Holy phenomenal pho! Amy and her team have done a wonderful job curating every part of this restaurant and bar, right down to the music. Arrived a bit before they opened and was still welcomed at the bar to wait til they were ready for their Monday. Ordered the normal sliced rare beef I always enjoy when I get to have pho. Learned about Amy and her journey to this location on their menu while I waited. As the menu perfectly stated 'it takes hours to make and seconds to enjoy.' I could have inhaled it within seconds. I'm normally ok with leaving a cup or two of broth behind when I'm done but I had to take it home with me for my drive back. Midtown Pho was pleasantly delicious! I was not expecting such authentic homemade tasting Pho. My partner ordered the Pho and he even mentioned it tasted like home. I ordered the grilled pork and it was great to see that there was so much meet with the order. Having a lot of meat is a first that I have seen in Vietnamese restaurants. TLDR; one less star for how long it takes the food to come out, which is honestly only a con for when you're eating out with a toddler. My husband actually doesn't mind the wait as he says it's proof that the food is freshly prepared when ordered. We rank the broth in our top five pho picks! We always order the brisket pho, and the flavor has always delivered and hit the spot. It's what we imagine and think of when we want pho, and we've never been disappointed! So far, the best nem nuong in the Triangle - more complex than spam, a little fermented, and accompanied by some not-too-sweet peanut sauce. I also thought their pho was pretty good - some depth to the broth and beef cooked JUST beyond raw, still tender, but not bloody. The bun bo hue, conversely, was unrecognizable as bun bo hue since it didn't have most of the standard ingredients or depth of flavor to the broth, but I guess the menu DID warn me by saying it contained 'beef, pork, and ham' with no mention of knuckles or blood cubes or anything like that. I am always on the hunt for a modern yet authentic Vietnamese restaurant. I was pleasantly surprised with this place! It's nice enough that I would not feel bad recommending it to friends who haven't tried Vietnamese before, but can rest assured they will have quality food. The prices are probably a bit higher than my parents would want to pay, but I think many millennials would be just fine with the prices in exchange for better service/ambiance. I liked the variety in the menu and was excited to see Banh Xeo on there! I am curious about it! Everything we ordered was tasty, though I do think some of the dishes could be improved upon. For apps we tried the soft shell crab, and it was fantastic. I mean it's soft shell crab, you cannot go wrong. I also wanted my husband to try the Fresh Pork Sausage Summer Rolls (Nem Nuong). It was refreshing, fresh, and delicious. My husband also ordered a lychee cocktail, and it was just ok. Tasted pretty artificial and overly sweet. For our meals I had the Combo Pho and hubs had the Bun Bo Hue. I personally thought the BBH was lacking some authentic fishier flavors but my husband enjoyed it. I am not sure I would ever order that dish here again unless I was desperately craving it. The pho however was great! I don't think you could go wrong with any pho variation here! Garnishes come out separately, you top your bowl as desired. Broth is fragrant, flavorful, and just fatty enough. The noodles were not clumped horribly together or broken. So delicious!!! I stopped here with a friend before we went to the Mitski concert at the Ritz just a short walk away. I'm still really not comfortable eating inside restaurants, and not very many people were wearing their masks, but the service was so quick (with masked servers) that overall I felt alright about it. The martini was absolutely delicious--I absolutely love lychee and the flavor was appropriately prominent :-) The pho was also amazing. Got to go here and the place was packed on a weekend. I would definitely recommend calling ahead for to- go orders, but I should've known. Got the bun bo hue and it was just as good as when my mom makes it, so I knew this place was legit. My friends got the chicken pho and the spring rolls and everything was authentic and delicious. I think this is my new go-to Viet place and I appreciate that they have dishes on the menu that most other (not as authentic) places don't, like the banh xeo and broken rice plates. I'd give it 4.5 stars. I think it's one of my favorite Vietnamese places here so far. As a Vietnamese person, I often don't crave pho but rather I crave everything else. The pho AND especially the bun rieu here are some of the better ones I've tried in the triangle, and the bun rieu is a big portion. Vietnamese specialty noodle dishes such as bun rieu and bun bo hue are hard to get right because they require so many ingredients to make the soup and then so many ingredients to serve it with. The crab cake pieces in this one are delicious and I love that they put so many vegetables and tofu and crab cakes! I've gone back multiple times for it and my partner has gone back multiple times for their pho. As with the majority of Vietnamese-American restaurants, you won't always get the special herbs that pair with the special noodle dishes. I haven't tried anything else but plan on it one day! Such a gem, tucked away out of sight! Came here randomly since it's close to the Ritz and was completely blown away. Had the sliced rare beef pho and was so completely satisfied by the end. I've tried 3 variations (original, special, grilled pork) and while each have their merits, my favorite is the original. The vegetable tempura is a great value, and definitely our go-to starter. The decor is super cute. They clearly put effort into the aesthetics. Relative to the aforementioned pho joints, I'd give them 6/5 stars if I could on that one! Pretty much everyone got different types of pho - the only difference really is which meats you want in your bowl. All very good. The table consensus was "yummy" for their taste, value, and portion size. On the latter, the bowls are huge like what you'd find in a hole-in-the-wall in OC. Prices are good for the area, according to the one local in our party. The meats tasted fresh. Good cuts. We also got some rice dishes. All very good. For me, slightly less than authentic, but again, different market demo. I still found my dish very good. I was happy with my order. I would say the menu is slightly "Americanized" but not in a negative way because everything was still very good. I would definitely go back, when I visit the Raleigh area. I'm a tough customer when it comes to Asian food but given our overall experience, I gave them all 5 stars.
