I ordered the five hand roll set which consisted of bluefin tuna, yellow tail, salmon, scallops, and snow crab. They lightly toast the seaweed which gives it a nice roasted flavor. The rice is seasoned with red vinegar and is served room temperature, which allows for the flavor of the seafood to shine. All the seafood was fresh and tasty. Overall, the experience was excellent and I will definitely be coming back for more. read more

Shared parking lot with other businesses in the plaza with ample spaces. He was very personable and allowed used to even sample some of their spicy options. The bar can seat maybe 15+ people at a time. It's well kept and clean. We had just finished shopping and decided to give it a try. We chose our seats as it wasn't very busy. We ordered the 4 Hand Roll set. It included: -Bluefin Tuna -Yellowtail -Salmon -Crab Each of these rolls were delicious and the fish was definitely fresh. Our chef very personable and conversational. Hand Roll Factory is a newly opened restaurant (back in April), found inside Tokyo Central with bar seating available, making for an intimate setting. My husband and I ended up having dinner here towards the end of May, on a Thursday evening. We arrived around 6 pm and were greeted and able to pick from a handful of seats. We ended up choosing the following for our dining experience: 6 Hand Roll Set, $31 prior to tax- I decided to get the 6 hand roll set because I wanted to make sure that I did not leave hungry. This hand roll set comes with BlueFin Tuna, Yellowtail, Salmon, Scallop, Crab and Unagi. I really did enjoy all 6 of the rolls but my favorite was the scallop and crab. You also have the option of getting a spicy salmon and spicy yellowtail for an additional $1 each. But I don't eat spicy foods so I declined the offer. Everything was fresh and delicious. Omasake 5 Hand Roll, $28 prior to tax- My husband had some of the same rolls as myself but he also had a seared wagu beef roll with tamago. I do remember that he had another roll that was different from mine but I don't recall what that was. But my husband did enjoy his rolls. Miso Soup- Normally $3.50 each but during out visit, if you spend $25, then you are able to get a free bowl of miso, in which we both were able to have a bowl. It was nice to have a nice warm bowl of soup since it was a colder early evening on the day we came for dinner. Hot Water- we each had a cup of this and it was complementary. ----------------------------- (Total= $64.75 after tax, prior to up) The chef who made our hand rolls was very nice and made some light conversation (I am sorry that I did not get his name to mention him properly). He was telling us when they first opened there were a lot of challenges but they are doing much better now. He also told us that they did not have their liquor license yet and so we were not able to do a sake tasting. There was another couple that was also eating their meal when we arrived. I overhead the female tell the chef that she didn't think the 6 hand roll set would be enough food but was actually surprised that she was not hungry after finishing her last roll (she also had a bowl of miso soup like us as well). I have to agree that I was also surprised that I was okay with the amount of food I had. This made for a light dinner and because of the pace, it was good for the amount of food. First time trying the Hand Roll Factory, located inside the Tokyo Central Market in West Covina. We wanted to grab some hand rolls for a quick snack, and we were impressed by the quality. Tokyo Central Market explicitly advertises that the Hand Roll Factory exclusively uses premium Hitomebore rice imported from Japan for their sushi base. The fish was incredibly fresh, the Hitomebore sushi rice was perfectly warm and seasoned with their signature red vinegar blend, and the Ariake nori (seaweed) was freshly toasted right before serving, giving it an amazing, crispy crunch! The hand rolls themselves were absolutely delicious. My only minor critique is that the portion sizes are a bit small. No nonsense, low entry level hand roll bar located inside of Tokyo Central. Man, I remember when that nook was first used to host cooking classes and Pocky deco for Valentine's Day and when it was the anime/kawaii corner shop. Now it's the Hand Roll Factory and I hope it does well as it's a source to dine in at Tokyo Central, something I feel that this location is severely lacking in comparison to the other locations (I know space is an issue but still). That ramen shop that they had inside didn't last, so fingers crossed. I came here on a Monday afternoon and I think the other party before me ordered to go, so I was seated immediately and solo dined my entire time there. No other people pulled up, but I also hilariously ate my hand rolls pretty face due to my big back nature. Didn't know that they were supposed to come out one by one as you eat them, so you learn something new everyday. There's only 12 seats here since it's a bar, so it might be more fisted during busier times, but I believe they have a buzzer system. Currently, they didn't have their omakase ready to order, but I was informed that it was going to be available soon by the gentleman working there. Instead, I got the 5 Hand Roll and the hand rolls it came with were: 1) Bluefin Tuna: -I made this spicy (add an extra $1). -Delicious start, nice and fatty but and some firmness to it with a kick from the spiciness. 2) Yellowtail: -My friend who used to work at a sushi restaurant says that a great pH test for freshness of fish is to try their yellowtail and this didn't disappoint. 3) Salmon: -I made this spicy (add an extra $1), -Nice texture to it, but this was definitely one that was a bit saltier than the others, not sure because of the spicy sauce and the seasoning of the rice, but it definitely didn't need to be dipped into soy sauce and wasabi. Perfectly fine on its own. 4) Scallop: -Small scallop bits in the hand roll, nicely moist and not dry. This had some sauce in it too, good balance of creamy and umami. 5) Crab: -This is a popular one and I can see why. One of my favorites of the set too. -Deliciously fresh without tasting too fishy. Rich flavor with some saltiness to it. I'd get this again for sure. They put in a lot of effort and care into the preparation and the ingredients with the imported rice seasoned with their dark vinegar (mixed with rice and red vinegar) and they sear and toast the nori seaweed before creating the handrolls. Adds a slight smokiness and delicious crunch. Good stuff. I feel like with the dark vinegar and rice, it negated the need to use the soy sauce and wasabi. It can get a bit salty with that, so just keep that in mind. I'll come back for sure. Great balance of fanciness without too many bells and whistles attached. read more

My husband and I stopped by for a quick lunch when they opened at 11 so we didn't worry about a wait but was told there is a buzzer system for the busier hours. My husband went with the 5 rolls set and I went with the 4 roll and added the chutoro roll. Before i dive into the food i wanted to give Emilio a special shout of for his hospitality! It was great speaking with him while he made our rolls. We enjoyed the quality of the fish and I loved the season rice. I didn't really need to add soy sauce! This is a nice small, simple hand roll spot and is a great addition to West Co's Tokyo Central. We overall enjoyed our meal but only thing I will note is I wished there was slightly more protein added in the rolls. I've been to other handroll spots that charge the same but had more fish inside and was still the same price as what they charged here. But what's also great is you can just get your hand roll filling from here then walk around the market to try their hot food items too! This new spot inside Tokyo Central Market hasn't officially opened yet. As of this visit, they were still in training, with their grand opening scheduled for Wednesday, April 8th. The counter seats about 12 people, so if you plan to dine in, expect a wait. I wouldn't recommend coming with a large group, though they do offer takeout. Since everything here is hand rolls, it's mostly finger food, but you can use chopsticks if you prefer. The chefs prepare each roll right in front of you and place it on the counter for you to pick up yourself. Every roll is made one at a time to keep things fresh, and the quality really shows. I'm a medium‑sized person but I can definitely eat, and so far I've tried the bluefin spicy tuna (no photo), salmon, A5 wagyu, scallops, spicy salmon, bluefin chutoro, madai, and tamago. All of them were excellent. I really like the madai. Really refreshing with the mint leaf. I'd absolutely recommend trying this place, but since it's newly opened, patience is key. My first time trying this place! I love Japanese food so I was super excited that this is inside of Tokyo Central! I had the five roll set plus one extra Tuna chu toro. I forgot to take pictures for some of the rolls because I was too hungry. First of all, 5 stars for the Chef. He was friendly, patient and attentive. He was also very detailed with preparing each hand rolls. The five rolls included Salmon, bluefin tuna, scallop, crab, and yellowtail. My favorite was the scallop. The chu toro was pretty good too. The fish quality was about a 4 stars quality to me. I eat a lot of sushi overtime so I know what a good quality sushi place tastes like. For the price they charge here with such a small sized hand-roll, I expected better quality fish. I also didn't feel very full even after the 6 hand rolls due to the small sizes. I am not someone who eats a lot in general. So it's a pretty pricey place but the quality isn't up to a high quality sushi restaurant. However, I do love the fresh crunchy seaweed paper and the warm rice. The ambiance is clean and comfortable and intimate with the chef right in front of us. Fun to watch the making process! I already knew the prepackaged handrolls in the supermarket area were good, so it really comes as no surprise that the fresh ones taste even better! The little food bar is located on the left side of the supermarket when you enter. The bathrooms are located conveniently nearby. Not to be weird, but it smelled and looked really clean in there. I think that's worthy of praise in it of itself haha The employees here all seem so friendly and welcoming! They are also very quick! My friend and I got seated right away and got our drinks only moments later. The hot matcha tea went well with the 3 handroll meal set that I chose. I loved being able to see each of my rolls being made. Seeing all the steps made me have a renewed appreciation for how they are made. The employee helping us--Michelle--was so kind and thoughtful. She took extra care to prepare each roll in succession just as we were about to finish the one before. Having each one prepared like this ensured that they were each eaten at peak freshness. Although they were all good, I must admit that I loved the scallop handroll the most! Michelle was also kind enough to answer all my questions and recommend some rolls she thought we would like.
