    I came here on a whim to order lunch and even though it was a bit of a drive the place is bright, fresh, vibrant, and fresh n a great location. I was quickly greeted and once it got down to brass tax, the menu was abundant and delicious. They have "pre-built" options or "make you own", and either way you cannot go wrong. Check this joint out

    The service person making the orders was very nice! Could tell enjoyed their job! Even told Dad jokes! Haha The bowl was yummy and full of protein. I got the Hawaiian Trio with Octopus. I saw another 2 enjoying their lunch who weren't sure what sauce they would like so the employee gave them a taster cup of each one to find their favorite! That was Nice!! Restaurant was small but modern and new!! They even cater large parties! Thought that was pretty cool to keep in mind for future. Unlike most poke places they also have chicken and tofu options to meet all dietary restrictions and needs!! Because I was wearing my work shirt - serving the Chandler-Gilbert community, I was given a small discount. That was much appreciated!! I will definitely come back. It's only 10 minutes drive from my site. Next time I was to try the Mochi and miso! I took mines to go this time.

    I just adore Koibito Poke. I love the freshness of the fish and veggies/toppings. I do think Koibito is the best poke spot in the East Valley easily. My favorite fish is the marinated tuna and I usually pair it with salad/brown rice. The toppings and sauces are so good too! They have great customer service on top of that. I tried their miso soup with tofu which was also good, soothing. They have available are mochi and teas/lemonades along with typical soda drinks. The ambiance is nice, clean and brightly lit. I look forward to coming back here always

    Small Poke Bowl w/salmon & Hawaiian tuna

    Clean shop and friendly owner! Stopped by here for the first time and got a small poke bowl (includes two scoops of protein). The fish seemed fresh and there were plenty of topping options. Majority of the toppings are similar to other poke places, but I did notice they have shaved brussels sprouts, which is something you don't typically see. My poke bowl breakdown: - Base: Combo (rice + greens) - Protein: 1 scoop salmon, 1 scoop Hawaiian tuna - Sauce: Koibito House + Citrus Ponzu - Toppings: edamame, cucumber, green onion, ginger, masago, cilantro, seaweed salad, crab mix - Dry toppings: furikake, fried onions I got a small bowl, which looked pretty small at first, but once you eat everything, it's actually very filling! Will be back :)

    Spam musubi is less than an inch thick. It should be at least 2 inches. And one of my orders didnt even have spam on it.

    I ordered off Uber eats and my sushi was really warm and smelt ate half and saw some stuff on the bottom that you only see with unsafe seafood, got sauce on the side and this is bad, hopefully I don't get sick

    Spicy crab and tuna bowl

    The food was amazing, some of the best poke in AZ that I've tried. The staff was even better. Kael and Mari were super nice and made the experience great. Will be coming back! The only thing that wasn't perfect was my avocado in the bowl was stiff so I had to take it out.

    Salmon & Pineapple

    I was in the Gilbert area and I was really hungry and really craving pokē, so I chose to go to Koibito since it is the only poke place I could find near this area. Unfortunately, I chose wrong. The bowl I ordered was NOT edible :( I stopped eating the bowl after only a few bites for several different reasons: * The rice was hard and chewy, likely due to it sitting in the cooker all day. * The pale yellow pineapple did not have much of a taste, but the little taste it did have was sour....not sweet and not juicy (like fresh/ripe pineapple should be). * The chopped cilantro had a lot of stems in it, which is honestly to be expected, but there was literally a stalk of the cilantro plant in my bowl (see photo). * I know that it can be difficult getting fresh fish to Arizona, but the texture of their salmon was firm, yet slimy? Not to mention that the color was a dull orange and NOT a bright pink or bright orange -- a big red flag for raw salmon (see photo). It reminded me of cat food so much that I actually offered a cube or 2 to my cat and he loved it (lol), meanwhile I am now dealing with gut rot. I wish I would have read the reviews beforehand and noticed that a majority of the 4 or 5 star reviews either only mention the customer service/the atmosphere, or it is that persons first time trying pokē. On the other hand, the reviews that are actually about the food are mostly 1 or 2 star reviews. So now I am very very hungry, very disappointed, and very sad about throwing away $18, especially because now I will have to spend another $18 getting food somewhere else :'(

The teriyaki sauce was pretty tasty. It wasn't the best teriyaki sauce I've ever had, but it's a lot better than Ono's Hawaiian BBQ (their chicken teriyaki is trash!). The service was good and fast! The inside was clean and tidy. Was it the best I've ever had? No. But it's good enough to share it with my friends, invite them to go, and go back myself. I'll need to try the chicken katsu and bbq short ribs next time.
