Ate there last night, I came in about 6:18pm and the restaurant immediately got full. I had not been here before and my parents had nothing but good things to say. Let me first say that the waitstaff was AMAZING. The waitress was kind, the food runner was a little ball of sunshine, and they made sure that we had full drinks. This is the reason that they get at least one star. Sadly, it took an hour to receive our food (probably due to the quick fill). I ordered the steak and shrimp with a side of green beans and spinach while my daughter had the kids mac and cheese. Grilled shrimp was pretty decent, but I took one bite into my medium steak and gnawed on it for about 5 minutes. it just wouldn't go down so i spit it out. the meat was as rough as leather. I ended up eating it in smaller bites but the flavor was so bland and way too salty that I never finished it. The green beans were sort of good, and the spinach was drowned in salt. My daughter didn't want her mac and cheese, saying it was bad. I took a bite and it tasted artificial. I can see why people like this place but for me personally I would not come back. The food was average, very average! Texas Roadhouse literally offers the same menu items with higher quality. The service and ambiance is nice at Pecos Grilling Co; however, the food should take center stage and was disappointing Pecos should reduce the amount of items on their menu and focus on producing higher quality dishes. The pot roast my wife ordered was fatty, stringy and overly salty. The wagu chicken fried steak I ordered had a nice crust but was under tenderized and flavorless. Usually we are served really good food but today, not so good.I ordered the Grilled shrimp, salad with blue cheese dressing and a loaded baked potato. What I was served was the fried shrimp, a very cold baked potato and a over dressed salad. The shrimp had a burned rancid taste. It appeared the grease was old. My granddaughter had the child chicken fingers. The chicken was also fried in the old grease. They forgot her ranch dressing also. We waited 10 minutes for server to get back around to us. Husband had burger. He said it was dry. They were very busy and I seemed they might have been short of servers and maybe a new cook?? Staff went out of their way to get us a table in a packed house. Food and service were excellent. Our party of six enjoyed pot roast, almond coated catfish, chicken fried steak, grilled chicken and two ribeyes. Every single this was delicious enough that we made note of how tasty it was to one another. Bread was tasty as well! The dessert options were varied. We sampled the banana dessert and cobbler. Make note that while it looks like banana pudding, it's not. The warm rum sauce makes it more soupy, but still delicious. We had dinner last Friday night. The wife my daughter and the granddaughters 5 and 7. Our waitress was the server that I have seen in a long time. She was so positive and accommodating. It nice to see that someone takes pride in their job and just a nice person with an infectious smile. The chicken fried steak was to die for as well as the sides. However when it comes to steaks, the cuts of meat are top notch, however they had too much smoke in them. I typically love mesquite wood, but to much smoke makes the meat bitter. I couldn't finish my steak nor could our 7 year old. If they would use more coal and less smoke it would have been predict. Oh, ask for the rolls, they will make you eyes roll back in you head. Dry dry dry. Bone dry. Cardboard dry. So sad because it had a good smoky flavor. The prime rib was delicious but the chicken dragged it down as if one person doesn't enjoy their meal it kind of eh the rest, you know? I go to Texas, not for the steak, but for the CATFISH! In fact, in the last three days, I've had catfish at three different places. I'm working on becoming a catfish expert in my short time here. Of course, the catfish cannot be breaded; that would mask the true taste, so I order mine grilled. Here, it was a blackened with spices (I just don't think a good catfish would need to be doctored up with anything, though). It was good, but not the mouth watering catfish I had elsewhere recently. Having read some of the reviews ahead of time, and not really being in the mood for meat/country cooking (I had been beef and sausage eating for what seemed like two weeks), I was prepared to be unimpressed. And while Pecos has some issues to deal with, our party was all pleasantly surprised by the food. I actually ordered grilled chicken, with sides of steak fries and green beans. All were very good. Others ordered steak and catfish, and had similarly positive comments. As others have commented, service was almost painfully slow, particularly in the Exit Phase. Took quite a while to get the checks settled.
