    There are times when you choose between dfac food and starvation. This is one place that i have chosen to starve than eat at.

Without a doubt this is one of Tacoma's best dining experiences. Chef Shawn's team is small but mighty. The staff that we encountered were all super kind and attentive. It's widely known that Chef Shawn has a radiant personality and treats everybody in his restaurant like a longtime friend. He walked around chatting with everybody personally, showed off dishes as he walked through the restaurant, and was even happy to let diners take a peek at his kitchen (how does he make all this magic happen on TWO CAMP STOVES?!) The menu isn't massive, but everything on the menu is executed with precision and grace. I had a hard time deciding what I wanted but I've had my eyes on the Lobster Bomb for years. My husband got the "Tiny Burrito" which is quite literally the size of a newborn. The Lobster Bomb was excellent. Generous chunks of succulent lobster and the hollandaise was perfect! Subtle on the lemon flavor as to not overpower, but still rich and creamy. I tried my husband's burrito and the chorizo gravy is stellar. You could easily share this with 1-2 other people in my opinion. It lasted my husband two leftover meals! The restaurant itself is small but it's cozy and feels like you're at home. No frills, nothing over the top, nothing trendy. Just a relaxed vibe with lots of authentic touches from Chef Shawn. While this was our first visit it definitely won't be our last. Don't make the mistake I did and let years pass by before you experience Tibbitts!

It's a great atmosphere if you end up waiting and there's a line even if you made reservations it's because this place is worth waiting for.!!!!! The food......epic! They aren't afraid to challenge the ordinary and because of their courage to do so and their fine tuned culinary expertise their food becomes extraordinary. The courage, the warmth, their story.... The amount of pepper made this unsuccessful. But if you like black pepper a lot then you'll enjoy them. My son enjoyed the beignet's. The server was also the host and he was kind. It was easy to get his attention when needed. I didn't see anyone with a grin on their face after taking bites of their food. I looked around quite a bit out of curiosity. So for ambiance, kind and prompt service, and the possibilities of the menu I gave it 4 stars. We only tried the few things I mentioned. The blackberry mojito I ordered for I think $15 tasted pretty good but was missing the presence and flavor of any alcohol so there was no complexity, just ended up being a $15 refreshing fruit drink. My husband ordered an appetizer (Sirloin Diablo) for $27 and got a small bowl of steak tips submerged in a barely spicy (Diablo?) cajun cream sauce like a soup surrounded by some painfully plain, thin, unseasoned, boring grilled bread. It's not bad or very good by any means and just wasn't his thing, but charging almost $30 for that? At their prices and the way they are presented I was expecting a really satisfying dinner but walked away feeling like I would've been just as happy eating some standard fare at a local diner for half the cost.

This place commits to sourcing almost everything they have locally and they make a lot of their own base ingredients including every sauce they serve. The Ruby Brink is particularly well suited as a good bar that still has restaurant class food, especially if you just go out with your adult friends and not necessarily your family of five. Different restaurants are tiered to different clientele and I especially appreciate that they serve their target audience: adults looking for a damn good meal, super well! Their menu is prepared every single day depending on what's available at the time. Don't be surprised if you see different dishes on it from just going there a week previous. In my opinion this keeps it fun although they still make sure to keep their classic favorites around. Definitely five out of five stars for me
