    Rainbow shaved ice.

Best shaved ice we had on Kauai, possibly best in the state of Hawaii. Light, fluffy, refreshing, and doesn't taste artificial. The ice were shaven to consistent sizes that's is smooth to the taste.

Another recommendation from a friend, and this one did not disappoint! Laura talked us through the process as this was our first shave ice experience. Dare I say we were spoiled by the best on our first go?? Laura makes all her syrups herself from real fruit. We went with a towering mango, coconut, lilikoi, and lychee with coconut foam, and it was truly delicious to the very last drop. Bonus that we got to meet her very sweet senior doggo who was making the rounds on the patio. Love the truck and the woman behind the magic! Such a great find! Mahalo!!

Yes, it's 100% natural Yes, it's fresh and made in-house Yes, it's bright & beautiful But don't think that all those wonderful qualities make you have to sacrifice anything at all. This is the tastiest, most delightful shaved ice my family has ever had. My son demanded that I leave a 5 star review ASAP. Full of flavor with no shortcuts taken. Stop by, if it's nearby, stop by. And even if it's a drive and a little out of your way, stop by! You won't regret it. The cream on top isn't just the delicious coconut foam; each delightful bowl is served up with the kind nature and warmest aloha from Laura. We'll definitely be back.... In just a few hours even.

Best shaved ice on the island!!

Rainbow Shave Ice in Kahuku is the one that ruins all the others. We met Laura, the owner, and she's amazing -- friendly, funny, and clearly takes pride in every detail. We ordered the Passion Dragon: mango syrup, tropical flavors, coconut foam that tastes like it was flown in from heaven, and a scoop of vanilla ice cream at the bottom. Absolute perfection. Here's what makes it different: most shave ice spots leave you sipping melted cough syrup at the end (looking at you, the "famous" one that rhymes with Hashimoto ). Not here. Laura makes all her syrups fresh, so the finish is smooth, refreshing, and delicious all the way through. Pro tip: don't skip the coconut foam, and mix in the ice cream early -- it takes the whole thing to another level.

    - 10/10!! - I took my first bite and was blown away by how fresh and delicious the fruit flavor was. - The guava flavor was incredible - We came here twice in one week, the second time to bring my fiancé's mom because we insisted she had to try it - Owner was super kind & really cares about making good quality shave ice

If you're anywhere near this teal green bus called Shave Ice Kawai, stop what you're doing and go! Hands down the best shave ice I've ever had -- and I've had a lot. What sets them apart? Everything is 100% all-natural, made from real fruit with no additives or artificial syrups, which means no post-sugar craziness for my kids (huge win for parents). The texture of the ice is insanely soft, like fresh snow, and the flavors are so vibrant and real it's like biting into the fruit itself. My kids were obsessed -- and I didn't feel guilty letting them go all in. But let me just say -- do not leave without trying the coconut foam on top. OH. MY. GOSH. It's creamy, dreamy, and just takes the whole thing to the next level. Shave Ice Kawai isn't just a treat -- it's an experience. Run, don't walk.

I got to try Rainbow Shave Ice Kauai and it did not disappoint! The brightly colored truck is nicely tucked in the corner of the Ohana Hale Marketplace Kahuku, right by Ride & Grind Cafe and Tina's. When you look at the overall food trucks that are occupying the spaces, it fits perfectly well and adds variety with the already existing options. I ordered the Kahuku Sunset and it was good and refreshing! It's sweet but not over-whelming. The flavor is rich and natural because their syrups are homemade and organic--so don't expect this to be your typical shaved ice experience. I got to meet Laura and Maverick, the owners and they are friendly and welcoming couple. To any that are in the area, look no where else, come here and get your shaved ice!

Syrups tasted so fresh and natural, coconut foam was a nice touch on top. My favorite shave ice so far!

I don't know even where to start!! Laura makes all of her syrups from fresh fruits, the coconut topping was one of a kind and the ice cream at the bottom, sealed the deal!! Absolutely the best on the island! She is hidden in the front corner. The area had beautifulfoliage and the setting was very rustic! Her service was amazing considering, she is a one women show, This is a must stop, truly a hidden gem!!

AMAZING. Everything about it. The woman working (who owns the truck) told us all about hand making the syrups every morning which was necessary because the quality doesn't keep up to her standards after a day or two - great to know she really cares about the quality of what she's serving! AND the flavors were all to die for. AND and she hooked us up with an extra dollop of some (also homemade) coconut whipped cream and HOLY MOLY. I wish we'd gone earlier in our trip so we could've gone back! The serving is also HUGE and a great deal for the price. There are only two picnic tables immediately near by, but they're covered so you can easily grab a cup and sit in the shade to enjoy!

The ice cream, thankfully, was worth crossing state lines for. My kids predictably ordered something bright blue - Cookie Monster and another flavor that could only have been invented by either a six-year-old or a marketing genius. Whoever came up with those flavors is probably laughing all the way to the bank. I went with mint chocolate chip and toasted coconut topped with hot fudge, and it was absolutely fantastic. Rich, creamy, and exactly what vacation ice cream should be. The only reason this isn't five stars was the service. Let's just say the welcome felt a little more "Who sent you?" than "Aloha." Maybe we accidentally wandered into a locals-only witness protection program. Hard to say. Still, the ice cream was so good I'd happily endure another soul-piercing stare for a second scoop.

We immediately struck up convo with woman sitting across from us. We told her our mission and she said she would show us the way locals eat Saimin. She taught us how to fix up the pepper water with the shoyu sauce and yellow mustard. It was fantastic. Really took the flavor up to another level. We also tried the Lilikoi Chiffon Pie, which was so light and fluffy. Not too sweet. We were blown away when the cashier told us the lady at our table paid for our lunch! The aloha spirit is alive and well in Lihue. We will most def pay it forward. If you're looking for that place where your kapuna wahine is cooking, THIS IS IT!

PROS The staff were incredibly friendly aunties and several of them helped us during our visit. The saimin came out piping hot and fresh. Noodles were cooked to perfection! Portions were quite generous. We weren't very hungry, so we ordered small portions and it was the perfect amount for us. Prices are affordable and condiments are readily available on the counter. It's a little unorthodox, but I added some chili vinegar to my saimin and it was delicious! CONS This is a hole-in-the-wall, no frills dining experience. It feels like eating in someone's home kitchen, which is kind of a vibe. The restaurant has no AC, which made it less than ideal for eating hot soup especially during the summer afternoon. Parking is very limited outside with a small gravel lot and street parking. The saimin broth was a little too salty for our tastes, but I was warned by a friend that that's how it is. I also ordered a beef stick, but our server forgot about it. TIPS Come during off-hours if you don't want to fight for parking. Come hungry and avoid the warmer months if you run hot. Try dip some of your noodles into chili vinegar and see how it is!
