Again well cooked, maybe on the edge of over (shedded a little as you ate it). My serving was from the flat up toward the point, with a good 1/4 of fat remaining. I trim the fat more, but it had been rendered nicely so it ate well. Yes, you eat the fat with the meat. People who trim it are wrong. Just wrong.
