Service was good - prompt and attentive, nothing to complain about. Note, we got to the restaurant half an hour before closing but we were ready to order and chow down fast. Food - After ordering, we demolished the complimentary edamame which was blander than other edamame I've tried but eh that's ok. We were quite hungry so we were excited to start eating. This was our first time at Hinata but we had lunch at the old spot (great tiger ramen) before and it was pretty good that's why we were expecting this new spot to be just as good. To cut to the chase, we were all very disappointed with our ramen. We ordered spicy tonkotsu, black garlic, shoyu, and tonkotsu. None of them tasted as they should. We weren't expecting authentic Japanese ramen flavor by all means. But the broth hardly tasted like broth--didn't even smell like it. I had the spicy tonkotsu and it tasted like water and milk(?), chili paste/oil, and king oyster mushrooms. No depth, no saltiness, no flavor. My first guess was boiled corn water... heck maybe the broth had some of the water they used to boil edamame. My husband's black garlic didn't taste like broth either, just bonito flavor and toasted garlic taste. The noodles were ok and I thought that was enough for me to finish my food since I've always been a noodles first ramen eater. I didn't get to finish my food, it just tasted so bland it was bad. We were thinking maybe they ran out of the actual broth so they just watered down whatever little they had and served it up. I would rather they told us they were out of broth so we could've ordered something else instead of spending 100$ on awful ramen. I don't like ramen hub but I'd choose ramen hub over this place. I've driven past this place so many times on the way to my boyfriend's house, and I finally asked him to take me. We got there about 40 minutes before they closed and were seated right away. They had an awesome happy hour with all ramen for $15 and 50% off appetizers, which was such a good deal. I ordered the tonkotsu ramen, and it was so good. The broth was rich and flavorful, and the noodles were cooked perfectly. On my first visit, we also got the spicy tuna crispy rice. The pieces were huge, and I asked for a side of spicy mayo. It was honestly the best spicy mayo I've ever had. We came back a few days later, and this time I tried the calamari, which was also really good. The staff was amazing both times. When we came back a few days later, they remembered us and gave us such a warm welcome. It's always nice when a place makes you feel like a regular after just one visit. I was staying in Long Beach for a night before a cruise the next day. This restaurant was very close to our hotel, so we walked here. Our server was Alex, and she was absolutely fantastic! Delicious ramen! We've had our eye on this place for awhile, and finally tried it on Memorial Day. I got the black garlic ramen and he got the pork miso ramen. Both soup broths were rich and flavorful. Honestly, I liked the miso broth the best. Service was good. Food came out somewhat quick. But both bowls didn't come out at the same time. Idk what happened there but my spicy tuna crispy rice was given to me after me and husband finished eating our ramen already and omg on top of that, the spicy tuna crispy rice looked like disappointment. The rice was UN-eatable. It was like uncooked rice, it legit hurt my teeth chewing it. The crispy rice should be slightly crispy on the outside and soft when you bite into it. I will say tuna is pretty decent but it could not save it. HUGE disappointment. Tbh, I am an easy critic, I'm a foodie. I was prepared to give 5 stars cause the ramen is good but it went downhill to a 3 star due to the long wait of my appetizer just to look like throw up on a plate. I'm so glad I was able to try this new restaurant! While I loved the restaurant that used to be here, Hinata does not disappoint at all! Delicious food, great interior, and amazing service. I had never had donburi before but I will be back to get a full size portion! I absolutely LOVED the black cod donburi! The sauce on the fish is the perfect blend of sweet and umami. The ramen was excellent as well. I usually get a tonkatsu but I wanted to try something different, so the server suggested the black garlic ramen since it's still creamy as well. It did not disappoint! Really great depth of flavor. I would definitely order it again. I got medium spice level but I could have gone up a little higher - I just didn't want to blow out my palate since I didn't know their spice levels. You can always ask for more spice on the side as well. The house salad that comes with the combo was a nice light starter before the donburi and ramen. The service is excellent here.
