I am so happy I found this bakery while looking for what is close to Maru Coffee for a nice treat! I got the seasonal croissant, which was spinach, onion, béchamel and cream cheese. Was not worth the hype. I may be a bit biased because I don't love croissants in the US & have rarely ever found ones that compare to the ones the french make. I just found these to be a bit dry/crunchy. I also ordered a kids hot chocolate, which ended up being dark chocolate. I think the best indication as to how much I loved this bakery is by telling you that on my week vacation to Los Angeles, I ended up coming five days in a row. This place not only has some of the best selection of baked goods, but pretty gnarly coffee. Croissant: what originally brought me to Proof was their croissant. Usually when I go visit a new city I like to try whatever the best croissant is said to be. And boy was this it. Ultimate flakiness, with a crunchy exterior and layers. It's no wonder that these flew off the trays in no time. We ended up having one croissant a day for the entire trip. Both their plain croissant and ham and cheese croissant or a must do. The ham and cheese croissant was very tasty, though I will say that the ham was a little conventional (sort of resembling a slice of deli meat, not that that's a bad thing). Quiche Lorraine: we had this on the last day of our trip, and I will say that this is one of our biggest regrets. The quiche has a perfect crunchy crust with an egg soufflé like texture. I had this place bookmarked for a few years and finally drove 45 mins out here while my daughter was at preschool so I could get a birthday cake slice for myself. I ordered at 1030am and the cake was so dry it was literally the DRIEST, worst cake with hard frosting (look at the crack on top) I've ever eaten in my life. I've eaten a ton of cakes and pastries in different countries and this was the WORST so that's saying a lot. If you're going to sell something that's older than 2 days (which this tasted like) at least disclose it or sell them at a discount or donate to those in need- there isn't a shortage of those in LA. It's unethical to charge $6/slice for horrible cake. I should've been warned by the other reviews but thought I'd give the benefit of the doubt. I messaged them on Instagram but nobody replied. Proof is located in Atwater Village, and it tends to be a popular destination during the weekends. I could probably list all of the various baked goods I've tried here, but then you would realize that not only do they have a wide variety of excellent pastries but thatI have no discernible limit when it comes to carbohydrates. From their croissants (including the almond and savory version with ham and gruyere) to their cookies (I'm partial to their thumbprint cookies with a jammy middle but their orange cardamom shortbread is also great), I haven't tried a dud. Their fromage blanc cheesecake has a very smooth texture, and I recently tried a seasonal fruit danish with a pluot slice that provided a pleasant tartness. They also offer coffee and espresso-based drinks, and so far, I've found the service to be consistently friendly. read more

The chocolate chip cookie was crisp with layers of rich dark chocolate and topped with coarse salt. A solid cookie, though not the best we have had. The cake had a chocolate ganache, espresso cream and buttercream filling. It was so rich, the two of us were not able to finish it in one sitting. Not the best balanced cake, and a whopping $7 for a slice. For that price, I would expect higher quality, however we did get the two things the bakery offered that did not require proofing (so perhaps we should have gotten the croissants instead). 4 stars because the prices were exorbitant given the quality. read more

I will keep this review kinda short. One of the BEST BAKERY in town? Yes. They run outta goods early. If your not an early bird don't even think of scoring their best selling croissants or pastries or cakes - impossible in my experience. Good news is, if you really really really want a specific item (CROISSANTS) you can order in advance - it takes three to five days, am told. I love Proof and nearly everything I have tried has been delicious, but I have only tried a handful of items....more on that later. There always seems to be a line to the door but it moves quickly. It seems like everyone that comes here knows exactly what they want. Also I am not sure what the best time to go is, but I usually come during lunchtime on a weekday, and the place is packed (no seating) but there aren't too many desserts to choose from at that hour. If they have more baked goods in the back, they aren't re-stocking fast enough. Also I have to mention the price point. $8 is a good price for a sandwich but unfortunately unless you are a child, you'll need two of their sandwiches to feel satisfied. I'm so bummed it's taken me so long to try this place, but better late than never. If a bakery has an almond croissant, I will always order the almond croissant. I've been on a search from something as good as I had in Boston, but literally having no luck. Proof just might be the bakery that fulfills my almond croissant craving. Most bakeries use almond extract that tastes like medicine. But Proof uses actual almonds to make the almond paste in the middle of the croissant. It's so flaky, buttery and just the right amount of sweet. I would love to eat a whole dozen of these, but my COVID weight says I probably shouldn't. I also tried their chocolate chip cookie, which is very moist, chocolatey and I love the sprinkled salt on top to give you the sweet and salty. We definitely wanted to try more amazing baked goods, but we were good about restraining ourselves. We ordered regular lattes and they were good, but nothing substantial to write home about. The boyfriend and I came here on a Friday morning and there was about 5-7 people waiting in line, but only about 3 customers at a time in the store (which at the time capacity was 25 including staff and customers). We were in no rush and the wait didn't feel like it took too long. Street metered parking available. Service was great. Staff was friendly and helpful and very knowledgeable. One of the staff members said he's been there for only 7 months, but knew everything about their pastries and croissants. In a previous post I had mentioned that Proof Bakery is the home of my favorite croissants in Los Angeles. I was willing to wake up at the ungodly hour of 9 AM on Saturday morning to make the 25 mile trek to Atwater Village for their ethereal layers of perfection. I badly needed two cappuccinos upon arrival which they thoughtfully served in to go cups :) It is IMPERATIVE that you get there by 10 AM if you want to ensure that you get a croissant. As a reward for the loss of my beauty sleep, I got FOUR! Wanting something a bit more substantial, I got a ham and gruyère croissant to eat there as I waited for the caffeine to get into my system; I would have been a danger on the road if I had neither coffee nor food in my system for the drive home. I love the flakey buttery layers of all their viennoiseries and the ham and Gruyère was no exception. Still hungry, and seeing the fresh out of the oven onion tart being put into the case, I had to get a slice of the tender crusted cheesy tart that was a savory testament to why you should eat pie for breakfast! I must admit that I have not always made it there early enough to get croissants, but the veggie galette was a marvelous substitute with a fabulous carrot and potato filling on a superbly crumbly crust. **Tori's Takeout Thoughts (#TTT) - quarantine edition** Apologies to my ancestors, but I would choose eating bread over rice any day. Proof is proof of that and always satisfies my glutenous pastry desires. I've had most of their pastries and all of them are pretty solid. Very recently I brought home a box of goodies for my mom to try and had a mini taste test. If anyone loves bread more than me, it's my mom and I'm glad to say that we shared similar favorites. First off, the stecca. So simple, yet packs a deep flavor that it just tastes so well by it self. Or make it into a sandwich or dip it in some olive oil - either way, you can't go wrong. Next favorite was one of their seasonal items - the potato and leek galette. I regret only buying one slice because I honestly could've devoured an entire one single-handedly, which was roughly the size of a mini pizza. The galette was perfectly buttery and flaky which complemented the richness of creme fraiche. Other notable favorites for me - their olive cake, scones, and of course their croissants. One of my fav bakeries in LA, Proof never disappoints! I love how seasonal everything is, from their pistachio raspberry croissant in the fall, to the peach fruit tarts in the summer. Some staples that are year-round include their amazing croissant and pain au chocolat. Both are stellar pastries! Even though I frequent Proof often, there is always something new for me to try. I definitely need to have one of their stecca sandwiches soon, and the espresso chocolate cake once it comes back (currently a raspberry chocolate version). read more

I do not understand the hype for this place. We got the chive/bacon scone, tea cake, and almond croissant. The croissant was dry/overcooked with minimal frangipane. I liked the scone the best but it needed to be heated up with some butter. Tea cake was fine but needed to be moister. Overall if you live nearby, it's an acceptable place. My purpose here was to try the raspberry pistachio croissant. The only thing is that they stopped serving it here.. Boy.. Was I disappointed, however, did try some very good pastries. We came late morning on a weekday so many of the items were out. So, we tried the chocolate croissant and morning bun... Both pastries had that great crust. Perfectly flakey and buttery inside. Love the chocolate croissant but do wish there was more chocolate inside. Most of it was screaming out like a tongue at the ends. The morning bun was delicious. Again.. the flakiness.. The inside twisted had a brush of orange marmalade. We'll definitely need to come back.. Especially to try the chocolate raspberry cake. Very good pastries.. Fully four people behind the counter to serve them: one taking and assembling orders, one ringing them up, one dedicated to making coffee, and one taping up the boxes and repeating orders for the person ringing them up. Alfred's etc are way too heavy on the vanilla syrup and they're way too sweet. This one was just right. Definitely in my top 2 vanilla lattes in LA right now. Chocolate chip cookie was 10/10. I went to Proof once and immediately texted my friends to tell them to go. My only regret is that I didn't get more when I went! Their croissants are classics for a reason and I loved the onion galette, but the savory herb biscuit was an absolute showstopper. I wasn't a fan of the morning buns, but I'm not a cardamom fan, so that one's on me. I didn't try any of the cakes, but I'll certainly be returning to give them a test -- and pick up more of the biscuits. They're excellent about distancing in line during COVID and while it seems long, it moves quickly. I did feel a little rushed once inside, so it would be helpful to have a menu outside to peruse while waiting. There's a free 2 hr parking lot around the back of the store that I would highly recommend, since parking in Atwater isn't the easiest. read more

One of my memorable items is their decadent Dark Chocolate Raspberry slice. It's rich and creamy and leaves you wanting more. Another go to is their Sandwiches. Cute little bakery in the Atwater village . Due to covid , they only allow 3 customers at a time inside the store. The line was long but once inside it was efficient! Someone greets you and asks your order. The other person is your cashier. The last person is the one making your drinks. Pastries are great and the coffee was amazing! No burnt beans like Starbucks! Smooth and perfect! I wish they had more different types of drinks and they ran out of lemonade! :( I would definitely come back but maybe during the week.
