It had a very creamy texture, a small tendency to congeal on the top, and lacked the bright zing of lemon and buttery texture and flavor of true hollandaise. Indicators, its lack of a slightly translucent and glossy finish, the lack of the acidity of lemon juice or vinegar, and did not weep butter, but instead seem to thicken and form a slight crust as I finished the Benedicts. The egg, Benedict were very tasty, but the hollandaise sauce with disappointing. (I really do like a good hollandaise.)
