Perched atop a great classic--deviled egg with bacon bits--the oyster was tender with a light batter-fried coating. Chef's duckfat cornbread drizzled with just the right amount of avocado butter provided the perfect podium on which two blackened shrimp lightly dusted with a hint of subtle spices rested. If you know me, you know I don't like my food to hurt me, and this dish met my requirements with a whisper of, "Here I am." Now, my hubby doesn't like anything with coffee, so he was worried about the hickory smoked chicken with espresso molasses BBQ sauce. However, he admitted the sauce didn't have any hint of coffee and, in fact, it was a delicious complement to the chicken. As for the pancetta Mac 'n' Cheese, its creamy cheesiness balanced out the smokiness of the chicken. Chef Joseph often offers one of his Pot de Crème varieties to finish a meal. I always look forward to them. Tonight's Pineapple White Chocolate version was a perfect finish to a perfect dining experience. Sparkling wines and summer--the perfect pairing.
