The tonkotsu shoyu was meh. The broth was too salty, but it was also lacking in, something. It felt kinda like water, oil and salt, and like it was missing some sort of more complex meaty, umami, maybe nutty or spicy notes. The noodles also felt kinda vanilla to me. Nothing in terms of more complex eg. wheat-y or grain-y notes. The chasu was a bit on the lean and dry side, although the fatty part melted in your mouth, which was good. I hate when it's chewy. I liked the curry and rice a lot. The pork had a nice texture that was fun to chew. It had some bite to it. It also felt meaty and satisfying. The rice was cooked well too. But unfortunately the bowl was super small. It's a $4 add-on to the curry that you can finish in like 3-5 spoonfulls. Maybe that's not terrible as an add-on; I dunno. The other eatery being Nong's Khao Man Gai (SE). You walk in, make a left, and walk towards the window to find the counter to order. The service is fast and friendly. The tonkotsu defining feature is the milky, savory broth, the blending of fat and collagen, slowed cooked over a prolonged period of time. The spiciness in the dish is a generous topping of chili, follow up with a tender slice of chashu pork, seasonable vegetables which in this instance was spinach and green scallions, and half of a soft boiled egg. Decided to come here on a rainy day because I was feeling like ramen and I wanted to try a new place. It was busy at lunchtime, but there was still some seating. It's a fast casual so you order at the counter then grab a seat until they bring your food. The employees were friendly and tipping is optional, but a portion does go to the kitchen. I ordered the Paitan Red Chicken ramen which was chicken broth, based with chasu chicken. I decided to get this instead of pork broth to feel a little healthier. Still debatable. My ramen came out nice and hot and very red. I had read reviews that this didn't mean super spicy and meant more flavorful. I mostly agree, but I did notice the broth had a little heat, good chicken flavor, and probably some sichuan peppercorns because I noticed some tingle. The chasu slices taste good, but were a little dry-they must've used chicken breast. The egg was gooey. The noodles chewy. Bamboo slices plentiful (not surprised since they are canned). Worth the wait! This place was perfect for a drizzly Saturday afternoon. Limited menu, limited seating. During the Saturday lunch rush, we waited around half an hour for our ramen. Recommendations: Everyone seems to recommend the Red Tonkatsu, but I thought the regular Tonkatsu was much more flavorful. Found this place by chance while hitting up their neighbor so just had to also give it a try and sure glad I did! First off like many spots around the PDX everything is simplified and you order at the front counter and then find a table inside or outside. I'm a fan for a little spiciness in my ramen so went with the Tonkotsu Red Ramen which had a spicy (not overly hot) rich pork bone broth and the noodles were cooked perfectly al dente! The bowl came with slices of very tender chashu pork, vegetables consisting of bamboo shoots, green onions, wood ear fungus, and a soft boiled egg. The broth came out piping hot and I'm always a stickler when it comes to hot or lukewarm. A group sitting next to me said the spicy chicken karaage and their Tonkotsu Shoyu Ramen were very good too. Didn't wait in line very long but had to wait over 30 minutes for my single ramen to come out while I saw the people next to me get their two ramens within 5-10 minutes. Was not worth the wait considering I could get similar quality ramen for less of a wait and better service elsewhere. We had the great idea to get ramen on a recent rainy Saturday night. Apparently the rest of Portland did too, because this place was busy! There was a line to get the counter where you order, and then they quoted a 20 minute wait for food (though I think it ended up being a little faster). They bring the food out to your table number, and they're quick to bus your table when you're done to encourage you to head out, but staff are few and far between otherwise. Kinboshi ramen is in a great location in a calmer neighborhood outside of the main downtown area. They have lots of seating indoors and outside, great for large groups. I ordered the Tokyo shoyu ramen, which had a great lighter broth flavor, which I prefer when there's meat involved. The piece of tonkotsu was a bit small and the egg wasn't marinated but it was perfectly cooked. Expect to wait. For my group's order, it took about 30 minutes to get our food and their line didn't stop. Combined with a couple extra miles looking for a suitable primer, I wasn't sure I could make it home ok. (I pedal.) Coming up the Ankeny rise from SE 2nd, I saw this place. It had been well over a year since my last visit. I was so relieved! I dragged my bike-bag in, weighted down with a gallon of precious primer ($90/gallon) and some empty quart cans for long-term storage. The woman asked me if I knew what I want. "Water," I croaked. "I am seriously calorie deficient and dehydrated." Instead of shrugging and pointing the way, she was immediately sympathetic and nurturing. A glass of water, and a bowl of "regular ramen and a crisp beer" and some kind words and I was soon resolving those deficits. SHE WAS SO KIND!
