The space is lovely, the pours are incredible. As we went through the tasting, I expected to 'dismiss' the red pours being a white wine person... but Hilmy reds changed me. The Temp, Politics and Religion.... I love you!!! My life is changed haha. But honestly, one of the best tastings I've been thru (this is after being in Tuscany last year) It was laid back and so much fun. We stood at the bar area. After, I bought a bottle of -gasp- red. I would give this place a 5 if it were not for one thing... But let me start off my telling you the positives because this place was definitely one I would recommend for someone on their first adventure to this wine cluster. The wine definitely caught be my utter surprise. I am usually a red wine kind of guy, however they have lovely tasting whites AND rosés that we're not too sweet. If you go, get the Winemaker tasting because it allows you to really see the spectrum of what Hilmy has to offer. There are also little apps you can order such as cheeses and meats (although the prosciutto was not as fresh as I am accustomed to). The negatives: driving up to the winery can be a little daunting because some may feel the need for a more glamorous experience. This NOT that! There a dirt road loading up to the building structure, the grapes in the field are not the most voluptuous (could have been the time of year), and there are people wearing jean shorts t-shirts. As for the staff, there were some interesting stares I received from one of the ladies during my group's experience - eyes of that stated she did not want us to be there. What that reason is, I'm not certain. Lastly and more importantly, our sommelier-in-training was very nice during our tasting. He went "off script" in showing us some things that were not on the designated menu, as well as told us a little information about where and when certain grapes were grown. We had a wonderful time...until it was almost time for us to leave. We ordered a bottle of the 2016 Persephone thinking that we could grab it quickly on our way out. We walked the grounds, took some pictures, and returned to nothing being yet prepared. Again, we asked for the bottle with him agreeing he would get it...but not before he tried to sell us more stuff. Totally reasonable still, we kindly declined and just needed our bottle to leave. He suddenly gets distracted by another customer who is ordering several things. He helps her first, packaging all of her stuff as we watched. After packaging the stuff, it was very clear that he had "forgotten" again. We reminded him once more to FINALLY purchase and receive the bottle on our way out the door. In my opinion, very unprofessional and rude for him to have done that. I understand that he may be working on commission but that makes not excuse for him to basically ignore our request 3-4 times, then assist someone else because that customer was purchasing more things than us. I doubt that I will be back. read more

This was one of the first spots I tasted at two years ago. It was excellent then and things are only getting better! The wines are original and delicious and everyone who works the tasting room is personable and knowledgeable. The patio has been expanded and re-done--definitely consider a glass or a bottle out there! Beauty and taste, yes! This is a great winery complete with regal Great Pyrenees lazing around the stained concrete floor. The door is the huge expansive dramatic wide swinging thing that certainly makes an impression. The building has this great ranch meets modern clean eclectic. The light does cool things inside the tasting room. It has a cool back patio with a pergola (that doesn't have growth yet , but will be fab when it does). The wines were really excellent. I'm so used to subpar Texas overly sweet dirty wines (if they were even grown locally at all...). These were clean, beautifully balanced, well priced. Go here. Then go again. read more

Having visited several Texas Hill Country wineries, this one offers hands down the best experience. On a Saturday afternoon, the winery was busy, like most others we visited in the area, but did not have the feel of a tourist trap, a conveyor-belt setup where guests travel from one station to the other without much of a human (or non-human, for that matter) interaction. At Hilmy, we found a huge dog, a rooster and two chickens wondering around the patio. A while later the dog came into the tasting room to stake out prime real estate between the pouring stations, and immediately gathered a crowd of wine drinkers, all asking permission to pet her. Our host Brandon was both knowledgeable and excited about Hilmy's wines. He commiserated with us that dry moscato, which we wanted to try, wasn't available yet, did a nice little sale pitch on the wine club, and even poured a couple of extra samples to let us compare similar wines made from local and California grapes. read more

This was our first time to Fredericksburg. A few friends of ours are regulars at Hilmy and said we must go! Dan and I absolutely fell in love...and he's not even a wine guy! This winery was our first stop on our Fredericksburg winery tour but I have to say it was probably my favorite one of the day! Angelica (red hair) was our sommelier and she was amazing. She was very outgoing and explained each wine thoroughly. The wine was also very good! Almost all of their wine is dry but not too dry. Lastly, the view is good and it was a great place to take pictures. I would definitely suggest this place to anyone going to Fredericksburg for the wineries! read more

We had a group of 16 people, it was easy to book and lay in advance online. We originally had a reservation of only 12 and when we arrived they quickly changed our reservation and set up the tasting for 16. This was the most accommodating and informational experience we had all day. All the wineries are neat and fun in this area but this one is unique from the others, their wine is amazing as well! The staff is exceptional and really knowledgable. We had an amazing time here and can't wait to go back! We will be telling more friends and families to go to Hilmy. read more

This winery gave me the most memorable memories from my girls weekend in Fredericksburg. We went for a wine tasting, which the Politics & Religion was my favorite, and ended up meeting the General Manager Andre. He was so very sweet to me and my friends, gave us a tour that gave us the full experience from start to finish of how their wine is made and bottled. Hilmy was our first stop on our Saturday wine tour, and we could not have asked for a better experience. This place is the best. The front door is a beautiful 800-lb, mahogany, balanced sliding door. They have a wonderful indoor setup for tastings and a huge back patio kept mostly shaded by large pergolas. They also have a few super nice dogs lying around for dog people. Our somalier, Caitlin (or CJ), was extremely personable and even more knowledgeable. We asked a million questions and she answered all of them with a smile. We bought their Doo-Zwa-Zo and Tempranillo then left and visited a few other wineries. We ended up coming back and, to our surprise, they now had a great live band on the patio, and the owner of the place, Eric, bought us two glasses of wine just to sit down and hear our thoughts on the place! We went here on Saturday and the place was packed! Apparently they were short staffed so the staff wasn't too friendly, more like rushed which was understandable. The wine tasting was really great and offered a variety, but the staff didn't spend too much time talking about them because they were so busy. After the tasting, we grabbed a glass and sat on the porch and listened to a guy sing. He was so great!!! He was there with his wife and baby. He really got the crowd involved by asking what they wanted to hear. The building inside was really nice and modern and the back porch overlooked a field. They had chickens running around which was really cute. I think they were still constructing the outside because they had some building materials laying around. Hilmy tasting room is kid-friendly. We arrived at 5:30pm and had a taste of whites and reds. We were very impressed with the flavor and went home with bottles of doo zwa zo. Wilma the pig was a hit with the kids, and so was running through the vineyard. Sitting on the patio was quite relaxing with a glass of wine, crackers, and artichoke spread. We were not rushed out of the place even though it was near closing time. I highly recommend visiting Hilmy tasting room. read more

My friend and I were winery hopping and decided to pull over into Hilmy Cellars. Great choice! Their wine tasting was superb, but what made this place our favorite along the strip was their lovely and passionate staff. They went above and beyond to make sure we understood the different wines in their wine tasting offering and to make sure we had a memorable experience. Their esablishment was very nicely decorated and homie. We felt in love with the new rose and the zinfandel & touriga nacional. Will definitely come back! A must see! read more

Currently this winery has ZERO Covid-19 safe-practices in place. (At least to the discerning eye, walking through the door, nothing presents itself as visibly precautionary at all compared to other wineries in the area that are trying so very hard to protect their customers and their employees.) No safe distancing protocol whatsoever at the tasting counter, no masks worn by anyone serving, no six feet markings/signage, no crowd control {website says 10 people max inside}, no monitoring of patio access, no nothing. It's as if no regulations ever interrupted the same old way of doing business. Unconscionable. And uncomfortable. We turned around and left immediately as did several other patrons shaking their heads over the cavalier attitude. Hats off to their neighboring vineyards like Signor, Becker, and Grape Creek who give every assurance setting foot on their premises/properties that they care about Covid-health and well-being. my husband and i joined this winery before leaving. that should tell you something. we tried all 5 of the wines they had to offer and walked out with one of each. we love the vibe - it is not fussy, does not sell cheesy wine garb, etc. erik, the owner, let us know that he does not have his name on the wine glasses nor does he sell their glasses. He chose to do this because he cares about what kind of glass your wine is in.. you know, like every wine snob should. the glasses are great and not those half-sized ones with a giant logo on them. the wines: -persephone - delicious. this is a white blend with some tempranillo. the combo is awesome and surprising. -the temp - this is a red blend and is called the temp b/c he isnt sure he will have access to these grapes for long, so go getcha some. -muscat canelli - ali (the girl pouring for us) was super great and spot on when she said "this is sweet but not syrupy like most muscats" boom. delicious. it is sweet, then the sweetness disappears instead of lingering on your tongue and making you want to chew it. (you know the kind) -tempranillo - solid. _Doo*Zwa*zō all i remember is the delicious taste. please note that my mouth is watering right now. they also have a great patio overlooking some of their vines. long story not short, I am super excited about this new kid on the block and cannot wait to keep going back. For starters, this is a nice little place. I'm a huge fan of the decor here. They're all about Minimalism. The lady who served us was very nice and clearly loved her job. She was all about it and very informative. The wines, while nothing was particularly wrong with them, just didn't stand out to me. I fee like you could interchange any of the reds with each other and not notice too big of a difference. Overall, it was a very nice place with an awesome staff and decent wine. May be better for those who prefer white wines over red. read more

We love the wine here. Fantastic blends and a very good mix of small batch wine. However, this isn't about the wine. They just started serving real food all the time (as in not just BBQ on the weekends). Chef Steve is KILLING IT out there. We had one of the best handmade chicken pot pies I have ever experienced with some french onion soup and a "fancy grilled cheese" that was indescribable. I can't wait to go back and see what Steve is going to put on that menu. This will definitely be our lunch stop, from now on, every time we make the daytrip out here. read more

This is a friendly establishment, albeit expensive. Paid about 11 or 12 bucks for a wine tasting, but no souvenir glass is offered at this particular winery. The wines are good, but they are also overpriced. I've tasted extensively in Northern California, and I'm not happy with the prices for what you get. For instance, a $40 wine here can be had for $20-25 in CA. Either way, it was a nice experience and the winery was clean, although the noise level was a bit high (from patrons who've had a bit too much to drink). read more

We had a wonderful experience here. The staff was very passionate about wine and talked to all of the areas that they source their grapes. The 2015 Chardonnay has grapes sourced from California due to bad growing weather in Texas in 2013 but has to be one of the best Chardonnays I have ever had. I want to correct a review posted by a previous reviewer on May 8, 2013. Despite the assertion that "I can vouch that their patio is dog-friendly" it is NOT and do not bring your dog here. In fact, i would hesitate before bringing small children as well. Two weeks ago we were out and about visiting a few wineries in the Hill Country. After visiting a nearby winery that was over-crowded, i whipped out my phone to find another dog-friendly winery nearby. Based on the previous person's review we stopped in at Hilmy. (Also important to note i checked the 'Business information" tab as well to see what it said about animals, and it had nothing listed.) We noted a "no dogs" sign as you walk up to the property. As a result, my boyfriend stayed with my 14 pound on- leash dog well ahead of the sign (away from the building) while i went inside just to let them know that they should reply to the incorrect yelp review indicating their dog policy, or at least make sure that yelp indicated in the Business Information section of the site that dogs aren't allowed to counter the assertion of a previous review. Within thirty seconds two great pyrenees dogs, well over 100 pounds, attacked my dog completely unprovoked. In the process of protecting our dog, my boyfriend had his shirt ripped and the attack left his back bleeding with several foot long gashes in his back. The owner did come out and apologize, and gave us two bottles of wine, which was very nice. Again i reiterated that they needed to remove or counter the review that indicated they were dog friendly. I also suggested they tie the dogs up because they are dangerous animals. The owner explained that the dogs are trained to protect the chickens. I countered that it is not considered 'protecting' when my dog was on leash and not even within eye sight of the chickens. I consider that an unprovoked attack. I wasn't going to post a review because he did apologize and generously offered up two bottles of wine. However, i now feel it was my responsibility to warn others because as of today, more than two weeks after the incident, they have NOT replied to the 'dog friendly' review. Further, Hilmy has not contacted yelp to indicate that the yelp site should indicate dogs are not allowed. I have done the necessary for them, as i just contacted help via the 'edit business info' and let them know the site should indicate dogs are not welcome. Additionally, after our conversation with the owner, and as we walked away, the two dogs were still roaming free around the winery. This was literally minutes after the attack. Very irresponsible indeed. Dont bring dogs, children, or anyone that may fear the very possible--an unprovoked attack by two dogs that could likely maul a human. read more

Defiantly a great place! They have guinea fowl that eat all of the pests so they don't use pesticides, they have sheep for fertilizer and the horses eat the dead vines. They recently named a bottle after Robin Williams it is a really nice red and would go perfect with barbecue. Also another added bonus of the Robin bottle is that they have four different charities that they give a dollar for every bottle sold and I think that that's pretty great. They are super family-friendly I don't even have coloring books for the kids however my kid preferred to chase the rooster. read more
