    What a lovely gem this place is in Denver! Wonderful staff and high end fusion Vietnamese cuisine. We were a large group that initially had a 6 people reservation, but they were able to sit 12 on short notice. Everything was delicious and the chefs killed it bringing out their favorites.

    Absolutely worth the hype! This elevated Vietnamese restaurant punches well a its weight- and for good reason. You'll wanna make a reservation online- preferably weeks or months in advanced for popular days. The presentation, food, everything was impeccable! So many delicious dishes. Bonus- head in Saturday morning for Anna's bakery. It is sooooo tasty- I loved the Pandan Banh beo- a traditional Vietnamese honeycomb cake.

    Stopped by Sap Sua for their Saturday bakery pop-up around 10 AM and had a great experience. The employee working was incredibly kind and helpful--she gave great recommendations and made everything feel welcoming. I tried the banana coconut rum cake (hit the spot even though I'm not a big rum cake fun), and couldn't resist adding two cookies: the brown butter chocolate chip and the banana cookie. Both were excellent, but the banana cookie was a standout; it tasted just like banana bread, which I love. They were sadly sold out of the banana cream pie brioche donut, so I'll definitely be back earlier next time to snag one.

    Wonderful experience, from the food, service and vibe. Elevated Vietnamese food with sophisticated flare. Small but good wine list, started with the hamachi crudo, trứng và trứng" soft scrambled egg, thịt heo nướng" grilled pork jowl, then went to bắp cải luộc" charred cabbage, anchovy breadcrumbs, egg yolk, cá kho" hamachi collar, coconut caramel, pickled jalapeños, rice and grilled iberico pork secreto. Of course finished with the banana pudding.

    I came here with my husband last night to celebrate his new job. It was an excellent celebration dinner! The menu is Vietnamese inspired, but not your traditional Vietnamese food by any means. The dishes were unique and flavorful. We loved everything we had. My favorites were the fish sticks (a must do if you love spice) and the cabbage. There was also a soft scrambled egg dish that was great (not pictured). I enjoyed my cocktail a lot, the gin-erational trauma. My husband didn't care for the lime on a jet plane, he thought the flavor was very strong but not in a good way, and I have to agree. He did enjoy his beer after that, which was a Vietnamese beer served on ice. I am not personally a fan of beer but I tasted it, and actually found it to be refreshing. The service was great from start to finish and for the quality of this meal, it's a great price. I highly recommend!

    Deeeeelicioous meal at Sap sua! We had a wonderful server and a tasty meal from the Caesar-esque salad to the spicy mussels and eggplant in between. This was a great experience and we were pleasantly surprised. * strict vegans and vegetarians may struggle to eat many things here as fish sauce is instrumental to much of the cuisine*

    Sap Sua has a really cool vibe, chill, slightly upscale and the kind of place that feels great for a night out with friends or even for a date. Service was attentive and friendly and I like that the menu changes which keeps things interesting! We ordered the banh xeo beef tartare ($18), sweetbreads ($21), grilled pork ($32), and the collar with rice ($32). Our favorites were definitely the collar and the sweetbreads. The grilled pork was the one miss for us. It was a bit too tough to chew and while the herbs were fresh, the dish didn't feel particularly standout for the price. The banh xeo tartare was very acidic for our taste we found ourselves wishing for more of the crispy elements to balance out the sourness. Overall, Sap Sua is a solid spot with great service and atmosphere, and some dishes really shine. A few items just didn't fully land for us but I'd still be open to coming back to try future menu changes.

    This was my second time at Sap Sua and overall it was another great experience. The dishes are unique, bright, and full of bold flavor, and the service truly stands out. We tried quite a few items this time -- the kale salad, hamachi collar, fried fish sticks, shrimp cakes, and the soft scrambled eggs. Everything was delicious, though I will say the flavors here are strong. A few dishes leaned a bit heavy on salt and intensity, but they were still really enjoyable. The kale salad was probably my favorite. The dressing was so flavorful and addictive -- I just wish there had been slightly less of it because it was very generously coated. The scrambled egg dish was rich and comforting. The shrimp cake had an amazing sauce that really elevated it, although the cake itself didn't completely wow me. The fish sticks were solid and satisfying, though not as distinctive as some of the other plates. The highlight of the night was the service. We sat at the bar and it was exceptional -- warm, attentive, and knowledgeable without being overbearing. It made the whole experience feel special. Sap Sua does bold, flavor-forward food really well, and paired with that level of service, it's absolutely worth a visit.

    Came here on a Wednesday night and it happened to be my birthday. This may explain a little bit about this place because it is very nice and the food is definitely worth a try. We got here a little after five and shortly after the bar filled up around us. It is a Vietnamese forward restaurant that has some twists and curves to make it very interesting. The restaurant has good lighting that and has a long white bar that runs down half the length of the restaurant. There are tables and booths in the second half of the restaurant. The wait staff here is very knowledgeable and helpful when going about the menu. The restaurant is definitely on the more expensive side, but they do offer a happy hour until 6 PM. The menu is set up for sharing so the larger group you have the better because you would be able to try more items. This is the second time I have eaten here and even though I have eaten at many Vietnamese restaurants, there are often things on the menu that I do not know about. For instance, on this visit, we tried the large plate of skate wing. Although I know about skating, I have never had it and it was delicious. We also had the muscles which were in a tamarin and chili sauce that was very drinkable. The cocktail list has plenty of interesting beers/cocktails and a good amount of NA options. I look forward to my next visit already !

    Still absolutely hands down my favorite restaurant in Denver. This is such a curated experience and the flavors are on another level. They continue to blow my mind with all the new dishes they come out with.

    The chef's wife/co-owner is a baker and she tried a pop-up bakery two years ago (November 2023). Unfortunately this proved too much to handle for a restaurant getting national recognition and the bakery ended after one trial. I was devastated to have missed out. Fortunately she has decided to give it another try (Saturday mornings from 8:00 a.m. to noon) and I was first in line this morning for the premiere effort. A dozen or so items were available, mostly sweet and a few savory. This included apple fritters, a Vietnamese rum cake, monkey bread, brownies, muffins, a zucchini loaf, donuts, whoopie pies, coffee cake, cookies, a savory galette, a savory hand pie, and a sticky bun. I tried the Leek and Gruyère Galette which had just come out of the oven. This was fantastic. Perfect puff pastry with a generous, delicious savory filling. It was so good I made another trip to get one for my neighbor. She agreed it was amazing. I also scored a Dirty Chai Sticky Bun, infused with coffee and with a sweetened condensed milk frosting, a Brown Butter Chocolate Chip Cookie, a Pumpkin Whoopie Pie with brown butter cream cheese frosting, a Brownie, and an Apple Fritter. All of the items were well-made and delicious. I particularly liked the cookie which was exceptionally flavorful with the addition of the brown butter and the whoopie pie which was tender and not too sweet. My neighbor tried the sticky bun and pronounced it the best ever. This bakery pop-up is a great addition to the neighborhood and I hope the Sắp Sửa folks have the energy to continue it. I understand they've hired an additional baker, so I'm thinking positive!

    We now have visited Sap Sua twice (we live in soCal), and it quickly became a must-visit any time we are in Denver. Snag a reservation if you have any inclination that you can come here as they book up fast and for good reason! This modern/non-traditional Vietnamese restaurant is relatively small for the amount of food and big, bold flavors it puts out. The service is welcoming and the staff are so knowledgeable to help plan a memorable meal and proper portions for the party size. Everything is recommended to be eaten family-style. I would recommend going with at least a group of 4 so you can try that many more dishes! Cocktails are fantastic and bonus points for who ever comes up with the punny names, like "Ooo baby baby" for the ube cocktail and "Lime leaving on a jet plane" for the mezcal/corn/ancho cocktail. The second time we came here, we brought friends with us and we were just talking about Portuguese wine... which they had too! The bottle of Vinho Verde from Quinta Do Ermizio was a perfect pairing for all the food. The food! OMG... where to begin? Jam packed full of umami and filled with both familiar and new flavors. I was sad that they didn't have the off-menu sweet potato with laughing cow cheese my husband and I had the wonderful opportunity to try when we came in February (seriously one of my favorite bites), but we filled our table with so many other fantastic dishes, it was okay. (But, bring them back permanently!) This trip we tried the crispy rice snow crab, hiramasa crudo, beef tartare (SO good), soft scrambled egg with brown butter, sauteed green beans, charred cabbage, shrimp cake, pork spare ribs, and an off-menu hamachi collar with caramel sauce. Previously (Feb), my husband and I had the Hamachi crudo, curried French fries, soft scrambled egg with brown butter, charred cabbage, steamed mussels, and the off-menu salt baked sweet potatoes. The menu does change seasonally, so it's hard to be mad when they rotate out a dish because something just as spectacular may take its place. All I can say is, bring friends, be adventurous, and have a great time. Can't wait to visit again!

    Sap Sua is such a gem of a restaurant. Great food, superb service and an immaculately clean and appealing decor. Our server, June provided an excellent overview of the menu and offered some suggestions of her favorite dishes. The soft scrambled egg with salmon roe was subtle deliciousness. The charred cabbage was earthy and satisfying. Fried Hamachi collar delicate and tasty. Turns out that our kitchen runner was the co-owner. She was delightful, fun and interesting to talk to as she provided additional information about Sap Sua. I don't think you could go wrong ordering anything on their menu of flavorful family style Vietnamese dishes. Good wine list and a full-service bar. Reservations recommended as the place gets full, even on weeknights.

When we arrived, most of the covered seating and heater areas were already taken, so we ended up sitting in one of the uncovered sections. As it turned out, that was a blessing because the views were amazing. From where we were seated, we had beautiful views of downtown Denver and the surrounding cityscape. Between the skyline, lights, and rooftop atmosphere, it created a memorable evening. What impressed me most was the ambiance. The lounge had a lively but relaxed energy, and people were friendly and approachable. It felt like the kind of place where you could enjoy a date, meet new people, network, or simply unwind with friends over drinks and conversation. My date ordered food, but I honestly don't remember everything he had. I wasn't particularly impressed with the food, but since this is a rooftop lounge, the atmosphere was really the star of the show for me. Overall, I enjoyed the experience and would return for the views, the social atmosphere, the drinks, and the opportunity to meet interesting people. Perfect for: Date nights, networking, socializing, drinks with friends, and enjoying Denver's skyline.

The first time was around 11:30 on a Thursday night. We had a few cocktails along with a cheese and charcuterie plate. The second time was around 12:30 on a Saturday night when we came in for a night cap. The first time we came in, it wasn't too busy, and we were encouraged to sit wherever we wanted. The bar was full so we chose a small table. Our server gave us menus, though specials were written on a chalkboard above the bar. We each tired a couple of cocktails and had a shot called the Master Shot. We also chose the make-your-own charcuterie board. Our favorite drink was the Woo Girl, which allowed us to choose our spirit of choice. I chose gin and my friend chose tequila. When we returned a couple of nights later, we knew already we were going to order the Woo Girl cocktail. It was packed on a Saturday night, but there was a small table in back where they seated us. This bar is more for spending time with the friends you come with, rather than mingling, as staff seats you at a table. It doesn't seem like they offer standing room or just squeezing in, though maybe we just didn't experience that. That said, all in all, I really enjoyed Bedlam and recommend it to anyone going to Denver.

Service: Despite how packed it was, the service was incredibly fast. We got our drinks in maybe 2-3 minutes tops. The staff is efficient and friendly. Overall Experience: Whether you're visiting and staying near Union Station or just looking for a fun local getaway, I highly recommend this place. We walked from our hotel, but if you drive, be prepared to look for street parking or a garage. It's fun, cheap, and has great theme nights. I'll definitely be back!
