vinegar so it gives it a little color. The fish is fresh, of course. I'd be very surprised if it wasn't since Tokyo central is known for fresh catches. No nonsense, low entry level hand roll bar located inside of Tokyo Central. Man, I remember when that nook was first used to host cooking classes and Pocky deco for Valentine's Day and when it was the anime/kawaii corner shop. Now it's the Hand Roll Factory and I hope it does well as it's a source to dine in at Tokyo Central, something I feel that this location is severely lacking in comparison to the other locations (I know space is an issue but still). That ramen shop that they had inside didn't last, so fingers crossed. I came here on a Monday afternoon and I think the other party before me ordered to go, so I was seated immediately and solo dined my entire time there. No other people pulled up, but I also hilariously ate my hand rolls pretty face due to my big back nature. Didn't know that they were supposed to come out one by one as you eat them, so you learn something new everyday. There's only 12 seats here since it's a bar, so it might be more fisted during busier times, but I believe they have a buzzer system. Currently, they didn't have their omakase ready to order, but I was informed that it was going to be available soon by the gentleman working there. Instead, I got the 5 Hand Roll and the hand rolls it came with were: 1) Bluefin Tuna: -I made this spicy (add an extra $1). -Delicious start, nice and fatty but and some firmness to it with a kick from the spiciness. 2) Yellowtail: -My friend who used to work at a sushi restaurant says that a great pH test for freshness of fish is to try their yellowtail and this didn't disappoint. 3) Salmon: -I made this spicy (add an extra $1), -Nice texture to it, but this was definitely one that was a bit saltier than the others, not sure because of the spicy sauce and the seasoning of the rice, but it definitely didn't need to be dipped into soy sauce and wasabi. Perfectly fine on its own. 4) Scallop: -Small scallop bits in the hand roll, nicely moist and not dry. This had some sauce in it too, good balance of creamy and umami. 5) Crab: -This is a popular one and I can see why. One of my favorites of the set too. -Deliciously fresh without tasting too fishy. Rich flavor with some saltiness to it. I'd get this again for sure. They put in a lot of effort and care into the preparation and the ingredients with the imported rice seasoned with their dark vinegar (mixed with rice and red vinegar) and they sear and toast the nori seaweed before creating the handrolls. Adds a slight smokiness and delicious crunch. Good stuff. I feel like with the dark vinegar and rice, it negated the need to use the soy sauce and wasabi. It can get a bit salty with that, so just keep that in mind. I'll come back for sure. Great balance of fanciness without too many bells and whistles attached. read more

Arrived early afternoon on a Friday. There were maybe 4 other customers at the time and still plenty of seats. At the time we went, they were offering free miso soup with a $20+ purchase. My partner and I each selected the 6 piece course and ok, we agreed this place was not bad at all for being inside a market. The seaweed is even toasted before using to make the rolls, which helped the seaweed not get soft as quick. Will be back! read more

Was excited to see the Hand Roll Factory finally open up at this location! My husband and I stopped by for a quick lunch when they opened at 11 so we didn't worry about a wait but was told there is a buzzer system for the busier hours. My husband went with the 5 rolls set and I went with the 4 roll and added the chutoro roll. Before i dive into the food i wanted to give Emilio a special shout of for his hospitality! It was great speaking with him while he made our rolls. We enjoyed the quality of the fish and I loved the season rice. I didn't really need to add soy sauce! This is a nice small, simple hand roll spot and is a great addition to West Co's Tokyo Central. We overall enjoyed our meal but only thing I will note is I wished there was slightly more protein added in the rolls. I've been to other handroll spots that charge the same but had more fish inside and was still the same price as what they charged here. But what's also great is you can just get your hand roll filling from here then walk around the market to try their hot food items too! Nonetheless this won't stop us from coming back as we still enjoyed everything, just wish there was slightly more protein per roll. read more

My first time trying this place! I love Japanese food so I was super excited that this is inside of Tokyo Central! I had the five roll set plus one extra Tuna chu toro. I forgot to take pictures for some of the rolls because I was too hungry. First of all, 5 stars for the Chef. He was friendly, patient and attentive. He was also very detailed with preparing each hand rolls. The five rolls included Salmon, bluefin tuna, scallop, crab, and yellowtail. My favorite was the scallop. The chu toro was pretty good too. The fish quality was about a 4 stars quality to me. I eat a lot of sushi overtime so I know what a good quality sushi place tastes like. For the price they charge here with such a small sized hand-roll, I expected better quality fish. I also didn't feel very full even after the 6 hand rolls due to the small sizes. I am not someone who eats a lot in general. So it's a pretty pricey place but the quality isn't up to a high quality sushi restaurant. However, I do love the fresh crunchy seaweed paper and the warm rice. The ambiance is clean and comfortable and intimate with the chef right in front of us. Fun to watch the making process! It was a nice experience overall. But I probably wont be back anytime soon. read more

This new spot inside Tokyo Central Market hasn't officially opened yet. As of this visit, they were still in training, with their grand opening scheduled for Wednesday, April 8th. The counter seats about 12 people, so if you plan to dine in, expect a wait. I wouldn't recommend coming with a large group, though they do offer takeout. Since everything here is hand rolls, it's mostly finger food, but you can use chopsticks if you prefer. The chefs prepare each roll right in front of you and place it on the counter for you to pick up yourself. Every roll is made one at a time to keep things fresh, and the quality really shows. I'm a medium‑sized person but I can definitely eat, and so far I've tried the bluefin spicy tuna (no photo), salmon, A5 wagyu, scallops, spicy salmon, bluefin chutoro, madai, and tamago. All of them were excellent. I really like the madai. Really refreshing with the mint leaf. I'd absolutely recommend trying this place, but since it's newly opened, patience is key. The chef I watched was trained by Japanese experts and paid close attention to detail with every roll, which made the experience even better. read more

Tucked away in Tokyo Central, you can find a handroll bar. This is a nice addition to our city as it gives a glimpse of what you'd experience in LA but don't have to drive out. Happened to go to here after the gym to see if it finally opened, to my surprise it was day 2 of soft opening. Initially got the set of 5, but I couldn't help but try more. One of the customers was raving about the Unagi and said she doesn't have to go all the way to Japan anymore. Although I've never been to Japan, I would definitely rank that as my top roll. The staff was really great at reccomending what to have based on my faves from the set. I was craving sushi and the hand rolls were fresh, simple, and perfect after a workout. Watching them make everything right in front of you made it even better. I already knew the prepackaged handrolls in the supermarket area were good, so it really comes as no surprise that the fresh ones taste even better! The little food bar is located on the left side of the supermarket when you enter. The bathrooms are located conveniently nearby. Not to be weird, but it smelled and looked really clean in there. I think that's worthy of praise in it of itself haha The employees here all seem so friendly and welcoming! They are also very quick! My friend and I got seated right away and got our drinks only moments later. The hot matcha tea went well with the 3 handroll meal set that I chose. I loved being able to see each of my rolls being made. Seeing all the steps made me have a renewed appreciation for how they are made. The employee helping us--Michelle--was so kind and thoughtful. She took extra care to prepare each roll in succession just as we were about to finish the one before. Having each one prepared like this ensured that they were each eaten at peak freshness. Although they were all good, I must admit that I loved the scallop handroll the most! Michelle was also kind enough to answer all my questions and recommend some rolls she thought we would like. I saw a lot of customers coming by to pick up some food to go. I think that's a great idea because you can get your grocery shopping done and have dinner ready before you get back in your car again! Fresh and good! Service is one on one if there is not much people or one assigned for every two. The 1st set is only 3pcs and not enough for me. The other sets are good but I don't want yellowtail. I wish there was a list we can choose from. When the sushi maker talks to you it's cool but just to each other is not and feels ignoring you per my husband. I don't like when people talk too much, the spit may fly into food. I especially like the service this one cute Asian girl, I wish I knew her name, she gives the just right service. Their rice is tasty, and an interesting hue, due to the vinegars they use. Came back today with the wife so she could try it. We eat at Kazu Nori/Sugarfish quite often so we have a good baseline. They had great food and atmosphere the prices are great for the quality and gave me light rice when I asked. Yoshi and Joe had the best service I have had at any restaurant. 10/10 read more
