    Vegan #4 Pho Chay

    visiting Denver for a few days from SoCal and the weather switched to gloomy quick; pho was the next step! There's about 4 other pho shops on the way to this spot but the reviews stuck out to me. Vegan pho chay 7/10 for me. * pro - broth was good before any sauces. Even better with the sauces/ chili oil. also lots of veggies! * con - noodles weren't soft enough for me. I usually like my noodles a bit more silky. Tofu wasn't tasty. Service to seat was quick! We sat down and apps came out less than 5min. The ambiance is cute, I wish they would play some more relaxing music but I understand they want to be a bit more upbeat. A lot of regulars came in so that was cute. Def worth trying out.

    Fast, filling, fresh pho. This long-time Denver staple is known for their pho, but they also serve up giant bowls of vermicelli and rice. Pure comfort food, and a well-oiled machine. Ambience is cozy and usually there are college and pro sports games displayed on the TV screens inside so you won't miss your team. Or you can watch the fish in the tanks below if sports isn't your thing. It's usually pretty busy around dinner time, but because of how quick the staff move, usually there's at least one table free or about to be vacant. One of the staff members plops down water, utensils, and menus, and seemingly in the time that you've just opened the menu, will ask you for your order. If you're a regular, this is obviously nice, but the menu is pretty extensive and does take some time to digest for first-timers. Standard sauces are located at each table, and once you order a plate of fresh basil, bean sprouts, and limes will appear. If there's a spicy icon next to an item, rest assured that they can make it burn if you really want it to. Besides traditional beef part-pho, they also offer some fancier offerings such as lobster, as well as a vegetarian broth. We tried the lobster and bone marrow (surf and turf) once and probably would not get it again - the lobster was tough and not very flavorful. A small bowl is usually enough for me to be full, maybe a medium if I'm really hungry. A large is doable but you might have to take a few laps around the restaurant in order to finish unless your stomach can hold a liter+ of broth. I'm a fan of their spring rolls, and pho always hits the spot. It's a fairly light broth and not as herb-pungent as I would prefer, but a good base for a variety of tastebuds, if you catch my drift. Vermicelli bowls come with sweet and sour sauce on the side so you can tailor the level of sweet and sour. I do wish there was a little more seasoning on these bowls since the vermicelli was quite plain otherwise. Pay your tab at the bar once you're finished and chat up the owner for a little before waddling out.

    I'm so sorry Denver but Pho 95 was just not as amazing as all these reviews make it seem! Came in on a Friday early afternoon and there were plenty of tables available. Clean with a beautiful fish tank in the center. We got the pork and shrimp spring rolls, small combo pho and grilled pork noodle bowl. Over the years I've perfected my pho preferences from both the Bay Area and Central Valley of CA - full of dope and authentic AF Vietnamese spots. The pho broth here just wasn't it. I barely tasted any of the typical aromatic spices and was honestly so sad, it really just tasted like some beef broth. I hope I came on an off day because I left quite unfilled.

    Such a yummy Pho spot!! The service was great and server was really attentive and the food came out quick. The wontons were crispy and the peanut sauce for the spring rolls was great. Lots of meat in the pho too. Nice ambiance with music playing at a perfect level.

Once you're seated, you just keep picking out small plates you want to try, just like a lot of dumpling shops in China and Japan. It honestly brought back memories from my trips over there. A pretty small plate of stir fried green beans being around $20 was kinda hard to justify. The only dishes we really didn't care for were the Chinese Style Broccoli, which was pretty plain and lacked flavor, and the Pork & Mushroom Dumplings. They tasted good, but they were dry enough that I probably wouldn't order them again. Overall, we really enjoyed our dinner and would definitely come back, but probably only for a special occasion. The food and experience were great, but the pricing keeps it from being a place we'd visit regularly or for a casual night out.
