Definitely the highlight of the sandwich. After all, they are affiliated with Artesian Bakery, which specializes in bread and baked goods. Fried eggplant sandwich was ok. It needed to be cut thinner and fried crispier. The batter was falling off. The bread on the sandwich was good and the mozzarella wasnt bad but probably not a sandwich I would go back for. I asked for extra dressing and bottles of their balsamic and oil were brought but in the middle of my meal it was taken away because another table needed it - kind of tacky.
