Broth flavor was really good, I ordered rare and flank steak. I don't receive the flank steak though and don't notice till I already drove away. Overall good pho. I was excited for the cream cheese wontons but was disappointed that they were way overcooked and almost burned. Taking a bite it just crumbled in my mouth and had a burnt flavor. We're in Coronado Island and had craving Vietnamese food on a chilly night so decided to try this restaurant given its high stars. We came around 7pm and it was not busy given it's a Thursday. We were seated right away, pleasant waiter took our order. We all had soups and it was decent. Nothing to rave home about. Now the bad part. As we entered the restaurant one of the waiter was trimming his nails right outside the door. Then he came into the restaurant and continued to trimmed his finger nails! We've been to Pho Bo a couple of times now and have always come out content. The food is pretty standard offerings for Vietnamese but they do it very well. Service before and during COVID has always been friendly, attentive, and quick. We had just come from the beach watching your typical lovely Cali sunset and we were a bit chilled so pho was perfect. I got a large Pho Tai Gau (P8) which is the rare steak and fatty brisket. I added veggies which included sliced carrots, broccoli, and bok choy. Its $1 to go large and $2 for the veggies. The broth is flavorful without being greasy. The meats and veggies were in abundance. I was happy especially with the brisket as in some places, it is way too fatty. It good ratio of fat to meat. Noodles were also in good amount allowing me to share with my wife. The same description can be said of my daughter's Pho Tai. We also got the grilled pork and shrimp rice plate adding a pork chop (add $3). This allowed the four of us to share three meals basically. They do a great job grilling the proteins here. Nothing dried out. Something about getting those pork juices into the broken rice making for a good bite =). During the summer we've had the Bún vermicelli rice noodles bowl with the same grilled pork and shrimp. Great contrast against the cold noodles. Fried egg rolls are a yummy appetizer.
