More than pho, Bue Bo Hue is my go-to Vietnamese soup. Pho Bac by Capital High School had the best in Boise, until Pho Nguyen came along. This isn't a regular item, but I've come in on a couple of Fridays when they've offered it as a weekend special. I find the broth more flavorful and intense than pho and Pho Nguyen's is very good. Broth is the most important part of Vietnamese soups and many other restaurants in Boise don't spend enough time simmering their broth or they don't add enough ingredients to flavor it. This delightful all around for delicious food and gracious service, family owned and operated Vietnamese eatery, featuring pho but offering other delicious traditional dishes too opened on November 10. Go once and I think you'll find so much to enjoy that you'll want to go again and again. It is my husband's and my favorite Vietnamese food restaurant in Treasure Valley. TRUE MOM AND POP: This is the first bricks and mortar eatery owned by the couple who are also in the kitchen cooking traditional Vietnamese dishes. (Although we understand that they have been doing catering prior to this.) We had a chance to meet and talk with the lovely wife / owner / cook (Kelly) at the end of our lunch to tell her how much we enjoyed our meals and the service and the ambiance and ask about a Vietnamese dish we love that is not on the menu. (Banh xeo which is like a rice flour 'pancake' folded over Vietnamese fresh herbs.) We learned she hopes to offer this seasonally, maybe as weekly special, in summer months and she will be doing weekend specials from time to time starting in December. So a tip is follow Pho Nguyen on Facebook for specials over time. MENU & FOOD: The menu includes several kinds of Pho, Com, Bun and appetizers. Prices run from about $6.50 to $13. I selected one of my favorites - bun thit nuong (rice noodle dish) and it was delicious for flavors and fresh herbs and grilled pork ($11.50). My husband often orders a com (rice plate) and on this one he enjoyed trying Vietnamese style shredded pork skin (new to him) and egg cake (also new for him). They use broken rice here, not often found on local menus, which cooks up with a great texture. The nuoc cham served with each dish was excellent. It is rare for us to do this, but we each ate every bite of our meals. This is an omnivore menu in the main but there are a handful of vegetarian options and some may be vegan. Keeping in mind this is a scratch made - fresh food kitchen, good food takes the time it takes. Which is not to say a too long time. But this is not a "fast and dash" food kitchen. VIBE: The layout of the space is much as it was with the previous occupant (also an eatery) with seating inside that works for everyone at standard height tables and chairs and booths and high chairs at the counter with all distributed in a way as to provide 'elbow' room for diners. There is also table seating outside. And with these new owners the entire place is sparkling clean and bright. SERVICE: Service was stellar on the day of our visit and our host / server turned out to be the brother (of Kelly) and brother in law of the owners. Top notch for warm greeting ("Welcome! Thanks for coming in today."), knowledge of menu to answer our questions (and make us feel comfortable asking them) and being friendly and attentive to diners. When service is this welcoming one is automatically inclined to enjoy the food. I'll also offer an observation that matters to me and maybe you too. In his role as server, the host often washed his hands at the sink at the counter. For example, after busing inside or outside tables. That kind of front of house attention for hygiene practices bodes very well for what is going on in the kitchen too. LIBATIONS: Soft drinks, tea, Vietnamese coffee (cold). I'm not sure they yet have their wine and beer license although it is planned to be served in the future. LOCATION: In the space recently vacated by 208 Pho & Vegan and right next door to the now vacant space that was once Pizzelchik on one side and with a Jimmy John's on the other, it is a little awkward to see and for the turn off of State Street to get into the lot here. The plus side is that there is a parking lot - woohoo for that. ACCESSIBILITY: Accessible (aka ADA) parking in lot including van accessible. Level in the door. All on one floor. Some standard height tables have clear floor space for wheelchair users. Tables on patio have fixed seats so not ADA compliant. Hubby reports unisex loo seems accessible but some items - like towels are out of ADA rules for reach range. HUBBY'S TRADITIONAL FOOD OBSERVATION: One group who came in was greeted by the host with "Welcome Back!". They answered him in Vietnamese and the rest of the host's conversation with this young foursome was in Vietnamese as they ordered and enjoyed their meals. Given my Italian heritage husband takes it as a good sign for food traditions when the owners and hosts at an Italian family owned eatery speak the language he grew up with, in a household where his immigrant grandmother didn't speak English, he takes it as a good sign for other cultures too when diners with the heritage of an ethnic eatery who speak the language choose the food. I really wanted to like this place. I have gone here serval times. I've been trying to find the best pho in the valley since I arrived 2 years ago. The service here is inconsistent and is the real reason I won't make this my go to. Food comes out at different times, and it's important when I bring my young ones it comes out at the same time. This is actually more important than it sounds written down. I can have two meals out and then two more bowls of pho not make an appearance until 10-15 minutes later. I went here on one occasion where I got my bowl of pho and one of the kids pho but after multiple reminders they finally got the other two bowls out. It's just not acceptable. The high schoolers working are nice but it's just not worth it to take kids here. When I have gone alone, it's been adequate. The broth itself is okay. I wouldn't say it's better than pho nominal or the downtown spot. The setting is about your average pho spot with a tv that has Asian cooking on. read more

All four variants of Pho, which is why we came, were awesome. Even those new to pho were very surprised. Both Vietnamese Coffee and Thai Iced Tea were also outstanding. Bun (Vermicelli) was indifferent. Far less satisfying were the Egg Rolls (Cha Gio/Nem) and Grilled Pork Spring Rolls: frankly, these weere both unacceptable. I had a girls lunch here on one Sunday in January! I love Pho, and nothing can come close, especially in the cold winter!! My friend suggested this place, and I was all for it!! Ok, cut to the chase!! Their Pho is probably the best in town. The broth is just perfection. The price is a bit high at $11.95 for regular size or $12.95 if you get the one with all types of meat in it. I'm used to paying less than $10.00 for a decent or good Pho in Boise and even in big cities (LA, Seattle, San Fran, etc). For an appetizer, I had one order of egg rolls ($6.50). It said 6 pieces. When I got it...I was laughing at 3 egg rolls that were cut into 6 pieces placed on a plate. My lunch came out to be $19.56 before tip! Giving this place 3.5 stars. Here is my extra thought. I LOVE supporting local businesses...by trying them out, definitely letting the words out if good, and sharing constructive and honest feedback with the owners if possible. I have a bit of resistance, however, when I feel like their prices are unreasonably high. Sure, they are here to make money, and I want them flourish. Perhaps, it's naive of me to think that they also want to provide products and services to the locals in an affordable way. When I do feel like they are charging overly higher price, they become another chain restaurant to me - I'm just indifferent about spreading the words about them. As for Pho Nguyen, I would go back because the food is great, but not as often as I would because of the rather high price. On a night where it seemed there was nothing I could do to get warm, I decided to try Pho Nguyen after being tipped off by my Yelp app that a new restaurant had opened just minutes from my home. The space was open and tastefully decorated in a style reminiscent of many restaurants I have visited in the Orient. I was greeted warmly as soon as I entered and asked to sit at my choice of tables. I was served by the brother of the owner who was helpful and brought my food out immediately. I ordered Fresh Spring Rolls, a large bowl of Rare Steak & Brisket Pho, and a side of pickled onions. The fresh spring rolls were huge but surprisingly light and fluffy, beautifully presented with a serving of flavorful warm peanut sauce. The Pho was piping hot and delicious, with as others have noted a hint of sweetness and anise. I met the sweet owner Kelly who said she had been catering for a few years then had an opportunity to buy this facility. I've tried every pho place in Boise, and Pho Nguyen is my favorite. It is clean and service is efficient. Had the vegetarian spring rolls which were fresh and delicious, and the peanut sauce is tasty. Beef pho with rare sirloin, brisket, and meatballs was yummy and satisfying. Broth is a little bit on the sweet side for me, but I added a little bit of hoisin to balance it out. I only wish they had an option to order a "Small" portion. I got a regular size and it was loaded really good with the amount of noodles. At some places I have been before, a regular size left me with wanting a little more noodles. I love the grilled pork steak with pork skin and a friend egg. The grill port tasted just like what I could remember although the steak was a bit too thick, the flavor was there and it was tender. I also ordered egg rolls which is fresh and delicious. The owner was quite friendly and the restaurant was nice and clean. The parking lot is a bit small, I have concerns of finding a space when it is busy lunch hour. (I went around 2 p.m. on Friday, so it was ok) The beef broth smell was awesome when I walked in. Loving the flavors of my Pork Bahn Mi from Pho Nguyen! The tasty Vietnamese sandwich is served on a crusty baguette similar to a French baguette, with a crunchy exterior, and soft, chewy interior, and for additional flavor they added a slight char to the bread which gives it a slightly grilled flavor. The sandwich was filled with nicely seasoned pork strips that had a slightly sweet soy flavor. The meat was tender and flavorful. The toppings were the traditional cucumber, cilantro, carrot, and jalapeño mix. While good on its own, I added a drizzle mayo for creaminess, and a squirt of sriacha for an extra kick of heat! The service was quick, and my only complaint would be the size of the sandwich for the price: the sandwich was about 5 inches long by about 3 inches wide and cost $8.00 plus tip, whereas I can get a similar sandwich elsewhere in town for about $5 for double the size, and both are equally tasty. Um ... Wow. I wasn't expecting a legit pho joint here in Boise. I am from San Francisco and there is a great amount of Vietnamese spots there, not to mention San Jose that is a Vietnamese food haven. I honestly love pho & other Vietnamese cuisine and travel throughout just to try all of the different joints. Pho Nguyen has a great price, quality, and quantity of foods -- just what I want in a bowl of pho. I get tendon, brisket, sliced beef, good broth, cartilage... all in one. We tried out this family-owned restaurant late one evening for dinner. I love how they made the space clean and attractive and the space looks totally different than it did before. The food was good and I loved how they had Christmas music playing in the background. What could use some improvement is the service.
