She is an absolute gem -- funny, super knowledgeable about the menu, and genuinely attentive. Her energy makes the whole experience even better. We'll definitely be asking for her next time too! We kicked things off with the Jumbo Lump Crab Cake, which was nicely done with a great texture. But the real standout starter was the Beef Carpaccio -- this is a must-order for us every time. It's easily one of the best carpaccios we've had anywhere. Perfectly sliced, beautifully seasoned, and full of flavor. For our main, we split the massive 24-ounce Bone-In Ribeye. It was absolutely amazing -- cooked perfectly, incredibly tender, and packed with that rich, beefy taste you hope for in a high-end steak. We paired it with just one side: the Potato Purée. It was creamy, smooth, and excellent -- the ideal companion to the steak. We skipped dessert this visit but did try the Boston Inferno cocktail. It was delicious and a fantastic way to start the meal -- bold, well-balanced, and very enjoyable. You could really feel the great energy in the restaurant--the tables were nearly full, and a cheerful hum of conversation filled the space. Plus, the bar area was completely packed, making it a lively bustling energetic evening. Our server Steven was great! He brought great energy and was attentive and welcoming. His knowledge of the menu and the night's specials was much appreciated. The restaurant provides a trio of complementary fries with sauces to start your evening. We also ordered our usual Sauvignon Blanc and Old Fashioned refreshments. We kept it simple on this visit, my wife ordered the miso-glazed Sea Bass and I ordered the 14 oz Australian Lobster Tail with clarified butter. The Sea Bass included bok choy, honjimeji mushroom, and pea purée. The fish was perfectly caramelized, with a slightly charred exterior and a buttery melt-in- your-mouth interior. The Australian Lobster Tail was perfectly broiled opaque with zero translucency. I added grilled prawns as an enhancementbto the lobster tail. We also ordered a side of asparagus for the table. We ended dinner with the beignets for two dessert featuring three sauces; macallan butterscotch pudding, chocolate pot de crème, and vanilla crème brûlée. One word, delicious!!

We made a reservation a few days prior to our visit using Open Table. In fact, we scored 1,000 points for that particular reservation. You can also use the website to make a reservation. The food was good, the service was good, and the experience was good. Staying at the Mandalay Bay with The Hotel Collection reservation, we received a $100 credit which we chose to use at StripSteak. We both were craving some good steak, and upon sitting down, we realized we could participate in Las Vegas Restaurant Week, which for $99 per person, you could receive three separate courses. The first course included a choice between a mixed green salad, braised pork belly, caesar salad, or shrimp cocktail. The second course included a choice between a 6 oz center-cut filet mignon, Atlantic salmon, Mary's free-range roasted chicken, and a cowboy ribeye for $24 extra. The third course included a chocolate molten cake sundae. As the entrees didn't come with sides, we ordered some whipped potatoes. What we didn't expect was a complimentary order of a trio of duck fat fries. I personally ordered the Las Vegas Restaurant Week special with the caesar salad, the 6 oz center-cut filet mignon, and the chocolate molten cake sundae. The caesar salad tasted like a traditional salad but came with tempura white anchovy, which I didn't know what it was until after I tried it. The filet mignon was ordered medium-well but in future thought, I should have done medium or medium plus as it was too well done at medium well. The dessert was delicious though quite filling. Everything was still tasty though I may make orders differently in the future. StripSteak Las Vegas is considered to be a modern American steakhouse combined with an inventive and highly curated menu offering guests the best seafood and signature cuts of premium beef as well as classic favorites. We didn't do any of the tasting menus because we're a little picky and there were three of us - weird number. I pushed the two guys with me to get the tomato and melon salad. OMG this is incredible. Everyone did a "sit back in your seat" moment. And you need something this fresh and delicious for all the richness to come. We shared the lobster pot pie and it was again, out of this world. It comes with a show and you WILL be fighting your dining companions for the crust. The bread with a trio of dips was fantastic and my extra dirty martini was filthy and served with a bleu cheese olive. Next were some perfectly fresh scallops. And let me say that the kitchen plated everything exactly for sharing amongst the three of us. So appreciated. The service here does not miss a beat. The steaks looked great with char grill marks but from there that's where it goes down hill. The NY was more tender than the ribeye!!! How is that possible?! We asked both steaks to be cooked medium rare and they came out closer to medium which was fine. The char was the first thing you tasted and there was little to no seasoning and we had to ask for salt. Had a third left on the ribeye and told Alan our server the issue with the steaks. I did tell him I didn't expect anything but I wanted to make sure other guests don't have similar experiences. The service provided by Alan and the team were great. The starters and desserts were fantastic but the chef grilling the steaks needed more experience because it ruined what was a good experience otherwise.
