    It was our first time trying this place. Got the 3-cup chicken and the beef with peppers. Chicken dish came with a dead roach inside the dish!!! We were so disgusted. We will not coming back.

    Let me get one thing straight. Shan Shan Noodles doesn't care about this review. They don't care if…read moreyou come. Why? Because they are busy AF. They are buzzing. We went for the first time Sunday at like 3pm? Full. Take out orders flying out the door. It's a cute place. Standard strip mall aesthetic. But they do have a window where you can see them hand pulling the noodles. That's right, hand pulling the noodles which is the main attraction. The food is from the North Western part of China near Pakistan so there are some Indian influences like their Cumin lamb and pulled noodles one of their most popular dishes. But I'm getting ahead of myself. With my vegetarian wife who as usual ruins everything by insisting we order vegetarian appetizers. Scallion pancakes were delicious. No pictures because we ate them immediately. Pan fried dumpling. 9 of them. That's a big portion. And it was like 9-10 bucks? They make their own dumpling wrappers, their own dipping sauces. Dumplings were very good. You could really taste the vegetables. Focused on the quality of the ingredients. My wife had the hand pulled noodles in hot oil. Marked spicy it was American spicy. Did not blow your head off. O enjoyed them. They give you a pair of scissors. Because it's one long noodle. Do not use them on your birthday. More on that later. I had the aforementioned cumin lamb and pulled noodles. I liked it but it was overwhelmingly cumin flavored which obviously is the point of cumin lamb. I'm not saying over seasoned I'm just saying it announced itself as this is cumin lamb. Period. We also had bubble tea! How fun is that? My wife had taro which they made with non dairy milk for her. I had pomegranate with exploding bubbles. Never had those before. Also super fun. They did not explode in an American way or even a Chinese way as both countries let's face it are pretty well known for making things explode. No in a pleasant way. Waitress was delightful we had obviously a long conversation about the food and the restaurant. The scissors are for Americans who share their food. In China you would eat the noodles slurp them without cutting them because eating long noodles especially on your birthday is supposed to promote a long life. We did not learn this until after cutting my wife's noodles. It was her birthday. I will miss her but also look forward to meat based appetizers. One door closes and all that. They also own the bakery a few doors down. Very light chiffon style cakes. Not too sweet. Chocolate Oreo cake. I asked if that was very traditional. Oh how we laughed at my hilarious joke.

Next came the beef pancake which was crunchy, chewy, had excellent flavor, but slightly heavy on the sauce. Lastly, was the braised beef noodle soup. The broth's flavor was on the mild side, whilst relying on the spice's heat to shine as the primary flavor. The beef was also mild, but especially tender. There was also a good amount of proteins in the soup and the hand pulled noodles were perfectly thick and chewy. Overall it was a great dish for a chilly night out.

The dish by itself was 5/5 stars. I'm surprised I hadn't tried Let's Noodle sooner since it's across the street from one my favorite ramen spots in the area, Ju Ichi. Let's Noodle optimizes a "Hole in the Wall" restaurant, very unassuming but it delivers authentic Asian flavors and delicious noodles. Although I didn't try it, Let's Noodle lets you craft your own noodles with choices of sauce and protein. The interior had very limited seating but a cute bar style table looking out toward the street. The windows where I sat had a nice large ledge which was super convenient to put my bag so it's out of the way and off the ground. The food came out pretty fast despite there only being 3 staff members that I saw - a front desk cashier who doubled as a server to deliver food when ready and 2 kitchen staff. The price was a little above average for what you'd expect for a non-full service restaurant, but it wasn't horrible either considering how close it is to the Green in Morristown. The pork buns I had were tasty but the pork mince inside was minced a bit too finely for my taste. It almost resembled a paste when it should have had a more structured and juicy bite. It was still enjoyable but it wasn't the star of the show. After I finished dinner, I decided to also try the Dan Dan Noodles to go. The takeout container nicely separated the noodles from the sauce so the noodles wouldn't get soggy when I got home. The sauce was flavorful and the noodles had great texture but once again, the pork was so finely minced, like the pork buns, that it really detracted from the quality of what was otherwise a fantastic dish. Didn't get a chance to try it out until yesterday and man, we were missing out. The yunnan rice noodle soups are so good, and different, from the more commonly found Asian noodles; ramen, udon, pho, etc. Not going to say that it's better than the others but it's absolutely fantastic that there's another option now when you just want a warm, comforting noodle soup. Especially since winter is coming. The setup is more akin to a food court than a restaurant so the small seating area is shared with Kam Man and all the tableware/utensils are plastic and disposable. There's a door to the outside basically right there though so unless you're seated to either side of it you get blasted w/cold air every time someone enters or exits. For my first visit I went with their "pickled pepper soup rice noodle w/beef stew" (A8) and it was very good. The soup was flavorful and the noodles were perfect; fresh & not mushy at all. And digging through the bowl was like going on a treasure hunt for lil' yummy morsels: a quail egg here, some wood ear there, a random piece of thinly sliced ham, good stuff. However, for those of you w/nut allergies, they do add roasted peanuts to some of their dishes so you'll probably want to tell them to not add them to your food. The only minor neg with the dish was that the beef brisket was a tad tougher than I'd like. But if brisket isn't your thing, they also have the same dish but with "beef roll" (A7) which I found to be an odd translation for basically thinly sliced beef. I was so enamored w/this noodle soup that I brought my wife the very next day. I went with the same soup base but w/fish fillet (A9) this time and it was just as good as the first time. I will definitely have to come more often to try out their other offerings. I also noticed that they have rice based dishes as well in case you get tired of noodles. So anyway, I'll definitely be visiting a lot more and I really hope they stick around longer than the previous eateries at this location. And while it would be nice (if not really feasible) to get your food in 10 seconds as their name implies, so far their food has definitely been worth the wait.
