I was honestly skeptical at first. Jinbei Zane operates out of a food hub with other restaurants, kind of like a ghost kitchen where you order through a kiosk and retrieve your food from a locker. I also placed my order about an hour before closing, so I wasn't sure what the quality would look like. This review is based on ordering through DoorDash. The menu is easy to navigate on third party apps. Every roll has a clear description of what's inside and on top. I ordered the crispy rice ($6), eel roll ($12), and spicy seared yellowtail roll ($16.50). Everything arrived packaged neatly in plastic takeout containers. They included plenty of soy sauce packets and napkins, but no utensils. The crispy rice stayed impressively crispy despite delivery. That alone won me over. It's topped with spicy tuna, jalapeños, avocado, eel sauce, spicy mayo, and sriracha. There was a perfect amount of topping on each piece and the flavor was balanced. For $6, this felt like a steal. The eel roll was my least favorite of the three, but that's only because the others were so strong. It's a simple roll with eel, cucumber, and avocado inside, topped with eel sauce. The ratio was perfect and everything tasted fresh. Even an hour before closing, the rice was cooked properly, the cucumber was crisp, and the avocado was still bright green. The spicy seared yellowtail roll completely blew me away. Inside is spicy yellowtail, avocado, and jalapeño. On top is seared yellowtail, spicy mayo, eel sauce, and sriracha. That sear added so much flavor without overpowering the freshness of the fish. It was also rolled tightly and cleanly, so each piece held together perfectly. No falling apart when you pick it up. The portion for the price felt fair, especially for the quality. Overall, I was genuinely impressed. For a late night ghost kitchen order placed close to closing time, this exceeded my expectations. I will definitely be coming back and I hope they keep this same level of quality.
