After hearing rave reviews from two VERY knowledgeable wino friends whose cellars are impressive, we finally came here with another couple recently. The exterior of this sleepy-appearing winery won't win any awards; however, the sleepiness ends at the door. Literally. The entry door is centrally hinged and about a foot thick of solid wood. Sounds weird, but that attention to details raised my antennae. The receptionist at the welcome desk warmly greeted us and steered to a super-cool and very knowledgeable staffer. He tended to us in a very laid back manner: no pressure. He knew every flippin' detail about the vineyards, fruit, the process, and the taste of each wine. Oh, and the wines. They're serious contenders. The white wines are THE BEST that I've had in Texas Hill Country: velvety smooth bursting with gorgeous fruit and spice notes. The reds were just a step behind. At at time when esposa and I are trying to reel in our wine club memberships, Hilmy's wines were just too damned good to ignore, so we piggybacked on our friends for a membership. Had a great experience at this winery. Have been to Fredericksburg several times living in Austin but this was our first time at Hilmy. We were interested in joining another wine club and we were able to taste at "the flock" tasting table. The gentlemen that was helping us (forgive me for forgetting his name) with our wine tasting was fabulous and super knowledgeable about each wine we tasted. We asked to only taste reds since that is what we mainly drink. We loved every single red we tasted at this winery. The quality of wines here is a lot better than most of the wineries we've been to in Fredericksburg. We ended up joining the wine club and can't wait for our first shipment! Now this was only our second stop on our bachelorette winery tour, so you can't chalk up my effusive praise to too much wine! (At least not all of it.) I really enjoyed all the wines on the tasting menu and ended up leaving with two bottles. I had just planned on the one, but you know how it goes. Plus they have Josh. Josh is ridiculously knowledgeable about the wine, especially for someone who looks barely old enough to be drinking it. And he's kind of got a bit of a Tom Felton/Draco Malfoy thing going on. (But less evil. Probably.) Throw in some well-spoken French and hot damn. You've got my money. (Seriously, even the employees at Pedernales were telling us to ask for Josh.) And that door is epic. I'm going to guess that those that wrote a very positive review of this winery haven't been to Napa, Sonoma, Tuscany, Rhone or Burgundy. As well, I would guess that most are not any older than 30. Visited this past weekend with 5 other couples for a birthday celebration. Of the 6 tastings offered, only 1 was not immediately dump into the spittle. The other 5 were immediately poured out of our glasses after 1 sip. Nasty. This winery is trying to crank out wines quickly to make a profit, as the wine business is not very profitable. You could tell the wines hadn't aged long or were not given time in the barrels or bottles before dispensing to unsuspecting tourist. One possible sign that it was not a winery of caliber, our host pourer was probably no older than 19 and wore his baseball cap backwards in Justin Bieber style. Take a pass on this winery as there are other choices. read more

Hilmy has landed itself in my top three favorite wineries in Fredericksburg. Here's my reasoning: 1) I enjoyed all of the wines I tasted--I'd say they are better than average for Fredericksburg-based labels. I'm not a huge white wine drinker (probably only about 10% of my annual wine consumption), but they had a good sweet wine that would play well for dessert (in my opinion, I'm sure someone else would consider it a regular drinking wine), and and a drier white that I actually got a glass of. If memory serves, it was actually a chardonnay, which I usually don't like at all, but this one was purposefully devoid of all that (IMO, yucky) oaky flavor. 2) It is fairly small, which I generally prefer to the huge tasting rooms that tend to cater to the party bus/limo set. I'm sure this place can 3) The tasting room has a lovely aesthetic--it's got that modern Texas thing on, and, I wish I knew how to describe it better, but just take my word for it when I say the huge wood front door is really cool. 4) There's a nice little patio out back, and I'm a fan of most all patios. 5) and while this is secondary to the quality of the wine, and this may not apply to everyone, the overall experience for me went up a huge notch when my (very well behaved) dog was allowed inside the tasting room. I can't say 100% that this is their standard policy--we only go to Fredericksburg on Sundays when it's much less crowded than Saturdays, so there were only a couple of other people visiting, and my dog is quite the gentleman. But I can vouch that their patio is dog-friendly. read more

Love the labeling DooWazZooooooo!!! Hilmy accomodated our ladies' trip and squeezed us in prior to a bus group. Despite the group coming behind, the tasting wasn't rushed; our hostess walked us through the wines at an appropriate pace, allowing us to savor the wines. DooWaZoo, a bright, light, Ugni Blanc and Chenin Blanc blend is perfect for the hot Texas heat. The Temp, is a fruit-forward Tempranillo that runs a little hot. As always, the appellation labeling is much appreciated! Do note due to the local dog (who's super awesome and cuddly), rooster, Guinea fowl, chickens, other outside pets are not allowed. Enjoy the atmosphere and the natural approach to wine, just leave the pups at home. read more

I was in Fredericksburg with some old college friends this past weekend and Hilmy was our favorite! We liked the fact that we had to make reservations here because it was less crowded and more accommodating. I've been to many wineries and no matter how great the wine, it is the service that will make or break the experience. Well, Angela definitely made our visit a 5 star one! She was very sweet, inviting and knowledgeable about all of the wine.... which was great because we're all California wine drinkers and didn't know much about what we were going to be trying. The quality of wine here was definitely the best we had all weekend - we all loved everything that we tasted even though many were wines we typically do not drink. This is a cool spot! Their wines were good - we sampled 6 wines...a few were not my fave but that is my own personal preference (not a huge fan of certain types). The service was great - the lady who poured the wines for us was super knowledgeable about all of the wines. The most popular within or group (and it seems like an overall popular wine as well) was The Temp. It was a fun thing to do for the afternoon with girlfriends. The view outside was nice around sunset. Not necessarily the best scenery/view out of all of the wineries around, but still nice. Had a great time at Hilmy for my birthday. We had such a wonderful tasting, we decided to purchase a four pack of wine. We were headed to other vineyards afterewards so Hilmy suggested we leave the wine with them and we can pick it up the next day as opposed to leaving it in the car and ruining the wine. So nice! Unfortunately, the next day, we had to leave early and didn't have a chance to stop by Hilmy on our way out of town. We reached out to Hilmy and they mailed us the wine overnight. Such a beautiful place to visit for a fun day adventure, especially if you love wine. I'll be stopping by this winery with my sister for her bachelorette party come September. I've visited nearly all of the wineries in Fredericksburg and I put Hilmy on my list of 4 places to taste for our group because I think they are in the top 4 best wineries out there. Hilmy specializes in a few very tasty wines. Their staff are extremely friendly and knowledgable. We were guided around the winery and shown the cellar! Added bonuses include friendly big dogs to pet, chickens, guinea fowl and their eco respect for clean growing. No pesticides! FYI push the door really hard to get in :) It's just heavy. read more

I haven't been to wineries since I moved from LA...nearly 2 years ago. And my, oh my, this was an excellent entry point. The review by Lauren J. is excellently thorough and the only thing I can add to it is to wait patiently for the future wines. I was able to taste an exquisite young Sangiovese and...wow. The winery had a great party for the release of their wine club shipments and we sat out on the patio with a few bottles of the Muscat..an amazing afternoon having great conversation. Visited Hilmy for the first time last weekend. When we arrived the place was not busy at all. Our server was very friendly and knowledgable about the 4 wines we were tasting. The cost was $10 but I learned more at this winery than any others and enjoyed all the wines. Also, one unique thing our server was able to do was let us try the same wine, one glass in which the bottle had been opened yesterday, and a glass of a freshly opened bottle. It was really unique to try both wines like this and see was a drastic difference occurs. The outside grounds are awesome, there were goats, a dog, and all kinds of birds/chickens. They had a nice patio area and cheese and food for sale. I imagine the tasting room can get quite packed, but when we were there it was not at all. I would definitly return to Hilmy! read more

After much fanfare by Yelpers I found myself disappointed after this visit. There wasn't anything that made me think this was great. The winery tasting room was pleasant and clean with knowledgeable servers. The wines were good, not great. We bought two of the four tasted (a little skimpy on number of tastings) but don't see a compelling reason to come back. We've had much better wines and tastings. Overall it's not a "must see" at the same time if you do go it is a solid experience. read more

My husband kidnapped me for a birthday getaway to Fredericksburg on a Wednesday/Thursday. Obviously touring the wineries was on the agenda! After recommendations from friends and reading yelp reviews, we added Hilmy to the list of stops. So glad we did! $10 for 6 tastings but the best part was the staff there. We had been disappointed with our experience at Fat Ass Winery and headed next to Hilmy where we had the complete opposite experience. Whereas Fat Ass felt like they were going through the motions just to get us to leave Ace was the man. He took super great care of us. My wife had her 21 year old cousin in town and this was his first wine tasting day. Glad we were able to improve on the lameness that was Fat Ass. Hilmy is a newish place and they were very welcoming. When we checked in they let us know their wines weren't going to be the typical Fredericksburg Sugar Bombs (apparently that what a lot of people actually want, which blows me away). We like our wines to be bigger, bolder and drier anyway so this was perfect. We have low expectations about the quality of Texas Wines and mainly go just for the experience of meeting new people and hanging out with friends. This place had very drinkable wines and all of the staff was super nice and friendly with Ace going to another level. They should give him a raise ;) read more

Went to Hilmy on the recommendation of a friend and am SO glad we did. Neldie and Eric have created a warm environment for wine lovers to experience some incredible finds. The gathering room is tastefully artistic and not in the slightest bit snobbish. It was one of the most inviting vineyards I have ever been to. Head out to the back patio and you will be met by Mia-the vineyard peacock. The family-born atmosphere can be felt from the minute you walk through the amazing front door. By far one of the best wineries along the 290 stretch. By boyfriend and I are frequent visitors to Fredricksburg and we always make time for Hilmy Cellars. The patio is amazing. Inside is even better. The staff is always incredibly friendly and knowledgeable. It's clearly a tight knit group and it shows in their passion for wine. Sometimes lines are a bit long but once you get a spot you are treated with patience and don't feel rushed at all. I recommend making a reservation! We even have a bottle of the a.k.a. We booked a tasting here through a tour service, and it was a good experience. They gave us two choices for our tastings, which was great. My other favorite wine tasting was here at Hilmy. When you enter, you may notice less of a "gift shop" feel to this place than some of the other wineries in the area. For me, it made it seem much less busy and more relaxed. I could definitely see myself having a glass and sitting either inside or out just relaxing and enjoying the view. So on to the tasting. Seriously, the wines were delicious. Josh was doing the tastings on the morning we were there. Our group enjoyed his service very much. He was definitely knowledgeable and actually just fun to chat with through out the tasting. I mean, no matter how fantastic the wine might be, if the people serving the tastings aren't pleasant, I'd rather not bother. I'm happy to say this was not the case. So cheers Josh! Very delicious wines in a nice atmosphere. I loved the whimsical labels and wine names, and the peacocks were a definite plus. Our server seemed to be a bit of a newbie, but she was very nice and did a good job describing the wines and managing the tasting. We were there at the same time as a large bus of people, but I never felt rushed or neglected. The tasting room was a little rough - there were a handful of items you could buy outside of the wine, but it seemed a bit undecided what it wanted to be. Have I mentioned lately? I love wine!!!! Today is a huge Thank You to the team Hilmy Cellars. We spent some time in the winery and then in the Flock Lounge with Assistant Winemaker Hailey and discussed everything from cold stabilization in tanks to blending red wines for optimal flavor and balance. And as if Hailey wasn't enough, we also had fun conversations with Casey, winemaker Michael Barton and even a quick cameo from Michael's wife, Brooke. We didn't even taste through all of the Hilmy wines and still left with 16 bottles between us! And lemme just say, one of my favorite Texas reds of the moment is their Cab-Syrah blend. The wine is bold with a full-mouth feel, velvety tannins balanced with acidity, and a fair amount of black fruit flavors. Its a smooth wine that is easy to drink on its own, but lots of things pop to mind for food pairing, like braised short ribs with mushroom risotto! But whether you like to pair foods with your wines or just to enjoy a glass, there's a nice variety of well-crafted wines to check out at Hilmy when you visit the Texas Hill Country. read more
