Staff is friendly and down to earth. Ordered the OG, but lettuce wrapped, no bun. You get charged extra for lettuce wrap....and it is NOT worth it! They used the inner leaves, so it's like thin strips of lettuce versus (in and out) other styles that literally WRAP your burger. I like that you can specify how your meat is cooked, but unfortunately they don't know how to cook the meat. It was warmer than blue, but def not medium rare. No seasoning on the meat. Probably won't be back for another $15 burger (no fries, no drink)

On our way to the airport we stopped in this complex that had a plethora of eats and Bearded Tang Brewery. We decided on primal cuts. We ordered the smash burger fries as well as the Korean wings. The guy behind the counter was very spacey not really paying attention to his surroundings, but it was quick service so I wasn't really worried about it. The smash burger fries were simply but full of flavor. Both my wife and I could have had a couple orders of them. The wings on the other hand were a bit squishy and very very saucy. They had a decent flavor, but I tend to look for a good crunch and a thin flavorful layer of sauce. We were craving wings so they served their purpose. If we're ever in the area again we would love to try more things. But there is also so many more places in this little area!

I'm not going to lie, I didn't have high hopes for a steak place in a food court type venue. But this place was amazing I even thought to myself, how old is this meat and how long has it been sitting here. But omg it was so fresh and tender It's conveniently located inside rodeo 39. They have plenty of free private parking. Plus you can explore tons of other places after you eat here We went up and asked the girl behind the counter for some recommendations. We went with the ribeye cut and then you get one butter / sauce and two sides. (42 dollars) We also ordered a butcher burger, fries and two drinks. The total came to around 60 dollars. Which to be honest the steak was just as good as any steakhouse. And worth the price alone. When our food was ready we got a text and went back up to the counter to get it. One of the workers helped carry the food out to our table. I like how I can pick the meat and see it in the case, the service was great, i like that I can see the people cooking it as well, I think the price for steak is extremely reasonable especially when it comes with two sides, it literally took about 10 minutes for our food which was great and it's a great location for food lovers. I'll definitely be back again

PREMIUM PATTY. Craving the taste of umami burger but unfortunately the chain no longer exists. I sought primal cuts truffle butter burger and it satisfied the craving. The truffle burger was buttered up with truffle butter. Had a few mushrooms and raw onions that made the flavor pop. The patty was a decent size and not dry at all. If I had any impulse control this would be a complete meal, but I had to get the fries. The fries were drenched in truffle oil but not in a good way. The flavor was there but there was about a cup of oil sitting in the box of fries. I had to squeeze the oil out of each fry. I didn't know whether it was truffle butter or frying oil. It was a bowl of cereal. I didn't get a drink since their selection consisted of canned soda and a few premium bottled sodas. Something about canned drinks just doesn't taste the same. Despite the fries, overall it was worth the try for 24 dollars.

This steak sandwich was yummy but felt like it was missing something, maybe some more meat or arugula/onions. The bread is pretty thick but it's not too dense. The aioli was yummy tho, and the steak was nicely medium rare. The truffle fries were good but the truffle flavor was very mild and missing parmesan cheese.

I'm impressed how good the butchers burger and shoe string fries were. Did no sun dried tomatoes and killed it without the bottom bun. Shoe string fries are in my opinion the best type of fries and primal cuts delivered. Customer service is pretty great. Forget in n out and come here you will not be disappointed.

Location: Located inside the Rodeo 39 Food Hall next to the restrooms. Parking can be found in shared lot, but might take a while to find a spot depending on the time you go. Ambiance/Decor: Modern looking food stall with minimal seating. You can find available tables and chairs through out the food hall though. Entertainment: Sit at the bar and have a peak at the meat masters at work while they make your food. Service: Service was good. Food came out at a decent time. Food Of Choice: Shared the Butcher's Burger (comes with fries) which consisted of aged angus beef, swiss, garlic aioli, arugula, caramelized onion, and sun dried tomatoes on white bun. The butcher was very good. The meat patty was moist and tender and the fresh ingredients meshed well. Primal Cuts For Thought: Would love to come back to patronize the shop when I'm in the area.

I've been coming to Rodeo 39 for awhile now and finally tried the primal cuts smash burger. I got it with the garlic aioli and wagyu patty for an extra $1. You can really tell a difference in the meat compare to other places. It was juicy and flavorful, potato bun was perfectly warmed and it didn't have too much sauce or cheese. Honestly this is one of my favorite smash burgers I've had. I would put it top 5 in OC for sure!

Located inside Rodeo 39, Primal Cuts is a must try! Came with a bunch of family and friends and they all raves about this place. My husband and I got the Ribeye Steak with truffle butter and got fries and mashed potatoes as the sides. For $30-something dollars, the quality is phenomenal! Honestly, it was better than some of the pricier ribeyes we've gotten at some restaurants. It was SO juicy and flavorful (the truffle butter is a must if you like truffle). We're from out of town, but if we're ever back in the area, we will definitely be back here!

Eh. It's ok. I was craving a burger and Primal Cuts is the only spot that sells burgers in Rodeo 39. I ordered the OG Burger which comes out to $15 with tax. At that price I was expecting an above average, decently sized burger. Instead, the burger was quite small (very thin patty -- see pic), and quite frankly, mostly bread! The patty itself was cooked well and the complimentary ingredients (pickles, onions, cheese) were solid, but there was nothing "wow" about it. I wish the serving was bigger and the patty thicker (or give two thin patties with cheese in middle). The bun was fine. For $15, you can get something better at Rodeo 39, where there are so many options. Honestly I would have been just as happy with In-n-Out across the street.

Tried this place out on the grand opening of rodeo39. They were out of rib eye unfortunately, but I've always wanted to try picanha so I ordered that with mushroom and mashed potatoes. Took about 30 minutes, but was understandable on such a busy day. My picanha wasn't medium rare, more medium. However it was still delicious. You can taste the truffle butter but it doesn't overpower the natural flavor of the steak. The mushrooms were delicious, wish I got two sides of it instead. Mashed potatoes were good, nothing special though. Definitely worth the price! read more

I had this place bookmarked for quite some time and finally had a chance to stop by to try it out, and everything was amazing! From service to the food, everything was simply amazing. My boyfriend and I had the Caesar salad to start and we both shared the ribeye steak dinner with asparagus as a side. The salad was refreshing and tasted super fresh. The steak was cooked to perfection! The owner was kind enough to give us complimentary cheesecake and it was seriously one of the best cheesecake I've had. 10/10 would recommend!! read more

Ok so I'm SUPER picky with my steaks. I've been to so many places and none of the steaks I've had hits the spot quite like Primal Cuts. SOOO incredibly juicy and tender, never too tough that my jaw gets tired of chewing like the other places I've been to. And the truffle butter??!!! Chef's KISS !! Five stars cause I'm biased towards the main chef ! But truthfully food was delicious they let customize my ridiculous order how I wanted everything was cooked properly and seasoned properly . Presentation was impeccable . I didn't have to wait to long for my order and the workers were very friendly ! Both pros and cons ...let's start with Pros: Angus burger was delicious! I would definitely go back for more. Ribeye steak had good flavor, love the truffle butter. Cons: Mashed potatoes and fries were plain. Steak over cooked a bit. Recommendation: maybe garlic mashed instead of plain and truffle parm fries instead of plain. Also there were sun-dried tomatoes on the burger but is not listed as an ingredient on the menu. You should prob add on menu so people know what's included. read more

I've tried their butcher's burger and truffle burger. Meats were cooked the way I asked, caramelized onions were great, and their spread added extra flavor. Unfortunately, I think it was a bit overpriced. But if you happen to be at Rodeo 39, it's worth trying out for the experience. read more

By far my favorite new restaurant not only in Rodeo39 but in my city. The menu is simple and everything is made to perfection. I had the butcher's burger and some of my friend's ribeye steak with mashed potatoes and mushrooms. TASTEEEE. The staff is knowledgeable, friendly and dare I say handsome. I frequent this spot at least three times a week and would frequent it even more if the staff decided to turn it into a chip n dales. Primal cuts has more than one kinda meat that interests me. read more

Not the best steak I've had. My food was waaaaaaay to salty to eat and the garlic covered the taste of my steak. The only thing I did eat was the asparagus. Also I requested medium rare and my steak was medium . I would definitely try another place in Rodeo 39 and skip this place . read more

Went here for the first time. Ordered the Truffle Burger with Fries. The burger was ok, not a lot of truffle flavor + it was $18.99 with a side. I thought that was a little expensive. It did fill me up for dinner but if you want a delicious truffle burger try Hopdaddy. I don't think I will be back to this place. So last night, we decided to check out the Rodeo 39 market for the first time and we ended up trying the Primal cuts. We honestly love the meal! We got the Picanha medium rare, mashed potatoes, and carrots. Everything was so delicious! I can't stop thinking of the mashed potatoes. My fave obviously. We definitely coming back (welp, my husband just did as I'm writing this post ). So the reason I deducted 1 star is for the customer service. We felt like the lady in front was not accommodating. We were asking her nicely about the menu since it's our first time and she gave us the snobby vibe. And she did the same thing when we got our food. We requested for a cup and straw for our coke, and she said "no we don't have those" right away. We felt like she doesn't have patience to accommodate customers and that threw us off. Hope the store manager will be able to give some advice to the front lady since she's the first person to take care of the customer. That would add up for good impression of the restraurant. read more

My dad isn't a big fan of hamburgers. He got a burger from here and said this was the softest burger he's EVER had. He said biting into it was like biting into an ice cream, super soft. He enjoyed everything about it and couldn't stop talking about how much he enjoyed eating it. He said it was the best burger he's ever eaten in his entire life. Im writing this review as I'm eating my garlic smash burger. I so want to write this later so I can keep biting into my crispy juice burger but need to do my due diligence. Their OG burger is a very solid burger, you can taste the quality in their ingredients. But my favorite is the weekday special smash burgers. The amazing crispy texture is mind blowing. The flavor is amazing. For people who know how texture plays into food you will understand why I'm addicted to this burger. In n out is a staple and located across the parking lot but I can't help to always reminisce about the smash burger over the week. read more

Can't fool me twice. The displayed is not what they cook. My meat was cooked and seasoned perfectly but it chewy as heck. Sides were good. To get a 5 star you gotta serve better quality meats even if you have to charge more. Suggestion, have different grade meat and let the customer pick. Charge accordingly to meats grade and oz. read more

Yummy yummy yummy I've got love in my tummy! Dang this spot is good! I had the NY strip steak, mashed potatoes and heirloom carrots with a garlic butter sauce and my man had the butcher burger... the garlic aioli on that sucker was bomb.com. Everything is made to order. It's fun and unique to order a steak meal at a cash register and did I mention so freaking good! So long story short I highly recommend this joint. read more

Stay away! Not worth the money. The steaks you see that are supposedly aging are not what you get. Ordered a ribeye and what I got was pounded so thin (I'm assuming because they don't know how to cook a steak that thick). Now because they pounded my steak so thin they obviously way overcooked it. Ordered mid rare and got a well done. Even more upsetting is the fact that they serve it sliced. That being said they saw how overcooked it was and served it anyways. Had to wait for another pounded steak. Ordered mushrooms and carrots for the sides. The carrots were practically raw. They were way too thick. Button mushrooms were served. An aged ribeye with button mushrooms? Seriously? Needless to say will not go back and would never recommend to anyone. read more

Ok, I want to start out that my food tastes REALLY good. I got a rib eye medium, garlic butter on top, mashed potatoes and carrots for my sides. My issues: When my husband asked the person working the register what was "more raw" than medium, they responded "medium well". Granted, it was a little weird phrasing on my husband's side but total wrong answer. I watched the cook inside place raw steaks on the cutting board counter. Cook them. Then put the cooked steaks back onto the counter where the raw steaks were sitting. Uhhh... wait, what? And the finale was the person who took her mask off and had it hanging off her ear while asking my husband's name and giving him the order. Umm.. please put your mask on especially when you are a FOOT AWAY FROM MY HUSBAND. Ok, these issues aside... honestly, I ate my food and it was delicious. Would I pay $30+tax for all of this? Nah, I can make it at home. read more

This place is SO GOOD! The steaks are perfectly seasoned and cooked. The fries are freshly made. The sauces are... WOW. Eating here made me realize what people on those Netflix chef shows are grubbing on. I can't wait to come back and bring a date hehe. Highly recommend! read more

Let me preface this by saying that I've never had an experience where I've wanted to leave a review. We ordered a burger and received the wrong order. We also ordered another item with mashed potatoes and instead of a heads up to change the order or cancel we received a substitution of fries which were also overly salty and soggy. There's also a lack of service at the register as they all seem to work in the back at the same time. To top it off the food in general was overly salty and, in my opinion, not worth the effort. read more

Today was my first time coming to Rodeo 39 and after about 10 minutes I decided to try out Primal Cuts cause who doesn't like a good steak. The cashier with the red hair was very helpful and nice, she explained the menu to me very well. The cook with the glasses wearing an apron cooked my steak perfectly. I got the ribeye with mashed potatoes and the grilled broccolini which were a little crunchy but I prefer it like that anyways. Overall the customer service and the food quality was great definitely will be coming back and highly recommend this place. read more

ordered here few times, and the burgers are terrible. they stated mustard on the og burger but have a strong kick, seems like wasabi... Also poor service, long wait for something will go into the trash. in n out, is in the same parking a lot. you can never go wrong with in n out. read more

We have dined here 10 or so times, service has been great! However they definitely have had a change in the quality. They changed the buns to some cheap buns instead of the brioche buns they use to have. Fries havnt been up to par either. Hopefully they go back to the old ways and quality we enjoy going there. read more

Amazing burgers, in my opinion tied with Shack Shake. Primal Cut's burger meat quality is 100. I believe they make they own ketchup in house, it will cost you 69 cents but it is very well worth it. Awesome ketchup (try it and you will see). read more

Food is good but service was not matching. Burgers are expensive and you get a small amount of ketchup. If you want extra it's .75 cents. Wow, can't just provide a decent amount without a surcharge. 3rd time I eat here and I never have enough ketchup but I don't expect to be gouged. This is the last time I eat here, hope the .75 cents was worth losing my business. I'm sure they will be fine without me. read more

I ordered the Scallops, shrimp cocktail, lobster mac, and cream corn. My sister got the escargot, grill asparagus, and mushrooms. We also order a few caesar salads. My mom ordered a few mocktails. The appetizers were delicious I really enjoyed the lobster mac and scallops. And now onto to ordering the entrees. I ordered the 16oz Prime Rib medium rare and Scallops potatoes. My party ordered 3 of the 58oz Prime Angus Cowboy Ribeyes with Scallops potatoes. My mom and Step dad shared one order, My sister and her son shared the second order and my brother had the last order to himself. His fiance and her parents ordered Austrian Prime Black Angus Filet. The bartender wasn't very pleasant and seemed unimpressed by my selection because mezcal is not my thing. After we ordered, a couple arrived after 5 mins of us ordering, ordered, were served their wine before us without a bill. But my husband and I were served about 10 mins after this couple and immediately given the bill. It gave the impression she was either unconcerned with serving us or untrusting of our ability to pay. Now my opinion on the food was mediocre, the steak was cooked to our liking of medium but not a flavor that warranted the cost. Oysters were sweet flavored and escargot had little taste even with all the garlic. I don't mind paying the cost but with the initial service and the food being mediocre for the price, not likely a place I would go again. More of the, "tried it and it was ok" type of experience.

On the other hand, when we asked for the check, they were happy to accommodate turning our table very promptly. In the past several years, several high-end options have popped up locally for Brazilian churrasco. At the same time, Fogo de Chao has been expanding to create locations all over the US and they have not maintained the consistency with quality and service. Despite the higher price tags elsewhere, I will be going there for consistency with quality and service.

Primal Cuts used to be one of my go-to spots. For $22, you'd get a solid 8 oz picanha with two sides, a great deal for the quality. But under the new ownership, things have taken a steep turn for the worse. Now, the steak is still $22, but sides are no longer included, they're $8 each. That turns the same meal into a $38+ experience before tax and tip. I understand there are tariffs and rising costs, but this pricing model just feels greedy. There was no upgrade in portion size, quality, or service to justify the change, just more money for less. What really sealed it for me? The food came out lukewarm in a black plastic takeout container. For nearly $40, I expected something plated with care, not something that felt like a rushed to-go order from a chain. The rest of the food court is buzzing, but Primal Cuts is consistently empty, and I get it. The pricing is out of touch, the presentation is cheap, and the experience just doesn't hold up anymore. I really wanted to keep supporting this place, but it's hard to justify coming back. It's frustrating because the food isn't bad, but the value is gone. This place is good to eat but it's quite a let down. I've come here many, many times prices been changing up and down by a few dollars but since they lowered it business has been steadily booming here. There is no"brown crusted steak". Everything is just cook to internal temp then sliced up and to me that's a big down fall. Without the high temp cooking the meat actually cools off pretty quick so by the time you eat it, it's already at room temp/cold it doesn't taste good because the food isn't hot. I have to order medium rare ribeye then when I get home I microwave it for 45 seconds because the whole meal isn't even hot or warm. You spend good money here but it leaves you hungry still. TLDR:GOOD FOOD SMALL PORTIONS. The only place equivalent to here is Cafe Artist where their 1LBs+ bone in ribeye is 31 dollars. Atleast let me be full off the best item on the menu but sadly it is not read more

Coming into this plaza I thought it was very trendy and good hang out spot for the area. As I walked around I saw steaks in a display case thinking it's a deli style restaurant. I thought with it being freshly made it was going to take about 30 minutes which I was totally fine with. Watching them make it from the side I realized that the steak are precooked (sous vide) and just seared. After receiving my order I got a well done $40 steak and food poisoning. Please be careful when ordering here as you don't know if you're getting your steak how you want it to be. Service was ok being a order up front place. The wait was around 30 mins for it being one order and pre prepared. All in all take your $40 and sit at an actually steak house with table service. read more
