I've eaten a lot of smoked and grilled meats before, but this was an experience crafted with both care and compassion and a true love of the art of BBQ. The time and patience for slow smoking really shines through with the tenderness and flavor in every bite of brisket. Two kinds were served - both were delicious! Like meat candy, it just melts in your mouth. The ribs were out of this world - Tony Roma's eat your expensive-@ss heart out! These ribs were tender, juicy, and the bones literally fell right out of the meat as you picked them up. Such a treat. The chicken was amazing as well - blackened on the outside, but not a charred flavor to be had! It was so delicious and juicy, often times BBQ chicken is dry and tough, or rubbery - not this stuff! Delicious and more than adequate without all the other BBQ items on display. Lastly, the baked beans with pulled pork and the bacon gorgonzola pasta salad were a perfect touch to the meal experience. This is a business that KNOWS good BBQ, and takes the time and the savvy to do it right. Cannot recommend highly enough!

He is starting to collect some BBQ competition awards, but you don't need to see a bunch of trophies to know his BBQ is legit. Seasoning flavor profile is well balanced between sweet, spicy and savory. Killer Ribs! Amazing, award-winning Chicken! ...and the Pulled Pork is nothing short of sublime. The salad was ok as well, but I didn't like all of the cheese on top and the dressing was freshly made. I like melted cheese and for it to be melted, it needs to be hot. I could have had a little less on my salad because I was eating it for the veggies. I got an arepa - the pork belly one and it was okay as well. The beans were a touch cold, not an issue, and the avocado was fresh and tasted good. I don't like tomatoes, but the slices were thick and juicy. My husband enjoyed them. My thing is that there was no "WOW" factor with this meal. It was good and did its job (filled me up0, and I was safe (didn't get sick), but it's not the kind of place that I'd make a special trip to see. They recommended the pork belly arepa ($17) but I am no longer enjoying the fatty and crisp textures of pork belly, so I asked the lady who'd confidently ordered just before me for her recommendation. "Get the cheese cachapa, it's delicious and filling," she said. So I did, but I got one with shredded beef instead of cheese-only ($15). My cachapa - a Venezuelan sweet corn pancake filled with melted cheese - took about 10 mins to prepare, and it was thick and huuuuge! I changed my mind about eating it al fresco at one of the tables near the food truck, and took it back to the office instead. Back at the office, I ate the cachapa slowly, with the plastic fork and knife they'd thoughtfully provided. There wasn't much beef in it, and it was crisp, sweet and verrrrry filling. I made myself some coffee to sidestep the food coma that was sure to follow, and got back to work! Will return to try other items when they're back.
