The sign in front of the restaurant I'm writing a review on says, Rubio's Fresh Mexican Grill. It's in the Red Rock Casino in Summerlin. When I came here a year ago I wanted to eat here every single night. It was so good! I'm back at Red Rock and I want to eat here every night again. The fish tacos are awesome and I want to try the other entrees. Value was the best in the Redrock Casino. The fish tacos only cost 5.19 a taco and on Tuesday they have a special of 2.99 all day! What a deal!!! I can eat two. My favorite fish taco ever!!! I love to support great value and excellent taste restaurants. [[HIGHLIGHT]]This is a clean takeout atmosphere to eat.[[ENDHIGHLIGHT]] I highly recommend it!!! Only wish we had one in Hawaii!!

So I'm at Red Rock Casino at the food court and decided to eat at Rubio's. I ordered the Three Street Tacos. Now there are two prices if you look at the menu. The one on the left is à la cart and the one on the right is for a plate that include two sides. I asked for it à la carte. The woman taking my order tells me it's $14 and something cents. I said no it's $4.19 plus tax. She said no it's $4.19 per taco and I'm getting 3. I said no it's 3 street tacos, you get three. She continue to argue about this. So I just decided not to order. I have been to this place many times and only been charged $4.19 plus tax for three street tacos without the plate. Manager was not there so I left.

Pretty good food. Never been before. I got the Elote Veggie bowl. Nice lime flavor. Great seasoning. Chips are crisp. Salsa is really not great. I do wish the salsa would improve. The guacamole however is also very good. Looking forward to trying again and experiencing other items.

I first heard of Rubio's when I lived in Los Angeles specially at UCLAs food court. I remember the college kids would rave about their food especially the vegetarians. It smelled delicious. Anywho, in Vegas I'm always craving Mexican food like I always crave in California. So instead of opting for the buffet we decided to get food court meals. My middle sister informed me that Rubio's was bomb dot com and that convinced me because we both love Mexican food. So their specialty was the fish taco. Which was delicious and crispy. It was nothing spectacular but it was a good taco. I even got one street taco which had smeared on guacamole...if you know me....I despise avocados in every form and it gave my street taco a weird taste but I ate it and still alive. I would recommend they have in big print street tacos come with guacamole smeared on it for base...yuk. My fault for assuming "ordinary" street tacos. I did like the fact they had onions and cilantro...because if you know me...cilantro all day everyday. I'm not sure if I would have Rubio's again...but I can mark it off my try list. There's better fresh Mexican food. I do have to say the customer service was good! Answered my tedious questions with a smile.

Mango Avocado Salad - Mango salsa, brown rice & quinoa, avocado, tortilla stips, baby greens and lemon agave white balsamic vinaigrette. $11

Stopped by here for a quick healthy meal. I chose the Mango Avocado Salad. It comes with Mango salsa, brown rice & quinoa, avocado, tortilla stips, baby greens and lemon agave white balsamic vinaigrette. I added shrimp as my protein, cost about $11, it was very delicious.

I had the mahi mahi tacos and they were too much for me, in part because they came with three sides, all delicious. My husband had the carne asada quesadilla and enough left over for lunch tomorrow. I tried the lime margarita, also excellent, and we couldn't leave without trying the churros for dessert. The ambience is lovely, with gorgeous decor, comfortable booths, and an excellent Hispanic music playlist. This is our new favorite Mexican restaurant. Big shoutout to our server, Brandy, who knew just when to replace the lemonade, and suggested the excellent street corn. We will be back very soon!

I really like the interior decor which is like a very contemporary and upscale Mexican. They have a variety of table and booth seating and a large bar. Our server, Hunter, was very friendly and attentive. He always ended every interaction with "have fun!" I tried the "el corazon" sangria which was delicious! It had a wonderful, warm flavor with a light hint of cinnamon yet it was still cold and refreshing! A cool tip - each drink comes with a little card with a symbol on it and the drink ingredients. Save this card! At each table is a game board of sorts that offers various prizes as you match the cards on the game board sort of like bingo. We really enjoyed the complimentary chips and salsa, and we tried the traditional guacamole with vegetables as well. The guacamole was wonderfully cool and creamy and flavorful. For my entree, I tried the chicken fajitas which is served on a steaming platter with various accompaniments. This was also very delicious, and the chicken was quite flavorful and juicy. A small side note - it was served with a cous cous of sort, but I think I would've preferred a simple Spanish rice. The chicken portion size also seemed a bit smaller than when we get fajitas at Chili's. I would recommend you get double meat if you want to share. We decided to try the chocolate flan and the fried ice cream sundae for dessert. I preferred the flavor of the flan and the unique textures of the flan which had the jiggly caramel flan part on top of a more cake like chocolate part below. I honestly think the fried ice cream was not too good. It did not taste freshly fried, and the coating was very dry and brittle and hard to eat. I prefer the places that serve the fried ice cream warm with a very bubbly crust that is both crunchy outside and a bit soft inside. This was not that. Overall, though, we really enjoyed the dining experience here! We will probably return and try their weekday "Fajitas and Ritas" special! I recommend Hola!
