I enjoy adding different ingredients each time I visit because I want to see what taste well with one another, and they allow me to do that. The food is always fresh and delicious. No matter what I try, the food is always amazing! I like that they have music in the restaurant that is not loud and overpowering, so I can have a conversation with my mom when we go out for lunch . Kobito Poke is definitely a must try! This was my first time coming here, and I'm already looking forward to coming back soon. They have a wide selection of different types of protein, add ins, sauces, and toppings to choose from. I got the small, which is 2 scoops of protein. I highly recommend trying the Hawaiian Tuna, it was my favorite! They also have a lot of sauces that I have never seen at other poke places. Lovely place to stop and get some fresh poke your way! I build my own bowl you can choose based on, protein, add ons, and garnishes. They also now have miso soup. Every time I visit food has consistently been fresh, tasty, and the place is clean and bright. Parking is in front of the store and they have a restroom and some outdoor seating as well. Staff has always been courteous and helpful each visit. If you get the app there are perks that are pretty frequent. A great fresh food choice. read more

I just adore Koibito Poke. I love the freshness of the fish and veggies/toppings. I do think Koibito is the best poke spot in the East Valley easily. My favorite fish is the marinated tuna and I usually pair it with salad/brown rice. The toppings and sauces are so good too! They have great customer service on top of that. I tried their miso soup with tofu which was also good, soothing. They have available are mochi and teas/lemonades along with typical soda drinks. The ambiance is nice, clean and brightly lit. The service person who took my order was super friendly and helpful. She explained how the sizing works, I love that the size you choose dictates the amount of protein scoops vs just being more rice. I ordered the small (2 scoops of protein) and the ratio of rice to protein to toppings was perfect. All of the veggies seemed fresh, one of my favorite options was the shaved Brussel sprouts. I have been waiting for one to open up close to my house instead of having to drive 10+ mins to one , and when I first saw signs this was opening up on the corner of Gilbert and Warner, I immediately looked up the other locations to see the reviews/photos, and let me say, my expectations I built up, I was not disappointed when I got to try for myself! Today was the first day I saw a Now Open sign and I knew that was what I was going to be getting for lunch. Walking into the space, it's nice and bright, very clean and seating inside. I was greeted immediately walking in by the nicest, sweetest and happiest guy (I'm sorry I wish I knew your name!) He explained the menu to me with great detail , and even said if I wanted to try any of the sauces, I could . He was not only friendly and knowledgeable with his job, but he also made great nonbusiness conversation and genuinely seemed happy to be there and I love seeing that in a work place . I created my own bowl. I got what I typically do at any poke place, rice/ salad mixture with 2 scoops of salmon and 1 scoop of tuna. What I love about here, is they actually weigh out your protein to make sure you are getting the oz's you should for what size bowl you order; that way, you don't feel you are getting gypped out of any protein. I also love that the seaweed salad, crab salad, masago (or cucumber salad) is not extra cost. However , if you want extra scoop of any of those then there is a cost. With my medium size order and the scoop of crab salad and seaweed salad , it was plenty (and I eat a lot). I always get ponzu sauce on my bowls, I did however, take him up on his offer if I wanted any other sauces to go (there were so many good sauces to try) and tried the wasabi one and it was sooooooo good! I will now always get that sauce in addition to my ponzu. I have tried poke at a ton of different places. As excited as I was for one to open by me, I really was hoping it was going to be good. I could not be MORE HAPPY that this is the place that's closest to me now because it is top tier and one of the best poke spots I've had, in service and food quality! So DELICIOUS! Very inconsistent. I love poke and this place is right in my direct daily driving route so it's definitely on my mind often as my go to. Flavor and quality of the food is very good, now to the annoyances... my daughter always gets the kids bowl with crab as the protein option which can only ever be done in store but today they refused to allow that without paying extra. My husband only gets the chicken bowls and is given the choice between 2 types and I was told in store last month by a new employee that it could only be grilled chicken and not Asian chicken. Certain perks can only be in store like getting the free kids meal ice cream mochi which is why I thought the crab protein option was the same getting regular instead of spicy, but that apparently isn't the case. I was in the Gilbert area and I was really hungry and really craving pokē, so I chose to go to Koibito since it is the only poke place I could find near this area. Unfortunately, I chose wrong. The bowl I ordered was NOT edible :( I stopped eating the bowl after only a few bites for several different reasons: * The rice was hard and chewy, likely due to it sitting in the cooker all day. * The pale yellow pineapple did not have much of a taste, but the little taste it did have was sour....not sweet and not juicy (like fresh/ripe pineapple should be). * The chopped cilantro had a lot of stems in it, which is honestly to be expected, but there was literally a stalk of the cilantro plant in my bowl (see photo). * I know that it can be difficult getting fresh fish to Arizona, but the texture of their salmon was firm, yet slimy? Not to mention that the color was a dull orange and NOT a bright pink or bright orange -- a big red flag for raw salmon (see photo). It reminded me of cat food so much that I actually offered a cube or 2 to my cat and he loved it (lol), meanwhile I am now dealing with gut rot. I wish I would have read the reviews beforehand and noticed that a majority of the 4 or 5 star reviews either only mention the customer service/the atmosphere, or it is that persons first time trying pokē. On the other hand, the reviews that are actually about the food are mostly 1 or 2 star reviews. So now I am very very hungry, very disappointed, and very sad about throwing away $18, especially because now I will have to spend another $18 getting food somewhere else :'( read more

The staff was very kind and the drinks were great. They have these tractor drinks we never saw before. We tried the cucumber and strawberry dragonfruit. I highly recommend the drinks. This is my go to poke spot in Gilbert. As someone who grew up next to the Oregon Coast, I can tell when fish is fresh and when it is not. Sometimes when living in Arizona, there are lots of sushi or poke places that miss the mark but not koibito. Their fish is always fresh and they have great choices of fish, sauces and toppings. On top of it, every time I go into their location, their customer service is awesome. I am always given a personalized experience with great conversation and advice when needed.
