    I'm not a pastry expert, but I've eaten enough pastries to know not all are created equal. Proof Bakery gets a lot of shine from social media, best-of lists and celebrity endorsements, so I was almost hesitant to give them more. But we've been to Atwater enough times now and Proof has always been worth the stop. Whether it's a chocolate croissant or whatever pastries are left if you show up too late in the morning, this place cranks out the hits. The drinks are solid too, from the vanilla lattes to the hojicha. The line out front is worth it, but just know seating is limited and the sidewalk gets cramped with hipster, Atwater foot traffic. If you're in the area and craving well-done baked goods, Proof delivers. And if you're there on a Sunday, walk down to the Atwater Farmers Market. They've seriously stepped up their game.

    I am a fan of all of their pastries especially their seasonal cake. This one was chocolate blueberry cake. Their cream is just sweet enough with moist cake and blueberry jam between each layers. Love how creative they get with their seasonal cake!

    Always miss their almond croissant due to timing issues. All the delish baked goods sell out fast! Why Proof bakery? - Pastries and sandwiches are delish! FOOD 4/5 - Plain croissant - flaky on the outside and super soft inside - Ham sandwich w/gruyere, cornichon, and aioli was the perfect "to-go" size for a SNACK - Almond Financier, loved it.     How have I never heard of this place? I wish I read the reviews to know what to order, but honestly even the less popular goods I got were delicious. My friend got a croissant that she said was perfect. I got some almond pastry that I can't remember the name of that I didn't think I'd like too much (wanted to take a chance anyways) and the miso chocolate cake. Almond pastry was divine. Not too sweet or dense and a little moist. The miso chocolate cake is a deep and rich chocolate with a unique depth from the miso. My immigrant parents loved it because it also wasn't too sweet (although I wouldn't have complained if it was lol). Totally worth the short wait in line (despite some rude people cutting in line) and I'd come back ANY time to try more! Also lovely it's a worker owned co-op.

    LOVE the sign they have in the window. The ham and cheese croissant was very tasty too despite not being warm! I liked their dough and the cheese they use is really tasty. The mint lemonade is also so good and refreshing. The hibiscus tea kind of tasted like beet juice lol but not terrible it's probably their sweetener. Nice staff that helped me make my choices. It's a cute place in a very cute neighborhood. I would go back to grab a bite and walk around.

    Came here for the LA cookie crawl on national chocolate chip cookie day. The chocolate chip cookies were decent but expected more. Although, there pastries and savory bites looked really good and people here seemed to love their coffee. Heads up, this shop does get a line around the door at 9:30am on a Saturday so be prepared lol

    Cute shop in a cute area. All of the pastry options looked really good and the four I decided to try were as good as they looked. Ham and gruyère croissant was flaky, flavorful, and each ingredient seemed well balanced. The chive and gruyère biscuit was dense, but it wasn't dry at all. Again, tons of flavor packed in. The morning bun and chocolate chip cookie were perfect sweet but not-too-sweet treats to round everything out. I really liked that the chocolate in the cookie was more on the semi-sweet/dark chocolate side and the cookie itself was slightly crispy on the edges and soft in the middle. Just what I wanted.

    I never venture to this part of town but when in the area I have to stop by proof bakery. The bakery is small and usually has a line but the line moves quickly. I am a big fan of their sweets and occasionally order a cake when I have time but the main highlight for me is their chocolate chip cookie. The chocolate chip cookie is a must get in my opinion and it's one of if not, the best cookie in LA which is a bold claim. Store is very nice with decor and staff is always friendly. Waiting for the day when they open a store on the west side!

    8/20/2025 Went last Friday before noon. Been a long while since I've last been here. But it's my first review on Yelp. Lemon Verbena Blackberry Napoleon - Good blackberry flavor, the blackberry cream was not overly sweet either. Love the light crispiness of the puff pastry layers that were thin, yet flaky. The napoleons I've tried are usually more thicker puff pastries that you have to cut into with a knife, but this one was easily eaten without one. It was perfectly delicate and it was a nice surprise. Love the sugared lemon verbena on top. It had a beautiful herbacious citrusy flavor. Gateau de Savoie - Mango was the fruit! Thought it was peach. I was a bit disappointed to find out. Not sure why I didn't ask first. Fluffy and spongy cake. Top was a light meringue crunchy texture. Did have that eggy taste, which I don't like. Whipped cream filling but had a slight cream cheese like sourness to it. Didnt love it. I'm skipping this next time. Pain Au Chocolat - Excellent! Very flaky and buttery. This was so good, I did not stop eating until I finished the whole thing! The bittersweet chocolate was good too, but wish there was a bit more. If I had to compare to the chocolate croissant at Artisanal Goods by Car, I think they win overall. But this is a very close second! Corn & Pepper Biscuit - This was disappointing. It was a bit dry in some areas. Was a bit confused when I ate it as my whole mouth was underwhelmed. It tasted like a corn biscuit with pieces of pepper in it, I thought it was thinly sliced salami or something at first. Really wanted a good biscuit and this was a big letdown. Customer Service - Overall it was good, professional service. Nothing exceptional. Parking - Street parking as always. I found neighborhood street parking on Garden Ave. after driving around the block twice. It's a bit confusing parking around this area. Not sure how they run businesses around here with few parking spots.

    My group went on a chocolate chip tasting day and this was one of my favorite chocolate chip cookies of the day. My sister and I also grabbed a ham and cheese croissant and the croissant was the best croissant I have ever had. I do wish it had more ham and cheese because there wasn't enough to notice them but still overall, delicious

    I'm so happy I finally got to try the famous sea salt chocolate chip cookie from Proof!! It was absolutely deeeeelicious and not too sweet. The staff were friendly and helpful. I didn't like the hojicha strawberry combo for the mochi cake -- strawberry tasted strange tbh, so next time i would try a different dessert. Super looking forward to trying the croissant for breakfast!!

    A regular at Proof and can never get too tired of trying their baked goods! Everyone is really friendly, their baked goods are delicious, their coffee is great and they sell out fast! Small hidden gem with great prices.

I think Papillon is Armenian which I believe has European cuisine, as Armenia is considered geographically to be within Western Asia (the Middle East) and the South Caucasus region. Sitting within the mountainous Armenian Highland, it acts as a transcontinental bridge between Eastern Europe and Asia. Their Piroshki is long and thin, whereas I'm accustomed to them being robust short stocky and round almost resembling a giant baked potato in size and shape. So these look like a "Chinese Donut" a.k.a. Youtiao (油条) in size and shape, same girth but length maybe 6"-8" long. What I liked is the filling of the Beef was minced ground beef with sauteed onion bits mixed into a blend and seasoned with a bit of spice but overall was very moist and juicy and the fried dough was very good. So, I'd recommend that. Oddly, I tried the Beef and Potato reluctantly thinking the pure beef option was going to be better... and the Potato was soft and perfect so I'm thinking they're equally good depending on your mood. I tried the beef empanada, and it was very good, similar flavor of the beef empanada to the piroshki but not exactly the same, otherwise I might say the empanada is bigger and gives more protein of the ground beef. The desert shaped like a peach fruit was very good. It reminded me of Asian style deserts where they're not overly sweet and has a healthy refreshing taste more so than being too overwhelming with thick sugary creams. I found out they have multiple locations. It feels maybe the Armenian and Russian community in So Cal are more toward this area and The Valley, so I do have to take what could be a 60-90 minute journey to come here, and even longer of a commute to their other locations. I think they'd do well in the SBBC (South Bay Beach Cities) down South past Santa Monica but before Long Beach and Orange County. I'd recommend this place for the food and service.

Overall, it's a convenient option if you're nearby and there aren't any better bakeries around, but I wouldn't go out of my way to visit.
