The absolute Worst Stewing Beef I have ever had, grass fed or otherwise!!! History: I used to order my stew beef at a nearby farmers' market. Really good. BUT they closed the booth so I switched to H&C. It was more expensive and almost as good. Then I stopped eating beef. Recently I started making beef stew again. I got some grass fed at Whole Foods. It was okay but I wanted better. So I went back to H&C. It cost $14 a pound but that's food now. I noticed when I unwrapped the package that there was much darker meet in the middle of the bright red meat. Older? Hmmmm. So I made the stew. And the beef was like leather. I lost more calories chewing than I did consuming. Some of it was so inedible I tossed it. That was about 20%. As I said, the worst. I would have gone back to complain but the place is popular so I was seemingly in the minority and you know what goes with that dynamic. Naw I'm going back to WF or raising my own in my NYC apartment. read more

Stopped in for a sandwich while walking around the UWS and was delighted by the friendly and knowledgeable staff. Ordered the Classic Sammie which has grass fed roast beef, Swiss,mayo, greens on a ciabatta. 100% grass fed meat, a bit difficult to find at local shops, sourced in NY and CT. Prices may be a bit high $18 for the sandwich, but we have to realize how subsidized corn fed, hormone filled, and inhumane treated traditional cattle are. Kevin is the man! Just left H&C with a growler full of yummy beer, two sammies, and a quart of pork blood. Not only did Kevin take the time to give me a full tour of the shop product line and philosophy, but he was able to answer all my questions with amazing detail. I love that they are a snout to tail butcher because I'm all for using every part of the animal. I ordered pig tails and ears for pickup in a few days and the whole experience was A+ from start to end. Hudson and Charles are one of our favorite butcher shops that serve up banging sandwiches. Hands down the best sandwich was the "Combo" made with corned beef, pastrami, mustard, swiss cheese, and sauerkraut on Rye bread! The corned beef and pastrami provide a salty, savory, and slightly smoky taste while the mustard adds a tangy and slightly spicy kick that cuts through the richness of the meats. Even the Swiss cheese adds a nutty and slightly sweet flavor. Every bite had us count our blessings that we are able to eat this any time we want. read more

Amazing meat selections and delicious sandwiches! My favorite meat is the bone-in pork chop and the hotdogs but everything is fabulous (chicken, steak, etc). Top-notch quality and locally sourced! I think the weekly delivery is on Monday, but if there's a specific cut of meat you want, you can call and reserve it in advance. Our favorite sandwiches are the Combo (pastrami) and the Balboa (ham). Both are hot sandwiches and so, so delicious. FYI - They always have 5 sandwiches on the chalk board (all made fresh), so they don't always have both of these sandwiches available. I found out about this place recently and I'm so sad I didn't know about them sooner. I was in need of a giant pork shoulder for a bachelor party dinner with 8 men and I could not find a place that sold the right size. I then called up here (I've bought from them once before) and they were AMAZING PERFECT AND LOVELY! They said they could cut the meat pretty much however big/small & whichever way I needed. They got me my exact desired poundage. Pick up was exactly when I needed. Grabbed some thick cut bacon too which was to die for. Every person I spoke with was so friendly and accommodating and knowledgeable. The food was so delicious. Visited Hudson & Charles; it smelled amazing and I wanted to get everything on the counters and fridges (bone broth, ramen broth, bougie kimchi, local ice cream, all the things). I got steak (medallion, aptly). Everyone was so friendly, and it had that bustling Sunday local butcher feeling. I seared the steak. And it was delicious. Perfect. I'm not sure I can take credit. The bad reviews on here...give me a break! You can't blame them because you don't know how to cook a steak. Slide into my DMs if you need some tips. They have absolutely beautiful cuts of meat here and are priced appropriately considering the quality, and the fact that's it's a smaller local business. I've had some big fat steaks that I toasted to perfection. Delicious cow. I've also had some beautiful breasts of chicken and pork belly. I also want to commend this place for how they have been operating during the COVID-19 era. They strictly adhere to social distancing guidelines and even have special hours just for seniors. There is a noticeable difference in taste texture and quality of the meat available here, most notably the chicken is the absolute best over the highest quality grocery store chicken. I started coming here to relive my family steak dinners from when I was a kid now that I live on my own. Is this place expensive? Yes, but it can definitely be worth it depending on what you get. For example, the first time I came in I was recommended to get a sirloin steak which was around $10 for around .5 pounds which I thought was not that bad and it was pretty good when I seared it on my cast iron. Next time, I asked for something a little fattier and was recommended the Bavette steak which was about $20 for about .75 pounds (I probably could've gone slightly smaller) but this was genuinely one of the best steaks I've ever had at home! It was so so good. The rotisserie chicken is also really good here ( especially the breast which is very moist). However, the rotisserie chicken is $30 compared to $10 at fairway which is a bit much for me to justify getting on a young person's budget. The only thing that I got and was disappointed with was the spicy Italian sausage. It just wasn't juicy or fatty enough in my opinion. read more

There was a line to enter, and given how cold it was outside, I thought it made sense to call inside to see if they had the item I wanted. Made sense to me as a senior. Whoever answered the phone hung up--without a word--on me when I said I was on line. Inside the store when checking out, I politely complained to the cashier about the rude phone call. The idiot responsible launched into a verbally abusive tirade. "We are working our asses off in here for people like you." I interrupted him: "Why couldn't you just say that?" I was in the area in search of some quality deli meat to accompany the fresh baguette I had just purchased. I generally shy away from butcher shops because of the sickly smell and harsh sounds of blades slicing through bone, muscle tendons, and whatnot. This place had none of that. The staff were super friendly and happy to oblige to any of my sampling needs. Of their notable offerings other than meat: Middle Eastern and asian spices/sauces, rotisserie chicken, hard cider, beef fat/bone broth, and growlers. I went for the roast 'beast' (beef) $16.98/pound and landaff cheese $22.00/pound (as per the butcher's recommendation). Needless to say, I just devoured the best sandwich I have ever eaten. I have been shopping here for about 6 months. I know everyone is entitled to an opinion - but I am truly stunned by the negative reviews! The overall quality of everything I've ever bought has been completely awesome... I am so impressed with the way each butcher handles the meats and also their depth of knowledge in the many cuts of meat they offer. I also think that anyone who comments that the staff are rude and the butchers are unsanitary in handling meats... IS JUST SIMPLY WRONG!!! I am a total germaphobe and have observed the butchers handling meat on a regular basis. Not only Are they very hygienically appropriate when handling meat/ making sandwiches, etc, they are also super skilled at what they do! They are expeditiously and efficiently cutting up whole animals right in front of you! They are super clean and the best butcher-multitaskers I've ever seen in a meat cutting situation! I truly mean it. Aside from being knowledgeable and very clean, the staff are super friendly. They cut your meat "exactly" how you want it and (if asked) will provide tips on how to prepare and cook it. To me, that's an added bonus that you usually wouldn't get at Fairway or Whole Foods meat counters. I recently bought some meat and had a small issue with the quantity/ cut I received. One of the staff members/butchers spoke with me over the phone. He was not only very professional and accommodating, but also quite warm and kind. It was around the holidays and he was clearly busy and working hard, but still took the time to help me resolve the issue and provided helpful tips on storing and cooking the meat in question! I was quite impressed with this excellent customer service. I have also witnessed the staff interacting with other patrons and I see the same professional, kind manner towards others as well!!! I am long winded, but I hope this helps you realize that negative reviews of this place are totally WHACKO... and that is my opinion based purely on my experience and observations of this butcher shop in action!! I walked in to get two pieces of filet mignon for dinner. A man behind the counter suggested to try more flavorful, more fat content, meat. It was tied up to keep the shape as a log of wood and priced better. I like more fat content in a meat so I bought them for dinner tonight. I was afraid to overcook the meat but it was pretty easy and cooking friendly (ask for the staff what's the best way to cook your choice of meat. That's what I did and came out nicely). On the way out, I notice the fridge full of interesting stuff. I zoomed into one item first, ramen broth, what? I don't have to be a slave in the kitchen for hours anymore? I am definitely coming back to get it very soon. Beside the ramen broth, there were lamb, beef, chicken, or turkey broth as well. I will get the chicken broth when I get sick. I make burgers for days from it! All prices are reasonable for premium product. Never have I seen the social distancing rules enforced so diligently and respectfully. It is unsettling watching other local stores just "forget" that we are still in a pandemic. It is clear that Hudson and Charles ranks their customer safety and satisfaction much higher than profiting off of us during this national crisis. It was my first and last time at Hudson and Charles. As I was being served, one of the guy who works there, took some minced raw meat from of a bag he was weighting for someone, with his bear hands, no gloves! He put back the meat in 'the fridge'( with meat he would later serve to someone else), and right after, without washing his hands, went to the cashier to handle someone's money! Stopped in after a visit down to the new Whitney and a tasty stopover at the gansevoort market (both to be reviewed sep) after reading a number of positive comments. Summary: VERY good steak cooked up at home. Will definitely stop into this butcher shop again to not only sample other meats (they go grass fed and dry age on their own facility) but to also try sampling the broths and prepared foods. Saw a number of interesting and unique cuts and after consultation with the friendly staff, took home over a pound each of the Denver steak and the more traditional Strip. Wasn't familiar with the Denver but learned its from the chuck and also known as the underblade steak. Had some decent marbling, pricing was reasonable, but most importantly it got a strong endorsement and am happy to share that it was a tasty steak that I will be looking out for in the future. As a fyi, for my small dinner event, went pan seared with drizzle of olive oil, half tblsp of butter and a simple salt, pepper and garlic powder seasoning and served it rare. read more

Very sorry to say it, but.. the bacon isn't good at all, and I bought it twice and had the same experience. unfortunately, it is dry in taste (no, i did NOT burn it). While I was warned that the whole chickens smell like sulfur, I was overwhelmed and nearly gagged when took the chicken out of the plastic. I've shopped at many other sustainable.ethical butchers (Dickson's), and haven't had bad experiences with their bacon and chicken. Haven't tried their sandwiches, but their menu looks great. Still in the process of setup, the new West Side outpost of the boutique West Village boucherie holds great promise for a neighborhood devoid of same for a number of years.The legendary roast chickens are not yet available so I settled for some roast beef. Fresh meats seemed to be priced about the same as at April​ Bloomfield's shop down the road; Hudson and Charles is friendlier. The four star rating is just a placeholder, once the place hits its stride the larger space will allow it to overcome the space limitation of the downtown original and it will likely merit five stars.
