    Very solid NY bagel spot. This is a no frills bagel place, with limited bagel flavors and schmears. It's intended for take and go; there's nowhere to sit and eat, and they don't cut or prepare them for you. I wish I knew these things before I went, because I ended up scrambling trying to find a separate cafe to sit and eat at since it was raining. Luckily there was a boba spot down the street. All that being said, the bagels themselves were excellent. I got an everything, sesame and plain, with a green onion schmear. I was hesitant about the schmear because I don't actually like onions, but was told it's the most popular so I took a chance and was not disappointed. If your priority is high quality NY bagels, this is the spot. If you're looking for bagel sandwiches with other toppings and a place to sit and eat, this is not it.

    Visit June 2026: I'm admittedly not a bagel expert but when in NYC a bagel is a must. Supposedly so is eating a street hot dog but I'm not too sure on that lol. Anyways, the girls had bookmarked another bagel establishment but the line was hella long like they were giving away Knicks gear for free. Ironically another "bagel shop" search on Yelp showed PopUp Bagels was like three doors down lol. No line! That in itself was making me question but there is a PopUp in San Diego that my daughter swears by. PopUp advertised itself as "Not Famous, but known." Whether or not this bagel is better than the one store three doors up is something I cannot attest to. However I can say THIS WAS A DANG GOOD BAGEL! And it was freshly made! How do I know? It literally burned my fingers when I ripped it open! The pain was worth it. Outside, a slightly crisp texture generously coated with "Everything". Inside was a dense and chewy dough that was pliable but able to withstand the dipping and shmearing of cream cheese (which was smooth). Best I have ever had for sure but then again my most common bagel experience is the place named after a scientist where tons of bagels are sitting in bins for who knows how long. So why wasn't this a 5-star experience? One, I only ate one thing. Two, sevice and setting are "just there". Considering it wasn't busy I would expect a bit more of a welcome. To eat you're bagel you can full on just leave, sit at the three stools inside where it is super hot (bc hey they actually cook), or three stand outside. There is a little, I'll say "patio", where you can stand, eat, and true story, watch two people argue about who gets to sort through the recyclables from the neighborhood eateries. Snack and a show???? I just stood near the door and enjoyed my bagel.

    Ok, I'm going to compare PopUp on Thompson St in NY to the Brentwood location in CA. The water must make a difference because I liked bagels at the Soho location better. Wait, maybe it's Soho-adjacent... Greenwich(?). Feel free to correct me on that. I wasn't planning for my taste buds to enjoy such a commercial endeavor! I'm usually the you-know-that-bagel-shop-outside-the-train-stop kinda gal. Their valuation is nuts, expansion plans are beyond ambitious, and collaborating celebs aren't any I'd follow (maybe with the exception of one lol). I want to appreciate the product before this buzz dies down or at least before customers start to realize that a minimum purchase of 3 bagels and schmear should be illegal. The growth plan might sound annoying now, but I think it will inevitably fuel a faster return to the old school bagel shops that will dutifully slice up a singular bagel, adorn it with lox and capers, and remember your name (or at least your face) when you return for the same order. Save all the drama, the PopUp bagel is actually pretty tasty with a nice chew. The non-plain ones tend to be salt-forward in my opinion. For example, the poppy is not just poppy. More like poppy seeds and salt. For schmear, I tried the plain (nicely whipped) and the limited edition Papa John's pepperoncini (think chopped peppers plus a dash of pizza seasoning--very salty without a bagel base). They also gave me a coupon for a free Papa John's pizza with a $15 purchase, courtesy of their collab. The staff are genuinely nice, line moves fast, and you get a compact carry-out bag to help boast that you made it to the store. I didn't have complaints about the taste or texture except that I didn't want to share double-dipping-spit with others. PopUp would benefit from a "kids" order of 1 bagel and a smaller schmear tub because people would still buy that for $5 to say that they tried the viral sensation of the rip and dip. Maybe we'll see that option when their profits start to plateau. In the meantime, they're just going to ride the wave for as long and far as it will take them. I'm not mad at that. It just makes me wish I were more entrepreneurial. (Spellcheck please.)

    The bagel itself is pretty solid. It's fluffy and got a nice texture to it. Honestly though, I'm not sure I really fugg with the whole concept. You cannot order a single bagel, you must order your bagels in 3s. So if you're not a big back and instead are a loser with no friends, you might have more bagels than you can eat. The bagels come whole and you're supposed to rip them and dip them into the cream cheese, and there's many smears to choose from, which is a plus. However, this requires a two hand situation, which means it's difficult to eat on the go, and the seating inside is limited. I did not realize this at first and I was trying to slice my bagel in half with a butter knife, and I failed and started ripping it to shreds in a fit of passion and rage. That when I saw their neon sign that says "GRIP. RIP. DIP," which sounds sexual, and realized that's the concept and intention. My advice--if you're gonna visit, come with a couple friends so you can try the bagels without having to eat 3. And bring hand sanitizer so you're not ripping up the bagel with your filthy subway fingers.

    I tried the everything bagel with scallion cream cheese and it was so good! The bagel was the perfect pull-apart texture, though maybe everything bagel wasn't the best choice because the toppings were falling everywhere, but it was nonetheless delicious! The scallion cream cheese was creamy and fragrant. It was the perfect combo. Fortunately, no line at the time I went (~1pm on a Friday) and the staff was very kind in providing my friends and I some plates so we can enjoy our bagels in the shop.

    I've been waiting to try this for quite some time and on my way to work I stopped by quickly. Whole selections is not a lot, I still had a hard time making my selection! The staff member was helpful and patient with me. I went with the salted bagel and everything bagel. This week's schmear was spinach artichoke cream cheese and Sabatino truffle butter. I went with the butter and wasn't a bad choice. Will return to try the cream cheese!

    So far, one of the favorite bagel finds if you want something not too crazy and simple yet jammed packed with flavor. The everything bagel with creamy garlic dip was such a fun eat. I usually eat my bagel like this anyways but popping by a dedicated shop just for it, hits right on the mark.

    I've seen the hype and I hate to admit it, but this was one of my favorite bagels of the trip. I do think 1 cream cheese better serves six bagels, but the everything bagel was perfectly warm with a great bite on the outside and a fluffy inside. Unfortunately I think they forgot the salt in their sesame bagel dough because the flavor was flat. The staff were nice and friendly though and I enjoyed the interior decor.

    It really doesn't get better than Popup Bagels after a night out. Their warm rip and dip bagels paired with butter and/or cream cheese is truly so delicious. I would eat this every morning for breakfast and never get sick of it. Always nice staff working too!

    I really wanted to dislike this hyped-up spot but, damn it, the bagels and schmear were delicious. We ordered the three bagels in a bag deal with a big container of scallion shmear which we shamefully almost finished. The bagels (one salt, one everything, and one sesame) were delivered absolutely piping hot and super fresh. They were delicious, with the salt one being the winner. The schmear was excellent, too. Zero line on a random weekday. The inside is as small as a closet but there is a standing area directly outside where you can and should enjoy your freshly-born bagels.

    This is a small bagel spot. Went in for a bagel with butter. So I ordered a bagel with vanilla berry butter. Didn't realize they sell the bagels by 3s. Silly me just wanted one bagel. I was able to "try before I buy" and I can understand the hype. The bagels are delicious, airy and soft. Could've eaten 3 in one sitting. Go for the bagels.

    So I've tried this place when my sister brought me the bagels and they were good. But def worth a visit - highly recommend eating the bagels as soon as you pick it up. All bagels are fresh and hot. Crispy on the outside and doughy on the inside!

    Perfect warm bagels you can rip apart and dip into the smear . Fav was Salt and Everything. Scallion smear was good.

Many gluten free bread products need to be toasted to be edible which is why I always get them toasted. My receipt said toasted. The bagel was pale and cold. And falling apart. A different bagel store refused to sell their gluten free bagels untoasted. At least they didn't give me food that I couldn't eat. I will not be going back to NYCB&CH anytime soon because that experience left a bad taste in my mouth...literally. But if I do I will make sure to check my bagel before I go.

Liberty Bagels is one of the more famous places to get one. I opted against the six-year old part of my brain which wanted the kaleidoscope-y rainbow bagel and opted for an everything bagel with nova (which is different from lox - til) and scallion cream cheese. Firstly, the bagel was just great. It's not quite as crispy on the outside as the best I've had, but definitely does enough there. The golden brown color is absolutely there. And the inside is so fluffy and so easy to bite through - yet at the same time keeps the cream cheese at bay and prevents the two from merging. The everything on the everything bagel is not quite as 'everything' as I would want, but it's certainly everything enough. The nova is also fantastic. It's got that slightly fishy taste that lets you know its fresh without overpowering every bite. The salt levels are phenomenal - both from the bagel and the salmon. The portion of it could have been *slightly* bigger, but the taste was really great. I also loved the scallion cream cheese. It was only on one side, which was a little unfortunate, but the amount reached the perfect bagel/salmon/cream-cheese triumvirate of a ratio where everything blends perfectly together. The texture on this was just so creamy. The capers were nice, but some more red onions would've been ideal. For just around $17, this is pretty large - and I think a decent deal for the level of quality you're getting. Overall, this may not be the best bagel I've had, but it remains one of the best bagel sandwich experiences. 9.25/10
