Let's talk about the sauce, because that's where most places fail. It isn't that sugary, paste-heavy stuff you find at standard joints. It is vibrant, bright, and tastes intensely of sun-ripened tomatoes and clean olive oil. It is remarkably fresco; striking that perfect balance where the acidity cuts through the richness of the cheese without overwhelming the palate. The vibe inside the West Lake spot is casual and unpretentious, but they take their craft seriously.
