Late post We used to frequent this location quite often, especially after the southeast location closed. Since we were much closer to this restaurant than the Eastern location, it became our go-to spot for a while. Unfortunately, our recent visit wasn't quite as enjoyable as we remembered. The service was friendly and efficient, and our food arrived quickly, which was appreciated. However, the quality and flavor of the food seemed to have declined from what we remembered in the past. While fast service is always a plus, we'd much rather wait a little longer for food that is more flavorful and memorable. We came in here on Friday morning and it wasn't too busy. They had free parking lot in front. We got seated right away. There were lots of tables and chairs and the place was big. We ordered two pho bowls, one vermicelli bowl, and banh canh soup. This place was a very authentic Vietnamese restaurant. We also got three Vietnamese coffees and one egg roll appetizers. The coffee was real strong but it tasted good with a fair amount of sweetness. All the food was really good. The broth for the pho and banh canh was super rich. The egg rolls were fried very well. I'm used to pho broth that tastes more heavily of spices and has more fragrance, so Pho Saigon 8's was a little too light for my personal preference. The waitress was sweet and accommodating to us who were following lent (no red meat). Order a seafood pho which is my mom's favorite because of the rich flavor of the broth. For the vermicelli noodle bowl, I always pour the entire sauce onto the bowl and stir very well. I always ask for extra sauce. It is very tasty. I literally could eat here every single day. Every time I visit, the restaurant is clean, the staff is friendly, there's never a wait to be sat, and my food always arrives quick. Phuong is always there to to greet me with a smile and she took the time to help me establish my favorite things like the difference between their homemade chili oil versus their chili paste and she never looks at me weird when I order an entire bowl of crunchy onions to add to the top of my pho.
