The individual New Century slow boiled soup is hardest to share but secure some empty bowls and you can divide the hefty portion. In the winter, there's a silkiness to the piping hot consommé that sooths a dry throat and has an umami essence infused with abalone, ginseng, and pork. There's plenty to choose from in the house signature combo platter including roasted duck, soy sauce chicken, BBQ pork, pork slices, and seaweed salad. Saving my stomach for the later dishes, I had a taste of the duck (a good start with crispy skin) and BBQ pork (satisfactory and well flavoured). With the generous portion of chicken in the combo platter, the slow cooked chicken with abalone broth seemed like overkill. I've never been a huge fan of this dish that's served cold since I prefer chicken hot. Still, I understand it's the jelly layer between the skin and meat that people enjoy. And to be fair, the chicken was tender, and New Century certainly didn't skimp on the ginger and scallion oil. For those who tend to fill-up before the "main dishes", the stars of the combo arrive mid-meal. The stir-fried Vancouver crabs with silver fish in HK style spicy sauce needs to be eaten at arrival as the crunchy coating is best straight from the fryer. And despite not looking spicy, the dish has a light heat that permeates in the background. Additionally, the crab was fresh and meaty, cooked well so it remained delicately flakey. The amount of sweet and sticky sauce used in the stir-fried lobsters with scallion in Maggie sauce was well balanced, lightly covering the crustaceans. Both lobsters were substantial; even after eating many pieces, we still had plenty of leftovers. This is a long review head to Gastro World for the rest.

The elegant interior, with tasteful decor and a refined ambiance, immediately sets it apart as a special-occasion destination. Service was attentive and polished, with staff happy to walk us through the menu and suggest pairings for the table. Every dish arrived beautifully presented, showcasing premium ingredients and authentic flavors that honored traditional techniques while still feeling refined and modern. The seafood was impeccably fresh, the sauces perfectly balanced, and portion sizes generous for the price point. Even simple dishes like fried rice or greens were executed with care and precision. Private dining rooms make it a great choice for celebrations or business dinners. While it's on the pricier side, the quality of food, service, and atmosphere justify the cost. A wonderful spot for an upscale Chinese dining experience in Markham.

Parking still sucks, lol. As someone who isn't a huge fan of dim sum or the traditional dim sum tea, I was really happy to see that they now offer HK Style Milk Tea as well as various flavours of slushie and bubble tea offerings. As a milk tea lover, this alone would make me choose this place over another. :) The restaurant itself is quite spacious. When you enter, it's the front counter and a take out shelf (with LOTS of people ordering take out). There is a dining room to the left and to the right. I like that the tables are generously spaced apart, unlike some other dim sum places. Food wise, it's pretty decent, like any other dim sum place. I wouldn't say that it's anything special and no dish really stood out to me. We were a larger group so we ordered 2-3 rounds of stuff, and sometimes would just ask the server to add on a dish for us. I don't know if this was confusing for them or what because a lot of our dishes didn't end up coming. Of course, dishes that didn't come were not charged. The bill itself is a little confusing but they are happy to explain it to you. Instead of an itemized receipt, it is just multiple lump sums for tea charge, S/M/L items, special items, etc. Gratuities are already included.

Skyview offered a small, medium and large dim sum special at $5.80 if paying cash. Whereas the One Fusion did not. The food quality was pretty much the same. It's your average dim sum. Absolutely nothing spectacular. No special dishes to write home about. Nonetheless if looking for a bargain and relatively decent dim sum. Then a recommendation is in order. I will be back for a deal but will reserve my gourmet dim sum visits for other dim sum establishments.

Service after being seated was a bit slow but was to be expected given how busy they were. Place was packed. Food we ordered: Beef balls - ok. Not super flavourful but nice texture. Oddly enough we had to ask for the Worcestershire sauce. It wasn't served with the dish as normally expected. 3.5/5. Rice rolls with shrimp - the rice rolls were a bit too wet and mushy. Shrimp and veg filling were nice. 3.5/5. Rice rolls with cumin lamb - less common version of this. Sadly not much lamb, cost more for same portion size as other rice rolls, too much cumin and celery. And still too mushy. 2/5. Giant dumpling in soup - ok. Nothing bad, nothing amazing. Pretty standard. 3.5/5. Bbq pork with noodles in soup - the pork was excellent. We asked for a lean cut and it was lean but still very tender with a nice char. The noodles were slightly overdone. 4/5. Fried pigeon - a bit overcooked and dry. 3/5. In terms of value, the bbq pork with noodles was a giant portion and great lunch special deal at $15. Feeds 2 easily. Highly recommend. The dim sum dishes varied, typically just under $10 each. Pretty average pricing and mediocre quality. The pigeon was $20 but not done well. Tea was $2.50 per head which imo is too high for a place like this. The restaurant itself has the typical tacky decor with a rainbow of colours and lighting found in Chinese banquet restaurants of this vintage. It was clean and comfortable enough. A bit run down but fine. Plenty of free parking out front. Overall, solid average with an exceptionally good lunch time bbq pork noodle deal for value.

The Chinese BBQ…read morecounter opens after 11am and is located outside the restaurant, facing the mall interior. I recommend trying to get here before or after the lunch rush, because this line gets LONG, so much so that they have a dedicated line on weekends for their boxed rice specials. The BBQ is worth it though! Recently, we decided to visit for yum cha because, well, that's what they actually sell haha. It's best to arrive before 10:30am on weekends for reduced wait times. We ordered our usual: har gow, siu mai, cheung fun, turnip cake, sticky rice wrapped in lotus leaf, and steamed BBQ pork bao. We also got some of their more unique items like their recommended BBQ pork buns (they look like mini pineapple buns), deep fried milk curd, and deep fried shrimp salad rolls. Overall, I found that their deep fried items and BBQ pork buns were pretty good, but their siu mai and cheung fun weren't up to par. Although this spot isn't a top pick for dim sum for me, I'd still keep coming back for their Chinese BBQ and for the convenience of parking & location.

I would say its convenient if your in the mall and craving some Chinese food, but in Markham (that contains so many other GOOOOOD Chinese restaurants options), i would rather travel to other resos for food I feel like their menu is a bit more fusion of Chinese + Western flavors (AKA - the pic of the fish fillet is a sign) NOT BAD, but like i said, with so many options in the area, i would rather eat others

Since this Chef 88 is opened until 1am, I think this place will get busier as the night progresses. We weren't super hungry as well ate something for tea time. So we ordered Maggi Lobster (~3lbs) for $34/lb, and stir fried beef with Chinese broccoli (gai lan). The lobster was cooked perfectly, with the Maggi sauce not being too salty. They definitely gave us all the pieces of the 3lbs lobster. The gai lan had a bitter aftertaste, which is common for this vegetable. I wished they had a way to get rid of that. They were generous with the amount of beef and was well marinated. The cut wasn't that great, but that is to be expected. I don't think they added much MSG or at least used good quality ones, as we did not feel overly thirsty later in the evening. They give free daily soup and dessert. What we were most impressive was with the service. The waiters were very attentive, changing our plates twice during our 1ish hour meal. The also gave us wet wipes and more napkins without us requesting it. They even offered us additional soup, which we declined as we were quite full.

The food came out quickly, which was a nice plus, but it's worth noting that they don't offer any weekend dim sum specials. The tea was pretty weak and lacked flavour, especially considering it's $2.50 per person, which is more expensive than many nearby dim sum restaurants. We ordered 3 dishes. One of the more unique dishes we tried was the deep-fried pumpkin and sweet potato. It seemed like an uncommon order because several staff members came over to look at it as it was served. The portion was huge for a dim sum dish, with thick slices of pumpkin and sweet potato. Unfortunately, the batter was also thick, which made the dish feel a bit heavy. The fried glutinous dumpling was really good. The wrapper wasn't overly thick, and the filling-to-dough ratio was well balanced. The beef balls were enjoyable, but nothing to particularly write about. Overall, the food was pretty good, and the restaurant was bright and clean, but the value wasn't there. With no weekend specials and the extra tea charge, our bill came to about $30 for just three dishes between the two of us. At most other dim sum spots, that same amount usually gets us a much larger meal. As it got closer to noon, the restaurant started filling up quickly, so it seems like they're more popular for their lunch menu than for dim sum. I probably wouldn't come back for dim sum since there are other places nearby with comparable food at much better prices, but I'd still be open to returning to try their lunch menu!
