Let us begin with parking. You have 2 options. Street parking and paid public garage parking. Luckily this restaurant is attached to the paid public garage. I believe it was about $14-$15 dollars for about 3 hours. That's a steal. Then again I am from Sam Diego, CA and public parking downtown there will get you 2 hours for about $20. Far from most of the restaurants. When my boyfriend and I entered the restaurant we were stunned with how elegant the ambiance was. Especially for the prices this restaurant was displaying online. It was the type of place a business entrepreneur would take his friends to. Except I am most definitely not an entrepreneur and I do not have any friends. My boyfriend and I were greeted by a kind woman (the host, in which I am sorry but I did not catch her name. Although I do know she is engaged and getting married soon, congratulations, again!) who then led us to our table. No reservation and no long wait time. A perfect Saturday evening. We had either the option to sit in the dining area but, if we wanted to eat Shabu hot pot, it would be bar seating only. We opted for the dining area. My boyfriend ordered us the unagi crispy rice as a starter. What a fantastic choice that was. A modern take of a sushi roll. The crispy rice elevated the experience to the max. My boyfriend and I both ordered a side of rice along with 3 different Yakitori skewers. Wagyu Short Rib, Pork Belly and Jumbo White Shrimp. The shrimp was cooked perfectly. The wagyu melted in your mouth and by the grace of all that is holy, the pork was cooked right and packed with so much flavor. Each skewer came with a purée sauce pairing.The purée sauce that came with the pork skewers was out of this world. We wanted to put it on everything. Before we finished eating our lovely waiter, Daniel, asked us if we had room for dessert. My boyfriend and I usually do not get dessert but since the rest of the experience was amazing we decided to go with the Ube Banana Pudding. When my boyfriend and I took our first bite out of the dessert we looked up at each other with wide set eyes. "Holy -curse word- this is one of the best things I've ever put in my mouth." my boyfriend expressed. While we were wrapping up we were greeted by the owner, Nick. I love great food. I search for it on purpose. Last week, I got an inside look at the creative genius behind Kosho, and let me tell you, the chef's descriptions didn't even do the food justice. The flavor profiles will blow you away. The location feels very trending, with the Ole Smokey Distillery just down the street. Was so excited to check out this place! We arrived a little late to our reservation and they were still kind enough to accommodate us. To start off, our server was phenomenal! Had all the recommendations and was super sweet. To start, my friend got the mezcal drink and I got the margarita, both of which were delicious. For food, we split the crispy rice, chicken kaarage (spicy), and the pork bao. The crispy rice was good but we had to deconstruct because it was too big for individual bites. The chicken was a subtle spicy and was so good. Our favorite was the bao. Usually not a fan of bao because the ratio of meat to bun is never right (always too much bread). This one was legit filled with meat and was perfect - still thinking about the flavors today. Overall highly recommend checking out. Went here for dinner and had a fantastic experience from start to finish. The food was outstanding -- standouts for us were the edamame hummus, pork bao, drunken mushrooms, and garlic noodles. Every bite was packed with flavor and beautifully presented. We also tried the cucumber sunomono, wagyu croquettes, and NY prime. Everything was delicious, though the croquettes were a touch on the dry side -- thankfully, the accompanying sauce brought it all together nicely. Incredible dining experience! From the ambience to the authenticity and the quality of the ingredients, everything here is top tier. We were in town for a conference and decided to stop by on a whim after a long day of travel, tired, hungry, and with a cranky toddler in tow. David, our server, was an absolute gem and made us feel so welcome from the moment we sat down. I parked myself at the bar, owner Mr Nick, promptly greeted me and eloquently pitched me on his menu. (Forgive me on actual names) went w/ cucumber salad, fricking amazing. Then, washed the pork belly skewer & Unagi rice thing down w/ hot saki & beers. Kudos to Chef Sean and his team, and server my server guy Mr Logan (bless his heart) entertained my 1000+ questions on best Nash hotspots. Excited for a new Asian place in Nashville! My friend and I went out on a Tuesday night and were greeted by enthusiastic and attentive staff. I think the food was pretty decent for Nashville/southern standards (although admittedly we ordered too much off the main menu and didn't get to try the hotpot), and we ended up paying ~$160 for several plates and a drink. 5/5 for service, 4/5 for food taste (wagyu croquettes were a bit dry, garlic noodles had excellent flavor but a bit mushy). I felt like the spicy chicken kaarage (asian fried chicken), although advertised as "fire", was not quite spicy enough. But overall definitely a southern/american spin on Japanese food as advertised, maybe still working out the kinks as we came their first week of opening on a weeknight. Newly opened Japanese restaurant (opened 3.7), which had just been open for a week. I specifically went there for their sukiyaki. Even though it's only been open for a week, it's already super popular--I could only get a reservation at 8:30 PM. I checked next week's schedule, and all the good time slots were already taken. The total cost was about $50 per person (I didn't order alcohol because I forgot to bring my ID after working out). I noticed that the restaurant's name, "Kosho", was written on the entrance. In Japanese, "こしょう" (koshou) usually means pepper. However, the restaurant's name is spelled as Kosho, it's a bit confusing. (If anyone can explain, let me know!) Alright, now for the recommendations Appetizers Spicy Tuna Don: They give you a huge bowl of rice and tuna! The rice underneath was warm and fluffy, while the fresh, well-seasoned tuna sat on top, garnished with shredded nori and sesame seeds. Super tasty! Unagi & Crispy Rice: I didn't order this one, but I overheard people at the next table saying it was really good. The appearance looked great too! Yakitori (Grilled Skewers) I ordered three chicken skewers with green onions in the middle--delicious! Very authentic Japanese style. To be honest, it tasted almost the same as what I had in Kyoto back in January. Japanese Hotpot (Sukiyaki) Process Step 1: Choose the broth Options: Miso broth:Can get salty after cooking for a while. Sukiyaki broth:Starts off with a great balance, but if cooked too long, it gets too sweet. Kombu dashi :Think of it like oden broth, light and mild. We chose sukiyaki broth--perfect at the beginning, and the vegetables absorbed the broth really well! Step 2: Choose your protein We went with NY Strip steak. This step determines how much you'll spend-choosing Wagyu will be way more expensive, while just getting vegetables is much cheaper. The beef was incredibly fresh, sliced right before cooking. Dip it for just 5 seconds, and it's perfect! Step 3: Choose your rice Options: White rice or brown rice. We went with brown rice. Even though we only ordered one hotpot, they still gave us two bowls of rice. Step 4: Vegetable platter This comes by default and also includes a portion of noodles. Step 5: Dipping sauces You get four different sauces: Sesame sauce Yuzu sauce Minced garlic Chopped green onions Here's my favorite way to eat it: For the meat, I like to dip it in garlic first, then into sesame sauce--amazing! For the veggies, they absorb the sukiyaki broth so well that I usually eat them as they are, without any extra sauce. For the noodles, after boiling, I dipped them in yuzu sauce and added some chopped green onions-classic Japanese zaru-style dipping noodles! Extra Dish: Kosho Garlic Noodles We were afraid we wouldn't have enough food, so we also ordered the Kosho Garlic Noodles. It was okay-had mushrooms, shrimp, and a strong buttery flavor. Not bad, but nothing extraordinary--just met expectations, not something I'd strongly recommend. Dessert We were too full for dessert. The restaurant offers a special dessert each day--today's was matcha cheesecake. I was actually curious about another one: Ube banana pudding. This spot is so warm and cozy with the soft lighting and candles on every table. It's a great spot for a romantic date night or catching up with a friend over good food and drinks. Free street parking is a bonus too. The server had some great food recommendations and we ordered all of his suggestions. It is served family style and comes out as it is ready. We started with the seared hamachi and it was super fresh and full of flavor, and the jasmine rice on the side was the perfect pairing. We ended up dumping our rice on the leftover hamachi sauce because it was so flavorful and we didn't want it to go to waste. The broccolini with red chilies had the perfect crunch and crispness to it and every once in a while, you would get a spicy bite from the seasoning. The lamb chops were cooked to perfection and the green sauce tied it together perfectly. The main dining room includes an open kitchen which is where the shabu bar is and just down the stairs is the cutest bar nook with additional banquet seating (perfect for a cozy date night) as well as a cocktail bar which is first come first serve!
