Super authentic food! I got the beef pho and the broth was super tasty. It's a little small, but really worth it.

Noodle Bar is an experience! Truly it is a little 'hole in the wall' restaurant but it's big on tasty food. We always order a big bowl of Pho (chicken or beef, depending on our mood). Noodle Bar doesn't use MSG so their soup broth is not overly salty like at some Pho restaurants. I usually order a chicken dish with veggies. Never disappointed. read more

My absolute favorite place on the Monterey Peninsula to get pho! Noodle Bar is small, offering only counter-top seating so make sure you come prepared to wait for a bit or order for take-out. I loved the Noodle Bar in Seaside....I ordered the #10, it was grilled chicken & veggies served over noodles. i also had a passion fruit green tea, you can taste that it was fresh brewed tea flavored with a slash of passion fruit. Service: 4, Food: 2 After hearing some positive comments, we decided to give this place a try. It's a small, counter top restaurant with seating for about a dozen people. We ordered the BBQ chicken spring rolls and combo fried rice. The chicken was tasty in the spring rolls, but the rice wrappers on the outside were not entirely fresh, making them somewhat chewy. The fried rice wasn't bad, although it appeared to be 70% BBQ chicken, 20% pork and 10% (1 and a half) shrimp. If you have onion allergies, be careful as everything is prepped on the same grill and we had several large strays from other orders input dish. We also ordered a milk tea, which had too much milk. We asked for more tea but couldn't tell if they'd added any when it came back as color and taste were the same. After looking at other reviews, we probabaly should have ordered the pho. We usually go to the Marina Noodle Bar. Wanted a boba drink, and this was on the way "home" so dropped by here. The boba drink (guava) was one of the most flavorful I've had. (I have also had boba at the Marina location twice, and I have to say Seaside boba is considerably better. The Marina location boba is more "watery," not nearly as flavorful. Husband ordered spring rolls, which were very tasty. The person next to me was eating pho, which smelled delicious. We wanted to go back and to try the pho, but they are closed on Sundays, which was our only chance this trip. Next time! Oh, just a heads-up. The name Noodle BAR is very appropriate. There is no table seating. You sit at a counter on bar stools. As mentioned by other reviewers, the lady behind the counter is not super friendly, but she was not rude. Just very busy. In contrast, the staff at the Marina location, where we ended up on Sunday, was very friendly and efficient (despite being very busy, too!). Husband had pho. Seaside pho smelled better! read more

Great cheap eats. It's just a little bar, usually packed full of people, that serves fresh and delicious Vietnamese food. A family runs it and the food is consistently good. Try the five spiced chicken dry noodle bowl, my favorite. They dry noodle bowls are noodles with lettuce, peanuts, mint, cilantro, and then meat on top, served with fish sauce (gotta ad the fish sauce). Also, the fried banana dessert with ice cream is a great way to end a meal. They'll also make you just about whatever you want so don't be afraid to ask if you want something with vegetables instead or with rice instead of noodles. They'll do it happily. read more

A co-worker intorduced me to this really cool hole-in-the wall. The food has always been good, and it feels like you've discovered some hidden gem in Seaside. Suggestions: 1) Place your order over the phone and pick it up. Seating is very limited. 2) Bring cash. No plastic here. 3) Don't order extra meat. Good Vietnamese food is very hard to find in Monterey but Noodle Bar does a pretty good job.. the fact it is so cheap and fast is a good reason why i keep going there. Its amazing how busy it gets! Fantastic Pho. It is definitely on par with authentic, good Pho that you'd find in an urban / big city setting. The broth has that rich umami flavor and the noodles are perfect. My only wish is that the meat actually was slightly rare when it came to the table. Also a little extra basil wouldn't hurt. Love it!! Always super consistant. DO NOT COME HERE FOR A GREAT DINING EXPERIENCE. One can rarely find a seat at the packed bar. I prefer to get mine to go and take it home. For the price, things don't get much better. Usually very crowded, and sometimes you have to wait for the only servers attention. Not that they need more staff, this place is so small they can only fit one person back there! Love this place when I am not feeling great.
