I started off with the fried calamari and arugula salad as my appetizers. They were good, but nothing special. I would get these again if I were dining with a large group. As for my main dish, I got the Agnolotti with ossobuco and bone marrow. The pasta was cooked to perfection, but the real star of the show was the Salsa Verde sauce which was lacy with flavor and had a refreshing flavor. I ended off the meal with their amazing Tiramisu. It was a very simple tiramisu with the base being a coffee soaked cake topped with dollops of mascarpone and coco powder. The service I think could have been a bit better. The servers were nice and helpful, however the main dish did take quite some time to come out. Overall, the food and ambiance of the restaurant were solid, but the service could have been better. What to improve? Food and service. My husband and I initially ordered the gnocchi, the vongole pasta, the arugula salad and the grilled calamari. For drinks we we had the Hugo spritz, clasico spritz and Negroni First when the server brought us water his thumb was on the opening of the water bottle so that was gross. I should've taken that as a sign that things are about to go downhill. That's just basic hygiene don't put your fingers where customers drinks will come out of. Second when the food arrived the bread was cold, arugula salad dressing was too sweet and the calamari was unseasoned. Only the veggies underneath the calamari had seasoning. Like how did you miss the calamari on top? At this point we probably should've canceled our orders but my husband being the perpetual optimists states that maybe the pasta will be good since that's what they are known for. So I acquiesced against my better judgment. We waited patiently for the pasta. This whole entire time my husband and I started building a stack of used plates so when the food arrived the server will have an easier time putting down the plates. Did any server come by to pick up the tower? Nope. Hubby had to flag a random kitchen aid/helper to take it off our table. The vongole arrives and my husband immediately digs in and was happy with it. Texture Al dente perfection, vongole nicely cooked and the sauce was delish. Then comes my gnocchi and I was super excited as we heard people rave about it. The portion size was good, smell was good then comes the taste test. The gnocchi texture was mush. Like literal mush. Like stick to your teeth, have to scrape off with a fork sticky mush. So I sent it back and asked for a spaghetti and meatballs instead. By the way this whole entire time no one has asked us if the food came out alright we had to flag someone to come get the mushy gnocchi. Thankfully the spaghetti came out in 5 min. I was a bit surprised at how fast but my husband said fresh pasta cooks much faster so I said ok. I take a bite out of the noodles and it was a little undercooked but that's ok. I'd rather have it a minute undercooked than a sticky mush besides I know the residual heat from the boiling and the sauce will keep cooking it. I was not happy but it was starting to look better for me UNTIL I bit into the meatball. A cold center. So I thought am i hallucinating so I asked my husband to bite it and he said yes it's cold and not to eat it anymore because I might get sick. At this point im hungry AF so I just ate the pasta and pushed all the meatballs to the side. Did any server come by to check if the pasta was ok? Nope. Did any staff notice that the food and drinks were not being eaten nope. They were too busy chit chatting with the bar staff to do any actual customer service but whatever I digress. We flag a server down and I told him hey the Negroni is extra bitter I think the bartender overdid it with either the Campari or the bitters and I said we don't mind paying for it I'm just letting you know. he said ok I will tell the bartender. Server goes to the bartender and you hear her talking smack loudly about how she made it right and I don't know Negronis mind you I used to bartend and manage a restaurant soooo this is looking even worse so they're not going to remake it. Fine. Just bring us the bill. The bill arrives and there is a mandatory 18% gratuity charge. For what?? Service charges are legal in California but not gratuity charge. It's supposed to be labeled service charge not gratuity. Am I expected to tip 18% for subpar service, uncooked meatballs and a gross Negroni? Nah you must be jokiiinnnnnng So we wait for the server to return. He doesn't. We wait a while and still no one came to get the bill. I get up to find our server and tell him remove the mandatory gratuity that's illegal for small parties and it's not a service charge. He said he'll go get his manager. So I went back to our seat and waited and waited some more until the manager finally comes back and he asks me what's wrong. As I initially tried to explain the issues with the food and the service he cuts me off to explain that as a manager he needs to protect his staff but also take into account customer service and that the current staff still needed more training and I said that's fine I understand since I manage a restaurant as well and then I proceeded to explain the rest of the issues and explained to him that we are going to tip what we think is deserved we were not going to leave it blank but I think 18% is ludicrous for what we experienced that night. He apologizes and said he will remove the mandatory gratuity and he did. Was the Negroni still on the bill? yep. Did we tip? Yep. Was our anniversary dinner ruined? Yep. Will we go back again. My wife and I recently went to a show at the Million Dollar Theater and had planned to just grab something quick at Grand Central Market beforehand, but due to the heatwave we've been having we headed across the street to Maccheroni Republic instead. I'm so glad that we did! We ordered the Meyer Spritz (delicious and perfect for a hot day!) and a glass of Sauvignon blanc wine to start, followed by the Insalata Mista Croccante alla Cesare (perfect to split and great texture/flavor), the Maccheroni Stellari (long, star-shapped pasta in a yummy arrabbiata/garlic sauce) and the Ravioli Di Zucca (ravioli stuffed with pumpkin purée in a white truffle/parmigiano sauce). We both basically wanted to lick the plates the pasta/sauces were so good! We barely had room for dessert, but couldn't say no to an espresso martini and the ricotta cheesecake...both of which were delicious as well! My go to Italian eatery in dtla. Decently priced and eclectic location. I would've gave 5 stars but the server this time was subpar but the food spectacular as always. Ordered moscato which was crisp and semi sweet. Usually after or before we order, complementary bread is served before appetizers or meals. However, our server was not attentive to us. I had to ask another waiter whom really served us all evening. We waited a while before I even asked. Then the eggplant appetizer was served. It's really cheesy, my least favorite yet, still delicious. After, our entrees were served which was Linguine al Frutti di Mare and boar bolognese. Again, I had to ask another server for Parmesan attention whom served us bread earlier. He was really professionally courteous to us. The frutti di mare was a different dish than my usual, I enjoyed it and Parmesan helps make the dish. Light and savory. The bolognese wasn't served with ground boar, seems a different perpetrator this time but still classic taste. All and all, this still my go to Italian in La so far. Highly recommend but make sure the waiter serves bread and Parmesan even if you don't want it. I wish my gratuity went to the other server because he actually did his job. I would've gave 5 stars of the our server was more attentive. Next time I'll make it clear with management where my gratuity should go to. The water closet are inside next to kitchen/bar entrance. Used to Love It--Not Anymore Visited on a Sunday Afternoon 6pm Maccheroni Republic used to be one of our favorite spots for Italian--fresh pasta, generous portions, and great value. Unfortunately, that value has significantly declined. Prices have gone up, which is expected in this economy, but food quality, portion sizes, and service have all gone down. The pasta was still good, but service was lacking. Our server only came by 2-3 times including taking our order, and we had to flag someone down just to get bread. The staff are clearly doing the best they can, but they're stretched way too thin. What used to feel like a relaxed slightly upscale taste of Italy, now feels a high paced Italian Dennys. An automatic 18% gratuity was added to the bill--buried in fine print at the bottom of the menu. I asked for it to be removed so I could tip based on the service, but it wasn't. At that point, I just signed the check and left, disappointed. The burrata, once a standout dish, used to come with a full ball of cheese at the center. Now it's four cold slices of bread with a noticeably smaller portion of burrata on each. It felt like a shadow of what it once was, now it's clearly just a bruschetta. Food: The star shaped pasta (can't recall the actual name) was decent and slightly spicy. It was lacking something that made it stand out the noodles weren't enough. Not bad but I wouldn't order it again. 3.5/5 the Rigatoni Pom'Amore was the star of the dinner it was delicious and the creamy mix from the burrata really balanced the dish. I would order this again 5/5. The garlic bread was underwhelming. Every one of my 20 or so meals have included the following features: *Tasted amazing *very high quality fresh ingredients *Very reasonable prices considering the quality *Excellent customer service from the staff *Clean and inviting public spaces *Great atmosphere and energy once seated Some things to consider *I don't believe they take reservations and wait times can be long. But, Grand Central Market is right across the street. Great for getting a little appetizer while you wait. Or the Bradbury building is worthy of a stroll through. *The streets and sidewalk in this area of DTLA can feel a bit sketchy. But I've never had an issue *Traffic on the freeways and streets around DTLA are always jam packed and are overwhelming if you are not used to driving in areas like this. I really loved out server, he went above and beyond explaining and recommending the wine selection, which we really appreciated. Let's start with the gnocchi, which arrived with the soft, pillowy promise of comfort and left with the adhesive integrity of a Post-it note. I took one bite and it latched onto the roof of my mouth, stuck for minutes. For a brief, intimate moment, it was just me, the gnocchi, and the dawning realization that I might have to introduce it to my dentist as a long-term guest. Then there was the mac and cheese, which I ordered under the assumption that it would taste like mac and cheese. Instead, it delivered a flavor profile best described as "flour and water, thoughtfully warmed." I kept waiting for a note of cheddar, a whisper of cream, a single molecule of joy, anything to suggest dairy had been within the same ZIP code. But no. This was mac and cheese in the same way a bathtub is a swimming pool, technically related, emotionally disappointing. Maccheroni is a gem in the heart of DTLA the lighting decorations on the outside and the interior create a very classy vibe and the staff are so friendly and helpful :) Some of my top pics are the linguini ai frutti de mare, the Bianci & neri, the agnolotti do osso bucco, and the squid ink pasta (Cuffie al nero di sepia) a lot I know ‍ for desserts, you can't go wrong between the Pandora bread pudding, flourless chocolate cake, and the tiramisu! This spot is perfect for a date night, catch up, or just if you're craving some bomb Italian food. My friend and I took Metro to Maccheroni Republic and arrived as the first guests at 11 am on Sunday. I excitedly planned to eat here because I admired the walkable alleyway's beauty every time I passed by during work breaks. The outside patio, landscaped with greenery and trees, emanated a cozy ambience. They also had patio heaters on standby during this cold fall morning.   While ordering, the table had a QR code that allowed me to view pictured menu items. I ordered the rigatoni pom'amore ($20) and garlic bread appetizer ($9) The rigatoni tasted wonderfully al dente mixed with the creamy tomato sauce. The burrata cheese felt soft and reminded me of mozzarella. I'm a fan of spices on pasta, and the basil complemented the dish nicely. As for the garlic bread, I dipped it in chili oil and enjoyed its savory flavor and not-too-crispy edges. Overall, Maccheroni Republic served good portion sizes of amazing quality at a reasonable price for Downtown. I felt lovely after finishing my food at a place that I eagerly awaited going to for months. I'm glad that my friend enjoyed the experience and liked pasta after taking a few bites. With quality service and great appetizers and meals, I look forward to inviting friends and family to revisit.   Travel note: I recommend taking Metro to Maccheroni Republic to avoid the hassle of driving and parking in Downtown. People can take Metro lines 4, 45, 30, and 40 to the Broadway/3rd stop and lines 30 and 40 to the Broadway/4th stop (right in front of the restaurant). We took Metrolink to Union Station then rode the Metro A/E (Regional Connector) line to Historic Broadway Station at Broadway/2nd. They ADD a TIP to your credit card after you leave. We left a cash tip and they added another amount to the credit card. I submitted a complaint through my bank account because I had proof of what was originally charged. The waiter barely went to us. Took our order and we never saw him again until we asked for the bill. The lady brought us our food and extra bread and was nice and courteous. We left 16.00 cash tip and they added another 15.00 to the card. I signed our bill for 88.00 dollars. If you eat here pay with cash or watch your bank account. They will change the amount later. FOOD We got the Calamari in Zimino (grilled squid over Swiss chard) and it was SO good. I've never had squid that tender before.. however, I did find a long hair in the Swiss chard. WOW. This place is IT! It's crazy how your experience changes once there's good service. We fortunately got the owner himself, and it was so great to be served by such a humble and funny man. Food was still seriously so amazing. The zucchini blossoms were a seasonal item, and they exceeded my expectations. I've had zucchini blossoms in the past that weren't good, so I came into this as a skeptic but walked out as a lover of this appetizer. As for my entree, I ordered the Boccoletti al Pesto e Ricotta this time around. It was chewy and the perfect balance between herbaceous and creamy. What a great dish. The Ricotta Cheesecake was especially yummy as well. Not too sweet and reminded me of a Japanese Cheesecake. At the end of the day though, the Bianchi e Neri is still out of this world. this was a nice italian restaurant that i would recommend to people, but it just wasn't 100% my taste. came around 6:30 on a friday night with one other person, there was about an hour wait total. grand central market is nearby, and so is the angels flight railway, which is fun to check out while waiting. overall, the food was on the salty side for me. i know i generally like things less salty than average, so i chalk that up to my own taste rather than the restaurant. things were still very tasty! - fried calamari: lowkey the best calamari i've ever had. super light and crispy. the only thing was that there was a lot of oil pooled up at the bottom, but that's also probably why it was so good - squid ink risotto: honestly thought this had only the three big pieces of scallops, but there were tons of scallops all throughout the dish which i thought made it so worth it! very tasty, but a bit salty for me - pom'amore (?): honestly i forget the other pasta we got but i found it equally salty - tiramisu: good but kind of felt like it wasn't anything super special the service was great. we felt like our server was super passionate about maccheroni republic, he kept saying how much he loved everything. it's really great to see such enthusiasm as you're dining somewhere. the vibe is relaxed but nice, not super crowded or loud but there is room for groups. i saw mostly pairs around me. parking - it's downtown, so not the easiest but you can get lucky with street parking sometimes. best of luck haha. read more

They handcraft their pastas fresh daily and even have a little pasta shop towards the back of their restaurant! Came with five friends for dinner. Two sat inside; three of us sat outside with heat lamps. No problem, we told the hostess who took our cellphone numbers per party. No reservations taken. First-come, first served, hostess notified us to appear in five minutes. Pleasant ambience outside and inside. Everything was delicious. We had the signature dish Bianchi & Neri (Delicious, but after a while, the cream sauce was too heavy for me. Good to share though), Squid Ink Risotto, Agnolotti Di Ossobuco, Linguine Vongole, Cannoli and drinks. When one of us didn't care for her ossobuco dish, our very patient server took it back to the kitchen and gave her another dish, Linguine Vongole, that she ordered, liked much better at no charge. Water and bread (even with refill) was free. Great service, wonderful ambiance, reasonable prices. Only one restroom. Street parking where you can get to from Broadway or Spring.
