I ate alone at the bar- I didn't go more than 3 minutes between the server and others checking on me and asking if I needed anything. Very high level of customer service. The taste of the food is exquisite. My server recommended the Caesar salad and said it was the best he'd ver eaten. It was divine. I only remember one other salad I've ever had that I enjoyed more. I'm not sure what's happened to this restaurant. The prices have gone up whilst the amount of food and quality has decreased drastically. At this point, after the last two dinners at this particular Nobu, I'll either go to the Caesar's Palace location or find another one in Vegas that doesn't insult your intelligence or taste buds. One of the items we had, yellowtail jalapeno had ponzu sauce left in the plate. I asked if we could keep the plate as I like to use that sauce with other items on the menu. Our waiter said that he'll bring me a fresh batch and took the plate away. Then I was charged additional $3 for the sauce I already had asked to keep. It's not about the money, I don't mind paying premium prices but it should be compatible with the quality and amount of food. Everything is now half the size. When I asked Beef Yuzu, I asked if he can bring it uncut. That way the heat doesn't escape right away and the meat holds on to its juices. He brought it cut up and when I reminded him that I didn't want it cut. He said, that's how we serve it and walked away. Not like the restaurant was packed and he had to go to another table. He and his buddies (other servers) were just standing around on the other side of the bar chatting. So disappointed that even though I held on to the receipt to wait and see how I feel few months later... It's still bothering me. No more quality of food and service. First time staying at Paris, and first time trying Nobu, which is very conveniently located in front of the elevators to the hotel rooms and next to the casino FOOD -- Everything was delicious, including the dishes we wouldn't think would exceed expectations, like the Caesar salad. We have stayed at the Paris Hotel many times but this was our first visit to Nobu...it won't be our last. Everything about our visit was fantastic! I recommend you go during the happy hour or "Tanoshi Hour" from 4:00-6:00 daily. We started with the Chicken Karage and the Wagyu Sliders. The sliders are amazing! So tender and almost melts in your mouth. The chicken was also delicious and perfectly crispy. For our mains we ordered the Yellowtail rolls and the California roll with caviar on top. Both were amazing! Don't overlook their speciality drinks. The Lychee Martini alone is worth a trip to this restaurant. We also ordered the Market Margarita and were very impressed. The details: this particular Nobu has the ambiance of dining at a mid tier suburban shopping mall food court with the added perfume of cigar and cigarette smoke from the casino. While the fish was absolutely top notch however the 6ish peices of sushi we were served was more like a snack.... And does not warrant the $1000+ price tag for two. The cooked items were uninspired and not necessarily anything I'd order in the wild. Dessert was a molten lava cake... as if it were 1995 all over again. Additionally the service was impersonal to the extent of feeling like it was ground hog day for the staff... as if we had been doing this identical routine together for eons. Ordered the Signature Omakase 7 course, chef's choice meal ($200). There are 2 other Omakase at varying price points, Vegetarian ($140) and Paris Las Vegas ($350). Main difference between the Signature and Paris LV is better selection and choices in the more expensive option. Plus gold flake toppings, according to some of the photos, lol. The Signature Omakase came with the following in order: 1-Ceviche (with diced octopus, shrimp, white fish, thinly sliced shallots/persian cucumber, and grape tomatoes in a citrus vinaigrette), 2-Sashimi trio in various yuzu dipping sauces (white fish, snapper, and scallops), 3-nigiri sushi trio (toro, kanpachi a.k.a. amberjack, and shima aji), 4-cooked shrimp tempura tossed in a spicy creamy sauce, atop mixed greens in citrus vinaigrette, 5-cooked Atlantic Black cod filet in miso sauce marinade with one sprig of pickled ginger stalk, 6-filet mignon cooked medium rare with 2 dipping sauces (teriyaki and a 2-peppers combo from South America) with side of pickled sishito pepper, 7-dessert "japanese whisky cappuccino" (layers of Coffee Crème Brulee Layered with Crunchy Coffee Cacao Soil, Milk Ice Cream, Japanese Whisky Foam). I enjoyed all the courses, except for the miso black cod and shrimp tempura in spicy cream sauce. The sweet/salty miso marinade and sauce was heavy and too strong. If it came with a small side of sticky rice, it would have helped balance out the taste. The miso sauce marinade dominated and overpowered the light flavor of the cod, which otherwise, was cooked nicely and prepared in a way where it was easy to separate and pick up the fish filet flakes away from the fish skin. I also felt the shrimp tempura course was drenched in too much spicy cream sauce. It made the outer fried tempura batter soggy and similarly overpowered it too. There wasn't much depth/variation in texture that this dish could have had. The saving grace was the bed of greens lightly mixed in vinaigrette which helped balance the overly thick cream sauce that coated the shrimp. I enjoyed the filet mignon and pickled shishito pepper. The 2 dipping sauces (teriyaki, and 2nd pepper sauce made from two South American peppers) paired nicely with the steak slices and pickled pepper. I truly enjoyed the Japanese Whisky Cappuccino dessert. Definitely a repeat dessert to order next time. For drinks, I wanted to go non-alcoholic for dinner tonight since I have an early morning tomorrow. Had the Genmaicha Matcha green tea, and a "Mocharita" margarita mocktail that had a very nice cilantro salt rim and melded flavors of yuzu citrus, serrano pepper spice, and sweet pineapple fruit juice. Didn't see this on the online menu though. And I also noticed the online menu needed to be updated since the price for the Omakase was about $25 higher in the paper menu at the restaurant. This discrepancy in prices was confirmed by the server. Couple things I also learned by talking to one of the bartenders, JB: the cilantro salt is made from fresh cilantro that is dehydrated for a couple days, then crushed/ground before it is mixed into the salt. The 3 Omakase choices pretty much stay the same/consistent throughout the year. They do introduce special Omakase menus during special holidays 3 to 4 times a year (Valentine's, New Years, etc). This Nobu location is the youngest of the 3 spots in Las Vegas (about 3 years old), the one in Caesars Palace is about 10 years, and the original one at Virgin Casino is about 20 years. read more

We also had 24 pieces of the spicy tuna on crispy rice (I think it's two pieces per order). Nobu's unique take on this dish, with a sweet glaze that adds a surprising twist, makes it a winner every time. Unexpected Standout: The Caesar salad caught me off guard--in the best way. I think there was a hint of wasabi in the dressing, and it was phenomenal. We ended up ordering four plates, and honestly, if I were dining solo, I'd be content with three of these and an order of the spicy tuna. Huge fan. Dessert: Sadly, dessert was underwhelming. The Bento Box (flourless chocolate cake with green tea matcha ice cream) was good as usual, but the Haupia coconut pudding with berries? We made reservations here before a show in Vegas. We had a lovely girls dinner and had perfect service, we made sure to let them know about our timeline and they made sure we were in plenty of time. We ordered a couple of plates at a time and just continued munching until we were full. Our favorites were the scallops (but way overpriced at $60), and we loved the shrimp tempura rolls so much that we ordered three by the time we left. The sunomono salad was refreshing between dishes. I would say to skip the Wagyu tacos, they are I believe $20 apiece and not worth it. We were in town for the Maroon 5 concert. Before the concert, we wanted to pamper ourselves for a nice dinner. We arrived a little before our reservation at 5:45 pm and they won't seat us till our time. The restaurant was already quite full. Our server came and showed us the menu. The vibe was definitely casual and there's a bar where we could order our drinks. The menu starts with cold appetizer, sushi or rolls and build up to warm dishes. For the same expenses, if you can get the reservation for Caesar's location, it'd be a more upscale experience. O toro and Uni in Nobu are the best on the strip among all the Japanese restaurants in our opinions if the budget is not a concern. The eels tonight are a bit dry. On my 3rd visit to Nobu, I switched it up and sat at the sushi bar (alone). It was a totally new vibe & experience. With Eliana deftly handling a busy checking area, I was made to feel important from the start. The "music" Sake recommendation was perfect and was one of the best I've had. Watching the experts create masterpieces with their knives was great entertainment. The food was perfectly presented and every detail was focused on. Good hotel if you want to stay somewhere low key. I mean a bit quieter with less rooms per floor and maybe 10 floors but still in th middle of Cesars Palace. Rooms are great...views are eh but didn't bother us. They don't have tubs in the bathrooms though. Check in was a bit confusing...the registration lobby is up on a floor which you don't need a key to like the room floors. It's also next to the Nobu restaurant. We tried to make a reservation there a week before but they were full for a Friday but they did book us at the Paris location which is not too far away. Food always good!! Will stay here again to avoid the crazy elevator crowd. read more

So before you read into this review. Please note I think you should try Nobu at least once! 3 of us wanted to get some good seafood and sushi so we booked nobu. Just know they have to have a credit card on file to book. 50 per person cancelation fee if cancelled with in 24 hours. So we sat down to eat quickly. Server got our drink orders and went over the menu. He was very knowledgable and made some great suggestions. We ordered several appetizers and sushi nigiri pieces, along with 3 main dishes. All dishes are made to be shared. The food was excellent. Our favorite bites were the wagyu nigiri, uni nigiri, toro nigiri, salmon belly, yellow tail with jalapeño , and the cod with miso. All of those are amazing. The other bites were really good just not to the level of those. Cocktails were awesome also. I had the sidecar and it was a great take with Japanese whiskey. All this being said. Each dish we got was only 1 or 2 bites between the 3 of us. We were hungry and had to order some more food. Bill was pricy but you know that if you know of nobu. Food: 5 Stars Fresh fish with amazing flavors and consistent quality. The miso cod for me was too sweet and the filet was cooked perfectly. However, sushi is the star at this restaurant. Service: 5 Stars They were very busy, however, our plate came out in a timely manner (Omakase). Ambiance: 5 Stars The sushi kitchen was visible with great energy and the decor was well done. A bit noisy since it was packed but tolerable. read more
