We have stayed at the Paris Hotel many times but this was our first visit to Nobu...it won't be our last. Everything about our visit was fantastic! I recommend you go during the happy hour or "Tanoshi Hour" from 4:00-6:00 daily. We started with the Chicken Karage and the Wagyu Sliders. The sliders are amazing! So tender and almost melts in your mouth. The chicken was also delicious and perfectly crispy. For our mains we ordered the Yellowtail rolls and the California roll with caviar on top. Both were amazing! Don't overlook their speciality drinks. The Lychee Martini alone is worth a trip to this restaurant. We also ordered the Market Margarita and were very impressed. First time staying at Paris, and first time trying Nobu, which is very conveniently located in front of the elevators to the hotel rooms and next to the casino FOOD -- Everything was delicious, including the dishes we wouldn't think would exceed expectations, like the Caesar salad. Our server had recommended it, and although we were hesitant, we tried it. It ended up being one of our favorite dishes that we decided to get another order. The Miso cod, Wagyu tacos, Lobster tacos, and Uni were also very appetizing SERVICE -- Service was great. Since we had a reservation, we were seated immediately for dinner, but it also didn't seem busy or crowded at the time. Our server was very friendly and attentive, and he provided good recommendations AMBIANCE -- Of course, downside is that it's very pricey. Even though that should ultimately be expected and the food and service were great, not sure if it was worth what the meal ended up costing. The bartenders tend to turn their back to the bar patrons and have private conversations without even acknowledging the bar customers. John literally has no memory and cannot function as a basic bartender. Go back to a dive bar in Boulder City where you belong. I'm a local here in Vegas and was surprised at how bad the service was for the cost of the drinks and food here. The details: this particular Nobu has the ambiance of dining at a mid tier suburban shopping mall food court with the added perfume of cigar and cigarette smoke from the casino. So yea... not an intimate setting. We ordered the Omakase menu which was cooked food heavy. I really wanted to enjoy the sushi. While the fish was absolutely top notch however the 6ish peices of sushi we were served was more like a snack.... And does not warrant the $1000+ price tag for two. The cooked items were uninspired and not necessarily anything I'd order in the wild. Dessert was a molten lava cake... as if it were 1995 all over again. Additionally the service was impersonal to the extent of feeling like it was ground hog day for the staff... as if we had been doing this identical routine together for eons. Our food was presented with the enthusiasm of an Olive Garden during all you can eat pasta night. All in all it was an unimpressive forgettable experience. So we showed up at Paris a few minutes early for a 7:30 reservation. The hostess was wonderful and kind. She gave us a choice of table or booth then had the table set up. It only took a few moments. So we ordered the tempura which is a stand out and bargain at $40. We also ordered the oven baked hamachi Kama which was mind blowing. Just so good!!! We ordered an assortment of sushi rolls which were very good. We also ordered the 12 piece sashimi platter which is a bargain and includes several melt in your mouth tuna variety's. We had a great time until the end when the check came. They brought us a check for $1650 which was surprising upon closer scrutiny. We determined that they brought us the wrong check. A colossal screw up really when you think about it because the actual check was more like 400 . Nobody was quiet. We had a great view of the sushi. Chef's working very hard, and our table was excellent placed right smack in the middle of the room with a great view of all the action. Was asked to come back when it was the scheduled time. Was sat promptly. Ordered the Signature Omakase 7 course, chef's choice meal ($200). There are 2 other Omakase at varying price points, Vegetarian ($140) and Paris Las Vegas ($350). Main difference between the Signature and Paris LV is better selection and choices in the more expensive option. Plus gold flake toppings, according to some of the photos, lol. The Signature Omakase came with the following in order: 1-Ceviche (with diced octopus, shrimp, white fish, thinly sliced shallots/persian cucumber, and grape tomatoes in a citrus vinaigrette), 2-Sashimi trio in various yuzu dipping sauces (white fish, snapper, and scallops), 3-nigiri sushi trio (toro, kanpachi a.k.a. amberjack, and shima aji), 4-cooked shrimp tempura tossed in a spicy creamy sauce, atop mixed greens in citrus vinaigrette, 5-cooked Atlantic Black cod filet in miso sauce marinade with one sprig of pickled ginger stalk, 6-filet mignon cooked medium rare with 2 dipping sauces (teriyaki and a 2-peppers combo from South America) with side of pickled sishito pepper, 7-dessert "japanese whisky cappuccino" (layers of Coffee Crème Brulee Layered with Crunchy Coffee Cacao Soil, Milk Ice Cream, Japanese Whisky Foam). I enjoyed all the courses, except for the miso black cod and shrimp tempura in spicy cream sauce. The sweet/salty miso marinade and sauce was heavy and too strong. If it came with a small side of sticky rice, it would have helped balance out the taste. The miso sauce marinade dominated and overpowered the light flavor of the cod, which otherwise, was cooked nicely and prepared in a way where it was easy to separate and pick up the fish filet flakes away from the fish skin. I also felt the shrimp tempura course was drenched in too much spicy cream sauce. It made the outer fried tempura batter soggy and similarly overpowered it too. There wasn't much depth/variation in texture that this dish could have had. The saving grace was the bed of greens lightly mixed in vinaigrette which helped balance the overly thick cream sauce that coated the shrimp. I enjoyed the filet mignon and pickled shishito pepper. The 2 dipping sauces (teriyaki, and 2nd pepper sauce made from two South American peppers) paired nicely with the steak slices and pickled pepper. I truly enjoyed the Japanese Whisky Cappuccino dessert. Definitely a repeat dessert to order next time. For drinks, I wanted to go non-alcoholic for dinner tonight since I have an early morning tomorrow. Had the Genmaicha Matcha green tea, and a "Mocharita" margarita mocktail that had a very nice cilantro salt rim and melded flavors of yuzu citrus, serrano pepper spice, and sweet pineapple fruit juice. Didn't see this on the online menu though. And I also noticed the online menu needed to be updated since the price for the Omakase was about $25 higher in the paper menu at the restaurant. This discrepancy in prices was confirmed by the server. Couple things I also learned by talking to one of the bartenders, JB: the cilantro salt is made from fresh cilantro that is dehydrated for a couple days, then crushed/ground before it is mixed into the salt. The 3 Omakase choices pretty much stay the same/consistent throughout the year. They do introduce special Omakase menus during special holidays 3 to 4 times a year (Valentine's, New Years, etc). This Nobu location is the youngest of the 3 spots in Las Vegas (about 3 years old), the one in Caesars Palace is about 10 years, and the original one at Virgin Casino is about 20 years. read more

Good hotel if you want to stay somewhere low key. I mean a bit quieter with less rooms per floor and maybe 10 floors but still in th middle of Cesars Palace. Rooms are great...views are eh but didn't bother us. They don't have tubs in the bathrooms though. Check in was a bit confusing...the registration lobby is up on a floor which you don't need a key to like the room floors. It's also next to the Nobu restaurant. We tried to make a reservation there a week before but they were full for a Friday but they did book us at the Paris location which is not too far away. Food always good!! I came back here with friends last weekend and had a much better experience than my last visit exactly a year ago. Of course, the never-fail miso cod was a must. For the five of us, we ordered four servings, and there wasn't a bite left. This dish will always be my Nobu go-to. We also had 24 pieces of the spicy tuna on crispy rice (I think it's two pieces per order). Nobu's unique take on this dish, with a sweet glaze that adds a surprising twist, makes it a winner every time. Unexpected Standout: The Caesar salad caught me off guard--in the best way. I think there was a hint of wasabi in the dressing, and it was phenomenal. We ended up ordering four plates, and honestly, if I were dining solo, I'd be content with three of these and an order of the spicy tuna. Huge fan. Dessert: Sadly, dessert was underwhelming. The Bento Box (flourless chocolate cake with green tea matcha ice cream) was good as usual, but the Haupia coconut pudding with berries? We made reservations here before a show in Vegas. We had a lovely girls dinner and had perfect service, we made sure to let them know about our timeline and they made sure we were in plenty of time. We ordered a couple of plates at a time and just continued munching until we were full. Our favorites were the scallops (but way overpriced at $60), and we loved the shrimp tempura rolls so much that we ordered three by the time we left. The sunomono salad was refreshing between dishes. I would say to skip the Wagyu tacos, they are I believe $20 apiece and not worth it. We were in town for the Maroon 5 concert. Before the concert, we wanted to pamper ourselves for a nice dinner. We arrived a little before our reservation at 5:45 pm and they won't seat us till our time. The restaurant was already quite full. Our server came and showed us the menu. The vibe was definitely casual and there's a bar where we could order our drinks. The menu starts with cold appetizer, sushi or rolls and build up to warm dishes. We ordered the yellow tailed sashimi, some salmon rolls, unagi rolls and the beef tenderloin to share. Every plate was delicious and precious. Between Nobu Caesar's and Nobu Paris, the interior design of Nobu Paris is not as luxurious as Caesar's one, and Paris Nobu is not as busy. Some items are not available in Paris Nobu. For the same expenses, if you can get the reservation for Caesar's location, it'd be a more upscale experience. O toro and Uni in Nobu are the best on the strip among all the Japanese restaurants in our opinions if the budget is not a concern. The eels tonight are a bit dry. For the miso cod which is very salty and sweet, you might want to get some rice to go with. read more

We have been to Nobu a few times before in Caesar's Palace and had a wonderful experience. We had dinner at the Nobu in Paris last night and it was an awful experience! We all ordered the family style dishes selected by the chef for $200 a person. Last Saturday night, we had a table of six and our service was abysmal! The restaurant was not busy; multiple open tables. Our food was coming out before our drinks were served. When the drinks finally got there one of the cocktails was missing. After a great deal of time lapsed after the server was reminded about the drink, my adult son went the bar to get the drink was told it needed to be made and then they ended up bringing the drink that was sitting on the bar the whole time he was waiting there/ stood there. Multiple times there were empty drinks on our table. Had to ask more than once for things. What was the most frustrating was that what appeared to be the manger was standing in the corner with his head in his phone texting. I can't imagine he didn't know we were unhappy with the service. Our meal was almost two hours he never came over to our table to see what was going on but I saw him ask the server. Lastly, this is just as much about the experience as it is about the food and the experience was awful. We brought young people who had never been and they will never return as this. The only thing that stood was exceptional was the gentleman assigned to bring out our food. He was friendly and efficient. Our server appeared irritated and annoyed. We love both Paris and Caesars but will save our Nobu experiences at Caesars. I thought it was important to edit this review to advise we were one of about five tables that had people- the rest were empty. If you know me, you know I'm a Nobu enthusiast. I try to visit a Nobu in every city I'm in, can't help it. We decided to hit Nobu in Paris (LV) pre-club and honestly it was pretty satisfying. We weren't bloated and it was the perfect amount of food to have in our stomachs before a night out. We celebrated my friend's birthday and the server gave us complimentary shots since we didn't want any dessert. They do get really busy and I recommend hoping a reservation on Open Table or giving them a call. This Nobu isn't as intimate as other spaces because it's tight and an open space inside the casino, it gets loud. If you're looking for a Nobu with pretty ambiance, this might be a skip. Overall, food came out a little slow but they were understaffed so I appreciate how quickly they tried to accommodate us on a short notice too. I loved every dish we had per usual. Our server was knowledgeable and friendly. He explained great descriptions and offered optimal insight on what to order, for my friends coming as their first time. So before you read into this review. Please note I think you should try Nobu at least once! 3 of us wanted to get some good seafood and sushi so we booked nobu. Just know they have to have a credit card on file to book. 50 per person cancelation fee if cancelled with in 24 hours. So we sat down to eat quickly. Server got our drink orders and went over the menu. He was very knowledgable and made some great suggestions. We ordered several appetizers and sushi nigiri pieces, along with 3 main dishes. All dishes are made to be shared. The food was excellent. Our favorite bites were the wagyu nigiri, uni nigiri, toro nigiri, salmon belly, yellow tail with jalapeño , and the cod with miso. All of those are amazing. The other bites were really good just not to the level of those. Cocktails were awesome also. I had the sidecar and it was a great take with Japanese whiskey. Had 5pm dinner reservations and showed up about 30 minutes early, they sat us at a nice booth immediately. Our server John was very nice and explained the menu to us, being it was our first time to Nobu's. Started with a nice lychee cocktail and good reliable Sapporo beer. We ordered the crispy rice w/spicy tuna, tuna (big eye) sushi, yellow tail belly and seabass with black bean sauce. All were very delicious. For dessert with ordered some Japanese whiskey ice cream cocoa dish, very nice. All in all it was a very nice dining experience and would most definitely eat here again. While on vacation, we were exploring the Strip. My husband fondly remembered enjoying the Omakase at Nobu's in Caesar's and wanted to return but with me and our daughter in tow. We passed on it but as we jumped around hotels, we came across this Nobu's in Paris Hotel. It was a sign we must indulge here even though I do not enjoy raw fish and our young daughter is a picky eater. We were tired and getting hungry so we walked in a little after 4 with no wait. Our server, Jonn, was amazing as well as all of the staff that delivered our dishes. He was friendly and super helpful. My husband was thinking he would have to wait another time to order the Omakase since they require that your entire table be ordering the same. But on a whim, we asked if it was an option where he would sit at the counter to enjoy ordering it solo. Jonn told us he could create something similar to their omakase with as much of the fresh seasonal fish they were serving. It was definitely a happy surprise for my husband who has been talking about Nobu's as being the highlight of his last trip. I ordered their Brick Oven Hamachi Kama and miso soup with edamame for our daughter. They brought out each dish for the omakase at a nice pace and perfectly seasoned with unique flavors. To finish our meal, Jonn, surprisingly brought out dessert for all of us to share: a variety of of mochi ice cream which included strawberry, black sesame, salted caramel, and mango. So delicious! The corner table we were at was nice and out of heavy traffic areas. It was an amazing experience that we just stumbled on by accident. We are considering returning another day. Jonn was even telling me that although I don't enjoy the raw fish, they could tailor the omakase dishes to all cooked dishes, which has me interested lol. read more

Nobu is a very up scale and quite pricey Japanese restaurant. Expect $150 per person and small portions. The service is above par. The ambiance is excellent. The food is very good and served in a staggered manner to help you savor every bit. read more

Supreme! I don't think I've had a sushi tasting menu like this one before. Nobu has several locations in Las Vegas, we went to the one at Paris hotel. I'd say that visiting a restaurant this fancy the least you'd expect is to have its own restroom, which they don't and you need your go out to the hotel's restrooms. We went with the signature menu, which BTW on their website is listed in $175 BUT in real life is $200 pp. So keep in mind they haven't updated their prices online. The Signature menu includes: 3 cold entrees, 3 hot entrees and 1 dessert. Each course was out of this world, the flavors and layers of textures were unique. Of course service was amazing. However here's my piece of advice: get the wagyu taquitos!!!! OH MY!! They will melt in your mouth. Also the plum wine is good if you like sweet wine . read more
